  The Mannochmore 2011 vintage whisky is part of The Cooper’s Choice range from The Vintage Malt Whisky Co., founded in 1992 by Brian Crook.   This particular expression was matured for 11 years—initially in American oak bourbon casks, adding classic notes of vanilla and toasty wood, before being finished in a Ruby Sherry wine butt. This secondary maturation imparts rich layers of red fruit sweetness, depth, and complexity.

Amontillado is an exciting experiment based on aging the whisky in two different types of sherry casks. It was first matured for almost 4 years in PX casks, providing the renowned elegance, sweetness, and fine fruit notes characteristic of our PX whisky – and then an additional two years in an old Amontillado Hogshead.

  Amontillado sherry is an intriguing, double-matured sherry that first ages under Flor in the casks, and after approximately 3.5-5 years, the Flor disappears, allowing the sherry to continue maturing oxidatively. This process typically gives the sherry fascinating notes of tobacco, nuts, acidity, and “wood” characteristics.

  It is precisely this spicy combination that Jes Mosgaard wanted to add to the qualities that the Oloroso casks provide – and he has succeeded magnificently. His tasting notes from an earlier session include dryness, almonds/nuts, vanilla/marzipan, plums, blue grapes, figs, cinnamon, and orange – and with a little water, it opens up with tingling grapefruit notes.
