    Thy Whisky Danish Oak is a Danish Single Malt Whisky bottled at 51% in a 70 cl bottle. Made from certified organic barley grown and malted at the distillery in Thy. Matured exclusively in Danish oak casks – one of the most locally rooted cask choices a Danish distillery can make. Danish oak is dense and resinous compared to European and American oak, and gives the whisky a distinct botanical fullness with notes of wild herbs and dried fruits.

    Danish Oak is a bold choice. Danish oak is slower to work with than bourbon casks, and the result is a whisky with more edge and character than most introductory releases from Thy Whisky. A special bottle for those who want something different.

    Nose

    Dense and aromatic with wild herbs, oak bitterness and dried fruits. A little resin and light spice.

    Palate

    GlenAllachie 2014 The Sinteis Series Part 3 is a Speyside Single Malt Scotch Whisky matured in a combination of French virgin oak and Oloroso sherry casks, bottled at cask strength of 57.4%.

    The Sinteis Series is Billy Walker's ongoing exploration of cask types rarely used in Scotch whisky production. The name is taken from the Scottish Gaelic word for synthesis, and each release in the series looks at how two very different cask types can shape the same spirit in their own way. Part 3 puts the focus on French virgin oak, whose tight, spicy oak character stands in clear contrast to the heavy fruit sweetness of Oloroso sherry.

    This whisky comes from the 2014 vintage and was bottled in 2026, giving it around 12 years of cask maturation before it was bottled non-chill filtered and without added colour.

    Tasting notes

    Nose

    The nose opens with toasted oak and a touch of vanilla pod, quickly followed by dark sherry sweetness – think raisins, fig and a hint of leather. Underneath sits a spicy note of clove and fresh sawn oak from the French casks.

    Palate

    On the palate, the characteristic Oloroso sweetness arrives first with stewed dark fruit, before the French oak takes over with a dry, slightly tight tannic spice. The cask strength gives the whisky a weight that holds the flavours together without becoming fiery.

    Finish

    Long and dry, with a finish of dark chocolate, toasted nuts and a last trace of sherry sweetness fading slowly away.

    The cask was filled in 2007 and emptied in 2022 by Hunter Laing & Co for the Old Malt Cask range, where every release goes into bottle at exactly 50%. Hunter Laing is the third generation of a Glasgow family that has traded whisky since the middle of the twentieth century. A sherry butt over fifteen years lays dried fruit and dark sweetness over Craigellachie's meaty, mineral core — two opposing forces that suit each other.

    Fettercairn 1996/2015 Signatory 19 Years Old is a Highland Single Malt Scotch Whisky matured in two married hogsheads and bottled at 46%.

    The casks, numbers 4351 and 4356, were filled on 30 September 1996 and bottled on 29 October 2015. Two casks from the same filling day give a slightly broader profile than a single cask without losing the stamp of the individual vintage.

    Nineteen years is enough for the light, sweet spirit of the distillery to gain depth without turning woody. The whisky is bottled in natural colour and without chill filtration, so every nuance stands untouched.

    Nose

    Opens with ripe cereal notes, citrus and vanilla, and a light tropical sweetness followed by fresh oak and a touch of honey.

    Eight years is young for a Campbeltown. The spirit is still raw at the edges, the salt stands out sharply, and there are not many years of oak to soften anything. Then Lady of the Glen moved the cask into tawny port, and suddenly the youth made sense.

    The whisky was distilled in 2016 and bottled in 2025 from cask number 8924, which gave 231 bottles, non-chill filtered and with no added colour. The choice of tawny over ruby is worth noting: tawny port has spent a long time in wood and is oxidative, nutty and drier, where ruby is fresh and berry-sweet. That suits a young, salty spirit better, because it adds depth rather than sweetness.

    Lady of the Glen is run by Gregor Hannah and buys individual casks from across Scotland. The firm always bottles at cask strength, unfiltered and uncoloured, and it often goes for younger casks where there is still distillery to taste. An eight year old Glen Scotia is exactly the kind of cask the larger houses would typically have left alone for longer.

    Nose

    Sea salt and seaweed meet red fruit and dried berries. The port lays a nutty sweetness on top, and there is a trace of dark chocolate beneath it all.

    Sometimes the label says less than it could. Burnside is one of those names used when a distillery does not want its real name on the bottle — but the character in the glass is unmistakable.

    Please note: Burnside is the designation for so-called teaspooned Balvenie. It means a cask from the Balvenie distillery has had a minimal amount of spirit from another distillery added, typically Glenfiddich. This is done to prevent the whisky being marketed as an official Balvenie single malt, but it still clearly carries Balvenie's character.

    Burnside 14 Years Woodrow's of Edinburgh is a Single Speyside Malt Scotch Whisky from Single Cask #900019, bottled at cask strength, 52%, without chill filtration and without added colour.

    The whisky was distilled on 27 April 2011, and the cask gave 330 bottles. Woodrow's of Edinburgh is an independent bottler based in Leith that buys and matures casks in its own bonded warehouse and bottles in small batches or as single casks.

    The house philosophy is about bringing out the personality of the individual cask rather than smoothing it away. Natural colour, no filtration and cask strength are standard, and that makes the bottlings considerably more direct than most official releases.

    Ardnahoe Cask Strength Batch 1 is an Islay Single Malt Scotch Whisky matured for five years in carefully selected 1st fill bourbon casks and bottled at 60.9% natural cask strength. It is neither chill filtered nor coloured.

    First fill bourbon casks are a deliberate counterweight to the young age. The casks are active and give vanilla, coconut and body quickly, and they meet a spirit that is already full thanks to Ardnahoe’s worm tubs and long lyne arms. The combination delivers more weight than five years would normally allow.

    Ardnahoe is Islay’s ninth distillery and was built by the independent bottler Hunter Laing. It opened in October 2018 and is the only one on the island using worm tubs.

    Tasting Notes

    Nose

    A fresh coastal breeze first, then earthy peat smoke and rich cocoa. Vanilla and coconut from the new bourbon wood sit beneath, and at 60.9% the alcohol is pronounced, so let the glass rest a couple of minutes.

    Palate

    Orchard fruits open, followed by herbal tea and salted caramel developing into a complex, full body. The smoke sits underneath and comes forward more clearly with a little water. The texture is oily and fills out well.

    Rye inside a Scottish still house. It sounds like something went wrong, but at Teaninich in Alness it was entirely deliberate. Back in 2016 they mashed rye alongside barley, ran it through the plant and put it away in ex-bourbon casks. Then eight years passed before anyone was told what was sitting there.

    Teaninich 8 Years Old Special Release 2025 Rye Rebel is a Single Grain Scotch Whisky matured in ex-bourbon casks and bottled at 60.3% cask strength. It is the only bottling in Diageo's Special Releases 2025 collection, Horizons Unbound, that is not a Single Malt Whisky, and the first whisky built around rye that Teaninich has ever let out of the door.

    Because the mash carries malted rye as well as malted barley, the whisky cannot be called Single Malt. It is Single Grain: one grain beyond barley, one distillery. Ex-bourbon casks were chosen because they give vanilla and coconut without drowning the dry peppery edge of the rye. The result tastes more American in the middle than at the edges.

    Teaninich was founded in 1817 by Hugh Munro and is now Diageo’s third largest malt distillery. Most of what it makes disappears into large blends such as Johnnie Walker Red Label, which is exactly why a bottling under the distillery’s own name is unusual. Rye Rebel also carries the name Daring Rye in some markets.

    Tasting Notes

    Nose

    Fresh rye bread crust and dried dill meet vanilla and coconut macaroon from the bourbon wood. Underneath sit honey, white pepper and a faintly resinous note you rarely find in Scottish malt whisky. At 60.3% it is forceful; a little water brings out lemon peel and cinnamon sugar.

    Palate

    The rye takes charge immediately: dry, peppery, almost green. Then the bourbon cask arrives with vanilla, caramel and baked corn, and the two pull in opposite directions in a way that keeps your mouth awake. The texture is oily and fills out well. The alcohol is obvious but it pushes rather than burns.

    Finish

    Medium length and dry. Pepper, oak and a last rye note that grips the tongue lightly. A trace of aniseed right at the end.

    Part 2 of the Sinteis series continues Billy Walker's exploration of how two very different cask types can each shape the same spirit. Where Part 3 uses French oak, this release draws its character from Scottish virgin oak paired with the heavy fruit sweetness of Oloroso sherry.

    The whisky was distilled in 2015 and spent 9 years in cask before being bottled non-chill filtered and without added colour. The colour is burnt mahogany – a result of extended contact with the sherry casks.

    Nose

    The nose offers mocha and grilled honey cakes, followed by sun-dried red berries and a warm note of cinnamon butter. Toasted lemon peel and a touch of muscovado sugar round things off.

    Palate

    On the palate you find heather honey and citrus, quickly followed by baking spices and ginger cakes. Poached fruits and mocha add depth, while a creamy vanilla buttercream settles as a soft finish on every sip.

    Finish

    The finish is warm and lightly spiced, with a last trace of honey and toasted mocha that lingers for a good while.

    Glen Scotia distils peated spirit for only a few weeks a year. The rest of the time the plant runs unpeated, so by the time the festival bottle appears the raw material is already a rarity at the distillery. The 2025 release added five months in Spanish red wine casks on top.

    Glen Scotia Campbeltown Festival 2025 is a Campbeltown Single Malt Scotch Whisky matured in 1st fill bourbon casks with a finishing period in Ribera del Duero red wine casks, bottled at 54.3%.

    The whisky is nine years old and built on the distillery peated spirit. Main maturation took place in 1st fill bourbon casks, and the final five months were spent in casks from Ribera del Duero in northern Spain — a region known for powerful tempranillo wines. The combination of peat smoke and dark wine fruit is unusual, and the bottling is a limited edition, non-chill filtered and with no added colour.

    Campbeltown Malts Festival is held every spring, when the three distilleries in town open their doors and each releases a special bottling. It is the one time a year that Campbeltown fills up with whisky people, and the festival bottles are usually gone as fast as they arrive.

    Tasting notes

    Nose

    Creamy vanilla and salty sea air, with peat smoke settling on top. Behind it come dark berries and a vinous, almost preserved note.

    Palate

    Full and oiled. Smoked malt meets juicy blackberries and ripe red fruit, with a trace of liquorice underneath. The cask strength holds the smoke and the wine fruit in tension against each other.

    Finish

    Long and soft. Well-integrated smoke, dark fruit and a spiced, almost luxurious close.
