Dràm Mòr is a Scottish independent bottler that specializes in tracking down single casks with character rather than chasing a uniform house style. With this release, they have captured some of the best GlenAllachie's distillery can deliver: a spirit robust enough to stand up to an active sherry cask without being overwhelmed by it.

Eight years might not sound like much in whisky terms, but in a first-fill cask the wood works fast. The result is a dram that tastes older than its age – dark, spicy and with a richness usually associated with far more mature releases.

Tamnavulin Distillery 2010 Little Brown Dog Port Pipe is a Single Speyside Scotch Whisky, matured in bourbon casks with a finishing period in a port pipe and bottled at 52.4%.

Little Brown Dog Spirits is an independent bottler founded in Aberdeenshire in 2018 by Andrew Smith and Chris Reid, recognisable by the little brown dog that features on every label. The company buys casks from distilleries across Scotland and bottles them under its own name, often in small, hand-picked batches.

This release was distilled at Tamnavulin in 2010 and matured on bourbon casks until 2024, when the whisky was moved into a highly active port pipe. That short but intense finishing period has given the whisky a pronounced character of dark berries and spice. Only 424 bottles were produced of this Small Batch release, bottled at cask strength with no chill-filtration.

The oak is there long before the whisky is. A tree comes down in Ohio, the staves sail to Jerez, and only six years later does Scottish spirit go anywhere near the cask. Vibrant Oak is Macallan saying it out loud: the wood isn't packaging, it's half the flavour.

Macallan The Harmony Collection Vibrant Oak is a Highland Single Malt Scotch Whisky matured in first fill sherry-seasoned American oak casks and refill sherry casks, bottled at 44.2%.

This is the fourth release in The Harmony Collection, Macallan's annual series built around reusing natural materials. The theme this time is In Harmony with Nature, and it's taken literally: both the gift box and the label itself are made from oak shavings left over from the cooperage, a by-product of building the casks. The bottle went on sale on 1 November 2024, the year the distillery turned 200.

The label carries a character from the Cirque du Soleil show SPIRIT, which premiered at The Macallan Estate in 2024. Vibrant Oak has a sibling, Guardian Oak, matured in European oak and sold only through airport retail. The two were built as a pair, so you can taste the difference between the two woods side by side.

American oak is denser in the grain than its European cousin. It gives less tannin and more sweetness, which is why Vibrant Oak is lighter and fresher than the Macallan profile most people know: golden rather than mahogany, vanilla and pale fruit rather than raisin and dark chocolate. The colour comes from the wood alone, with nothing added.

Tasting Notes

Nose

Intense vanilla bean first, then a sharp-sweet fizz of sherbet and lime zest, before fragrant pears settle over the top.

Palate

Creamy vanilla panna cotta with buttery shortbread. Lightly toasted coconut and almond brittle follow, and the oak holds it all up without drying the mouth out.

Finish

Medium and sweet. The vanilla hangs around and fades slowly.

A snake sheds its skin but keeps its venom. Black Snake works on the same principle: every time a portion is drawn off, something stays behind in the cask, and the next release inherits it.

Expert description

Blackadder Black Snake Vat No. 17 Third Venom is a Single Malt Scotch Whisky matured in First Fill Bourbon and an Oloroso Sherry Butt and bottled at cask strength, 59.6%.

The series runs on a solera-inspired system. The whisky first matures in first fill bourbon casks and is then moved into an oloroso sherry butt. From there a share is bottled while the rest is topped up with fresh bourbon-matured whisky. That means a remnant of the very first Black Snake is always present, and every bottling carries a little of all the ones before it.

Vat No. 17 identifies the cask, and Third Venom records that this particular cask has been drawn from three times. Blackadder does not disclose which distilleries the malt comes from, which is standard practice for the house's vatted releases.

The Legendary 2015/2023 is a 7-year-old Single Malt Scotch Whisky from Blackadder's Raw Cask series, bottled at full cask strength of 59.2% ABV.

The whisky was distilled on 23 June 2015 and bottled in January 2023, from a single cask, Cask No. 2023-05, a medium toasted Fine Grain French Oak cask. The French oak has given the whisky a distinctly spiced, lightly sweet character that sets it apart from the more common American or European oak.

The Raw Cask series is Blackadder's most unfiltered release: the whisky is neither chill-filtered nor mechanically filtered, and the bottle retains natural oils and fats from the cask to ensure the most natural tasting experience possible.

Only 615 bottles exist of this particular single cask release.

Adventures In The Meadow is a Single Speyside Malt Scotch Whisky from a single bourbon hogshead, bottled at cask strength 54.7%.

The cask carried number 48 and gave 308 bottles after sixteen years. The whisky is non-chill filtered and of natural colour, so what is in the glass comes from the cask and nothing else.

The bottling comes from Whiskyheroes, a range by the Glasgow-based company Brave New Spirits. The series consists of single casks and small batches matured in classic bourbon and sherry casks, and the labels are drawn from vintage action comics. On the banks of the River Lossie just outside Elgin stands a distillery that has been distilling since 1897. Twelve years after the spirit ran clear from Glen Moray's stills, a small independent bottler in Fife found its way to these two casks and bottled them under the name Dalgety - named after the bay where its warehouses sit.

Expert's Description

Dalgety Glen Moray 12 Year is a Speyside Single Malt Scotch Whisky matured in two refill hogsheads and bottled at cask strength 52.5%.

The whisky comes from Glen Moray Distillery, but is bottled by the independent bottler Hannah Whisky Merchants under their Dalgety series - a lesser-known sibling to the house's better-known Lady of the Glen. The casks were filled on 5 July 2011 and left to rest for twelve years before being bottled on 25 September 2023 under the direction of Gregor Hannah. That yielded a total of 683 numbered bottles from this limited small batch release.

Because the casks had already held whisky before, they work quietly in the background. They draw less colour and tannin from the wood than a first-fill cask would, letting Glen Moray's own light, fruity character stand out clearly. The whisky is bottled without chill-filtration or added colour, so everything - from nose to finish - comes straight from spirit and wood.

Tasting Notes

Nose

The nose opens with honey and ripe white grapes, quickly followed by crisp notes of caramel wafer and a hint of toasted pecans.

Palate

On the palate it's full-bodied and slightly oily, with caramel wafer and honey up front, while black pepper offers a spicy counterpoint to the sweetness.

Finish

The finish lands on toasted walnut and a lingering touch of pepper that stays long after the last sip.

The whisky is built on the peated spirit of the distillery and matured, somewhat unconventionally, in three cask types. Bourbon gives vanilla, sherry gives dark fruit, and the Marsala wood adds a nutty sweetness different from both sherry and port.

The combination has given the whisky an almost creamy, soft structure with layers of ripe fruit, aromatic smoky sweetness and warming oak spice. The two extra years over the Smoky Ten read as more depth rather than as more smoke.

Linkwood 2012/2022 Adelphi Selection 10 år Single Malt Scotch Whisky 59,9% is a Single Malt Scotch Whisky, matured in cask and bottled at 59,9%.

The whisky is distilled at Linkwood and independently selected and bottled by Adelphi Selection as part of the Adelphi Selection series.

It was distilled 2012 and bottled 2022, giving it 10 years.

Only 280 bottles were released from this batch, making it an exclusive release for collectors.

When this cask was filled in 1993, almost all of Aultmore’s production went into Dewar’s White Label, and nobody thought of the distillery as a name in its own right. Twenty-eight years later things look different.

The Expert's Description

Aultmore 1993/2022 Càrn Mòr 28 Years Old Celebration of the Cask is a Single Speyside Malt Scotch Whisky matured for twenty-eight years in a hogshead and bottled at 47.4%. The cask gave 233 bottles, and the whisky is neither chill filtered nor coloured.

Twenty-eight years in a refill hogshead is a slow maturation. The cask does not give much colour, but it gives time, and it is the time that creates the soft, honeyed texture and the deep fruit found only in old whisky.

The strength of 47.4% shows how much has evaporated along the way. Càrn Mòr is Morrison Scotch Whisky Distillers’ range of single casks, and Celebration of the Cask is the house’s line for the oldest and rarest casks in the warehouse.

Tasting Notes

Nose

Soft and deep. Honey, ripe pear and tropical fruit first, then vanilla, wax and an old, dry oak note. There is a fine mineral edge that Aultmore keeps even after this long.

Palate

Soft and oily. Honey and ripe fruit open, then vanilla, candied citrus and a dry, spiced oak arrive. At 47.4% there is good weight, and the texture is thick in the way only many years of maturation give.

Finish

Long and soft. Honey, fruit and a dry oak close that lets go very slowly.

Glen Grant 2008/2022 Càrn Mòr Strictly Limited 13 Year Old is a Speyside Single Malt Scotch Whisky finished in rum casks and bottled at 47.5%.

The whisky was distilled in 2008 and spent eleven years in bourbon barrels before moving into rum casks from the West Indies Rum Distillery on Barbados for two years. Bottling took place in 2022 and produced 1,233 bottles, non-chill filtered and with no added colour.

Strictly Limited is the range in the Càrn Mòr family where the younger casks get their space, and where the strength always sits at 47.5%. Behind the range stands Morrison Scotch Whisky Distillers, with the fourth generation of the Morrison family at the helm and the Aberargie distillery in Perthshire on the books.

Tasting notes

Nose

Apple and pear first, then orange peel and cinnamon pastry. There is a toasted, biscuity cereal note behind it, and a trace of cocoa that only just shows itself.

Palate

Juicy and lightly tropical. Banana, ripe pineapple and stewed orchard fruit, with toffee and marmalade underneath. The rum shows up as a warm sweetness rather than as molasses.

Finish

Long and light. Burnt sugar, orange marmalade and biscuity malt sliding out into a drier close.
