    Ximénez-Spinola is a small sherry house in Jerez working only with the Pedro Ximénez grape. Their casks rarely end up in whisky — but when they do, you can taste it.

    Dalmunach 7 years Murray McDavid PX Sherry Finish is a Speyside Single Malt Scotch Whisky finished in Ximénez-Spinola PX casks and bottled at 48.5% without chill filtration and without added colouring.

    The release belongs to Murray McDavid's Benchmark Series and was made in 2,062 bottles. Murray McDavid was founded in 1996 and has made cask finishing its signature — the house buys casks from named wine and sherry producers rather than settling for generic sherry wood. Dalmunach opened in 2015, so everything that exists from the distillery is young.

    Tasting notes

    Nose

    Dark and sweet. Raisin, date and dark chocolate, with a layer of young malt and cereal under the concentrated fruit.

    Palate

    Round and syrupy. Dried fruit, caramel and cocoa, with a lightly spiced edge from the oak. The 48.5% keeps the sweetness from turning heavy.

    Finish

    Medium and sweet, with raisin, nuts and a dry spiced close.
