    Pinot Noir is the thin-skinned diva of grapes — hard to grow and harder still to get right. Putting Deanston's honey into a Pinot Noir cask was therefore a gamble that could have gone wrong.

    Deanston 2002 Pinot Noir Cask Finish 17 years is a Highland Single Malt Scotch Whisky finished in Pinot Noir casks and bottled at 50% without chill filtration and without added colouring.

    The whisky was distilled in 2002 and had seventeen years before it went into bottle. Pinot Noir does not give the heavy, dark fruit you know from sherry — it contributes acidity, light red berries and a dry tannic edge. On a spirit like Deanston's, already pale and honeyed, the result turns fresher rather than darker.

    Nose

    Bright, crisp fruit notes with creamy vanilla and oak, leaving room for a suggestion of green grapes.

    Palate

    Dry and lightly malted with a tart edge and a rich hint of tannin. The 50% keeps the acidity up without making the whisky sharp.

    Equipo Navazos La Bota de Grain Whisky Bota No 89 is a single-cask bottling of grain whisky, selected and bottled with the same philosophy as the group's celebrated sherry series, bottled at 46%. Equipo Navazos started in 2005 as a group of Spanish sherry enthusiasts led by Jesús Barquín and Eduardo Ojeda, who found 65 casks of exceptionally fine, over 20-year-old Amontillado hidden away in a bodega in Sanlúcar. Together with a circle of friends, they bought one cask and released it under the name La Bota de Amontillado — the first in what is now the celebrated, chronologically numbered La Bota series.     Glen Elgin 13 Years Old Adelphi Selection is a Speyside Single Malt Scotch Whisky matured in a single bourbon cask and bottled at cask strength 54.6%.

    The cask, number C802276, gave 302 bottles. Adelphi Selection takes its name from a Glasgow distillery that closed in 1907, and the name was revived in 1993 for an independent bottling house. Every release is a single cask at cask strength, without chill filtration and without colouring.

    Glen Elgin is one of the distilleries Adelphi returns to. The house fruitiness is clear and stands up to high strength, and a bourbon cask lets it show without being wrapped in dark fruit.

    Nose

    Pineapple and ripe melon first, then vanilla custard and a touch of green banana from the American wood.

    Palate

    Concentrated and sweet. Tropical fruit and honey in front, then a creamy middle and a growing note of white pepper.

    Each year the distillery sets aside roughly a week to run peated malt through production. The smoke comes from Scottish peat, and the malt sits at around 30 ppm phenols, which is striking for Speyside but mild next to the heaviest Islay bottlings. The whisky from that week is matured separately and released on its own.

    Fourteen years in American oak lets the smoke settle down. It turns softer, more integrated, and lies as a layer beneath the familiar Balvenie honey sweetness rather than sitting on top of it. The release belongs to The Balvenie Stories series.

    Expert Description

    Arran Machrie Moor is a Single Islands Malt Scotch Whisky made from lightly peated malt and bottled at 56.2%.

    Since 2004, Arran has distilled a small amount of malt peated to around 20 ppm every year — a medium smoke level that offers more than just bonfire and tar. Machrie Moor has become a permanent part of Arran's range, bottled at cask strength, non-chill filtered and with natural colour, put together by the distillery's manager James MacTaggart.

    Nose

    Peat smoke and ash meet an underlying sweetness and a lightly salted coastal aroma.

    Palate

    Smoky yet balanced, with Arran's classic citrus note shining through.

    Finish

    Medium length with lingering smoke and a dry, spiced close.
