    Forcalquier sits in the Haute-Provence, where lavender, wormwood and centaury grow wild across the dry slopes. The town carries the Site Remarquable du Goût designation. That is no accidental address for a distillery.

    Henri Bardouin Pastis Grand Cru is a French Pastis produced at Distilleries et Domaines de Provence in Forcalquier and bottled at 45%.

    More than 65 plants and spices go into it. They are harvested, macerated and distilled separately and only assembled at the very end. Some travel a long way: star anise from China, liquorice root from Syria, tonka bean, ginger, cardamom and cinnamon. Others are gathered around the distillery itself — wormwood and centaury from the Haute-Provence.

    That volume of botanicals is what earns it the Grand Cru name. Where an ordinary pastis sticks to anise and liquorice, here a whole layer of spice sits on top and the sweetness has been pulled back. The house has been distilling aperitifs in Forcalquier for over a hundred years, and the Grand Cru arrived in 1990. It now sells in eighty countries.

    Tasting notes

    Nose

    Star anise and liquorice root sit at the bottom, but what you notice is cinnamon, cardamom and a sweet stroke of tonka bean. Behind them something dry and bitter from the wormwood.

    Palate

    Broad and spiced. Ginger brings warmth, cinnamon brings sweetness without sugar, and liquorice root ties it together. Less cloying than most pastis.

    Finish

    Long and herbal. Centaury and wormwood lay in a fine bitterness at the end, with the anise lingering behind it.

    Himmlische Cognac Himbeeren is a German Fruit Liqueur from L.W.C. Michelsen in Hamburg, made from ripe raspberries steeped in aged cognac and a sweet raspberry liqueur. This bottle is an older edition of a product still made by the company today, though under an entirely different label design – this particular version, with its red gothic script and royal lion crest, has been discontinued and now only turns up with collectors. Michelsen was founded in 1814 and is run today by the seventh generation of the same family, and the raspberry-in-cognac recipe grew out of the company's long tradition of steeping fruit in spirits, a tradition that started with the classic German rumtopf and branched out into fruit-and-liqueur combinations. The sweetness comes from a mix of invert sugar syrup and the fruit's own natural sugars, while the cognac and brandy add a warm, faintly burning base beneath the fresh raspberry.

    Taste

    The nose is full of ripe raspberry with a warm hint of brandy underneath. The taste opens sweet and fruity, almost like preserved berries, before the cognac's depth and a mild woody bitterness settle in behind it. The finish is soft and slightly syrupy-sweet, with one last trace of warming alcohol.

    Jefferson's The Manhattan Barrel Finished Cocktail is a pre-mixed cocktail, bottled at 34%, developed by Jefferson's in collaboration with Esquire magazine and then editor-in-chief David Granger. The cocktail is built on Jefferson's 6-year-old Kentucky Straight Bourbon, originally distilled to 125 proof and reduced to 82 proof, before being blended with sweet and dry vermouth in a 'Perfect Manhattan' style, along with barrel-aged spiced cherry bitters. After blending, the cocktail is aged a further roughly 4 months in used bourbon casks before bottling at 68 proof — a process that gives it a deeper, more integrated character than a freshly mixed Manhattan.
