    The owner of Van Volxem winery, Roman Niewodnicanski, likes his wines best when they contain 12% alcohol and have around 5-6 grams of residual sugar, but in some vintages he also makes the predicate wine like this one, Kabinett, which has a little more sweetness. This 2018 vintage has nice notes of pears, lemons, some floral, grape and not least the red slate that is part of the terroir where the Riesling grapes are grown. The extra sweetness in the form of 12 grams of residual sugar gives extra richness but is held in place by the slender acidity.
