They come in different vintages and this one was distilled in 2006 and bottled in 2016. This bottling has been aged in Jerez Amoroso sherry casks, which adds sweetness and complexity to this beautiful whisky. Talisker The Distiller's Edition has delicate aromas of salt, oyster shells and lovely pink peppercorns. This Thy Whisky No 17 has been named STOVT - an organic Danish Single Malt Whisky at 51,2% Stovt is a very special whisky for Thy Whisky. It is blended from a selection of their single malt whisky barrels. Both bourbon and oloroso sherry casks, with and without smoke, with light and slightly burnt malt types and from different vintages.

Finally, it has been given a short finish in stout casks that have aged Limfjordsporter (their favorite stout) at Thisted Bryghus. This is the third time they have bottled a "Stovt". This time they have turned up the beechwood smoke a bit and the bourbon barrels have a larger part of the credit for the cask character. The whisky is composed of barrels that are 3-6 years old. The result is a lightly smoky whisky with a complex sweetness with notes of bourbon vanilla, fruit, soft toffee, burnt caramel and a hint of sweet licorice.
