American whiskey production began in the northern states and was introduced to the US by Scottish and Irish immigrants. Later, production moved south to Kentucky and Tennessee, two states well-known today for their whiskey production. Bourbon is especially recognized as a product of Kentucky, while a brand like Jack Daniels is the most famous Tennessee whiskey. According to legend the whiskey was a favourite of Al Capone, and in 2006 Kerkhoff's grandson Keith revived the recipe as a legal brand.

The Jim Beam distillery in Clermont, Kentucky, dates back to 1795, when Jacob Beam sold his first barrel of bourbon under the name "Old Jake Beam". The family has made bourbon in Kentucky for over 200 years and seven generations, and the brand took its current name in 1943 in honour of James Beauregard "Jim" Beam, who rebuilt the distillery in 120 days after Prohibition ended. The recipe is built on the Beam family's traditional mash of corn, rye and malted barley, a blend the family says has stayed largely unchanged across all seven generations.

    The whiskey matures in new, charred oak barrels as required by US law for straight bourbon, giving it a characteristic sweetness and vanilla note.

Maker's Mark was founded in 1953, when Bill Samuels Sr. bought the old Burks' Distillery in Loretto, Kentucky. His wife Margie created the entire brand identity — the name, the square bottle and the hand-dipped red wax seal, still hand-dipped on every bottle today. Bill Samuels wanted to create a softer bourbon than the typical rye-based styles of the day and replaced rye with red winter wheat in the mash bill. The distillery was listed on the US National Register of Historic Places in 1974 and named a National Historic Landmark in 1980.
