    Ximénez-Spínola Vintage 2020 is a 100% handcrafted Spanish fortified wine from one of the Jerez area's most respected family bodegas.

    Expert's Description

    Ximénez-Spínola Vintage 2020 is a Spanish Fortified Wine made exclusively from Pedro Ximénez grapes with an alcohol content of 12%. The Ximénez-Spínola bodega was founded in 1729 and for nearly 300 years has specialised solely in the Pedro Ximénez grape, where other houses spread across several varieties. After harvest, the grapes are sun-dried for at least 21 days - a method called "soleo" - which causes them to lose around 70% of their weight and significantly concentrates the sugar content. The result is a mere 200 litres of must per tonne of grapes, explaining the limited production of 5,075 bottles for this vintage.

    Nose

    The nose offers dried raisins, fig and a hint of caramel.

    Palate

    The palate is concentrated and sweet with deep fruitiness and a silky texture.

    Finish

    The finish is long and preserved-fruit-like with lingering notes of dried fruit.

    Serve at room temperature in a small sherry glass. Pairs well with vanilla ice cream, blue cheese or dark chocolate.
