    Breath of The Highlands 2009/2022 is a Single Highland Malt Scotch Whisky, distilled in 2009 and bottled in 2022 after 12 years of maturation, selected by Adelphi Selection. The Adelphi distillery was founded in 1826 on the banks of the Clyde on the outskirts of Glasgow, but closed in the early 1900s. The name was revived in 1993 as an independent bottler, known for its strict quality standards — Adelphi tests around 25 casks for every one approved for bottling under the Adelphi name, equating to under 4% of the casks tested. The company today also owns its own distillery, Ardnamurchan, the westernmost distillery on the Scottish mainland.

    Brenne Ten Organic French Single Malt Whisky is a French single malt whisky, bottled at 48%, distilled in the Cognac region. Brenne was founded by American whisky entrepreneur Allison Parc, a former ballerina, who started the brand with her own savings and a dream of proving that terroir — the landscape's imprint on flavour — could be achieved in whisky, just as in wine. The whisky is distilled from 100% malted barley grown in the region, on classic copper alembic Charentais stills, the same type used for Cognac production, in partnership with a third-generation Cognac house whose farm has distilled eau de vie since the 1920s. Brenne was the world's first single malt whisky matured exclusively in French Limousin oak and used Cognac casks. The first expression debuted in New York in 2012, with Parc personally distributing bottles by bicycle to stores and bars — the batch sold out within two months.

    The Organic 2011 is an Islay Single Malt Scotch Whisky from Bruichladdich, matured in first-fill bourbon casks and bottled at 50%.

    The Rose family has run Mid Coul Farm in the north of Scotland since 1913, and their organic Publican barley is still grown on principles that build on earlier generations' farming, without artificial fertiliser or pesticides. Bruichladdich uses this barley to show that organic growing can produce a whisky with a character entirely its own.

    The whisky was distilled in 2011 and matured for 11 years on cask, unpeated throughout. The result is a light, fruit-forward single malt in which the grain and the wood are left to speak undisturbed.

    Nose

    Creamy caramel and cantaloupe melon meet ripe stone fruit and lemon zest, followed by toasted oak, orange blossom, honey and malted barley sugar, spiced with honeysuckle, rose and geranium.

    Sometimes the label says less than it could. Burnside is one of those names used when a distillery does not want its real name on the bottle — but the character in the glass is unmistakable.

    Please note: Burnside is the designation for so-called teaspooned Balvenie. It means a cask from the Balvenie distillery has had a minimal amount of spirit from another distillery added, typically Glenfiddich. This is done to prevent the whisky being marketed as an official Balvenie single malt, but it still clearly carries Balvenie's character.

    Burnside 14 Years Woodrow's of Edinburgh is a Single Speyside Malt Scotch Whisky from Single Cask #900019, bottled at cask strength, 52%, without chill filtration and without added colour.

    The whisky was distilled on 27 April 2011, and the cask gave 330 bottles. Woodrow's of Edinburgh is an independent bottler based in Leith that buys and matures casks in its own bonded warehouse and bottles in small batches or as single casks.

    The house philosophy is about bringing out the personality of the individual cask rather than smoothing it away. Natural colour, no filtration and cask strength are standard, and that makes the bottlings considerably more direct than most official releases.

    Honey and malted grain with baked apple, vanilla and a trace of flower honey.

    Palate

    Fifteen years is young for grain, but the high bottling strength and the amontillado cask give the whisky more edge than the soft thirty year olds have. It is a different kind of grain experience: drier, spicier and less creamy.

    The sound between Islay and Jura lies like a ribbon of cold grey water, and right there – facing the current – stands Caol Ila looking across towards Jura's peaks. This is where the smoke comes from: not the heavy, tarry south-island smoke, but something lighter, saltier, more maritime. This bottle is an older release from the 1990s: one litre with a yellow banderole.

    Caol Ila 12 Years 1 litre OLD VERSION is an Islay Single Malt Scotch Whisky bottled at 43% – a rare older version in a litre bottle with a yellow banderole from the 1990s.

    Caol Ila has produced a 12-year expression under changing owners since the 1970s, and the litre format was for many years part of the classic duty and export bottlings. This version with the yellow banderole is discontinued and carries a design from an era nothing like the current Caol Ila bottle.

    The distillery sits at Port Askaig on Islay's north-east coast. It was demolished and rebuilt from scratch in 1972, with production resuming in 1974. Malt comes from Port Ellen Maltings at around 30-35 ppm. Maturation is primarily in refill ex-bourbon casks, giving the light colour and clean, fresh character.

    Tasting notes

    Nose

    Fresh and maritime. Lemon peel and green apple first, then a breath of soft peat smoke, seaweed and a hint of almond oil. Freshly cut grass and a faint sweetness in the background.

    Palate

    Good oily texture. Elegant smoke, tar and boiled sweets with citrus zest and a salted, briny edge. Pepper and a lightly medicinal note recalling Islay's heritage.

    Finish

    Long and peppery. The smoke becomes more ashy towards the end, with lemon, lime and a soft sweetness settling in.

    Little Brown Dog is a British independent bottler with a single-cask focus. For this batch they chose a refill butt – a 500-litre cask that has already matured whisky and retained a discreet, oxidised wood influence. That is where the 'wonderfully oxidised' character described by tasters comes from.

    The result is a whisky with classic Caol Ila freshness and salty maritime peat smoke, wrapped in a lightly oxidised, nutty-complex structure. Wax candle, driftwood bonfire and sea urchin are tasting descriptions that reflect a product of precise, controlled craft.

Miller in Paris, Kentucky, and was one of America's oldest bourbon brands until it closed after Prohibition. During Prohibition, the whiskey became a fixture in speakeasies, including the famous Cotton Club in Harlem, where it was often smuggled in tin cans to avoid detection — earning it the nickname 'The Famous Old Brand'. The label lay dormant until spirits entrepreneur Matti Anttila revived it in 2011 using original bottles and promotional materials. Since 2018, the whiskey has been produced at Bardstown Bourbon Company through a collaborative distillation program.

The cask was chosen to let the distillery stand forward rather than sit on top of it — a young, energetic Clynelish with no cask make-up.

    The release dates from the 1990s, when Cragganmore was still sold in the discontinued litre measure with a yellow duty band — a design collectors know and look for. The distillery was founded in 1869 by John Smith, who sited it close to the Strathspey railway, locally known as The Whisky Line. Cragganmore still uses worm tub condensers, which almost nobody else does, and that is a large part of the reason for the heavy, complex house style.

    Craigellachie 2011/2023 Duncan Taylor 12 years Private Cask Bottling is a Speyside Single Malt Scotch Whisky matured in a sherry butt and bottled at cask strength of 52.4%.

    The cask gave 667 bottles and belongs to Duncan Taylor's Private Cask line. The house is based at Huntly in Aberdeenshire and has since 1938 built one of the largest private stocks of Scotch whisky in the trade. Craigellachie condenses in worm tubs and makes a heavy, meaty spirit that needs an active sherry cask to find balance — here twelve years is enough to give colour and fruit without erasing the distillery.

    Nose

    Intense and dark. Orange oil, juicy cherries, red grapes and blackberry jam, with dates, spiced cake, nutmeg and dark chocolate behind.

    Palate

    Full and rounded. Chocolate-coated raisins, fig syrup, rosehip jam and black cherries, joined by candied orange, malt, roasted coffee beans and cinnamon.

    Finish

    Long and intense, dominated by juicy oranges, honey, sherry and dried fruit with a touch of caramel and roasted notes.

    The cask carries the number 900694, was filled on 4 September 2012 and emptied on 12 January 2023. The outturn was 610 bottles. Signatory Vintage was founded in 1988 by Andrew Symington and is among the most prolific independent bottlers in Scotland. Craigellachie makes a heavy, meaty spirit in worm tubs, and an oloroso butt over ten years lays dried fruit on top without being able to drown the minerality.

    Tasting notes

    Nose

    Concentrated and dark. Raisin, fig and orange peel, with walnut, dark chocolate and a flinty note under the sherry.

    Palate

    Massive but not sharp. Dried fruit, cocoa and malt, with an oily texture carrying the alcohol. The sulphurous distillery edge cuts through the sweetness and gives direction.

    Finish

    Very long and dry, with nuts, dark fruit and a warm spiced close that keeps going.

    The cask is numbered 900699, was filled on 4 September 2012 and emptied on 17 February 2023. It gave 529 bottles. First fill means it went straight from sherry to Scotch with nothing in between, which gives a far stronger cask influence than a refill. Signatory buys casks from distilleries across Scotland and bottles them under its own name.

    Tasting notes

    Nose

    Dense and dark. Syrupy raisin, black cherry and orange marmalade, with cinnamon, dark cocoa and a dry nutty note.

    Palate

    Fiercely concentrated. Fig, date, chocolate and burnt sugar, with a peppery warmth and a dry sherry edge. The distillery's mineral core sits underneath and keeps the sweetness from running away.

    Finish

    Very long, dry and spiced, with dark fruit, oak and a slowly fading warmth.

    The whisky was distilled in 2006 under Loch Lomond's heavily peated Croftengea profile and rested in a single refill cask until being bottled in 2016 by independent bottler Cooper's Choice. Only 725 bottles were filled from this one cask.

    Tasting Notes

    Nose

    Rich and heavy with plums, figs and dates – no smoke on the nose.

    Palate

    Smoke and ashy tobacco meet milk chocolate, smoked meat and oily malt, with a touch of pink peppercorn and sweet toffee.

    Finish

    Short but sweet finish that dries out with cracked peppercorns and a lingering hint of bonfire embers.

    The whisky was distilled at Loch Lomond in 2016 under the distillery's heavily peated Croftengea profile and, after its time in American oak, was given a final finish in a Jamaican rum cask before being bottled in 2024 by the independent bottler Cooper's Choice. Cask strength and single-cask bottling mean no other bottle is quite like this one.

    Nose

    Heavy smoke and earthy peat meet sweet molasses and preserved tropical fruit from the rum cask.

    The casks carry the numbers 7223 and 7224. Dailuaine sits at Carron in Speyside, was founded in 1852 and has throughout its history supplied malt for blends rather than for its own bottles. Signatory Vintage, founded in 1988 by Andrew Symington, is among the bottlers who systematically bring distilleries like this forward — and with twenty years in bourbon wood, Dailuaine's heavy, malted core stands clearly.
