    The whisky was distilled on 29 February 2012 and matured for 12 years across ten 1st fill Madeira casks, numbers 110 to 119, before being bottled on the exact same date in 2024. The Madeira's characteristic, lightly oxidised sweetness has given the whisky a warm, dried fruit character that complements Edradour's light, floral core style nicely. 3,987 bottles were released.

    Dried apricot and caramelised sugar, with a lightly nutty aroma and a hint of honey.

    Signatory’s 100 Proof range is deliberately bottled at exactly 57.1%, the historic British proof point. It is not cask strength but a fixed, high strength, and the house selects casks whose profile can carry it.

    Aultmore’s fresh, grassy Speyside style has been laid into an active sherry cask here, which gives a markedly different expression from the bourbon matured bottlings. The distillery was built in 1896, and almost all production otherwise goes into Dewar’s White Label.

    Tasting Notes

    Nose

    Dark and sweet. Raisins, orange peel and walnut first, then dark chocolate and a dry spiced oak note. The alcohol is evident but carried by the sherry.

    Palate

    Powerful and full. Dried fruit and sherry sweetness open, then nuts, cinnamon and black pepper arrive. At 57.1% there is real weight, and Aultmore’s freshness peeks through beneath the sherry.

    Finish

    Long and dry. Dark fruit, nuts and spiced oak that hold on for a long time.

    Exceptional Cask is Signatory's way of saying a cask stands out. Here it is 1st fill oloroso sherry butts that have been allowed to work on a Glenburgie for fifteen years. That is far more sherry than the distillery is normally subjected to.

    Glenburgie 2008/2024 Signatory Vintage 15 Year Old Exceptional Cask 100 Proof Edition #2 is a Speyside Single Malt Scotch Whisky matured in 1st fill oloroso sherry butts and bottled at 57.1%.

    The spirit went into cask in 2008 and was bottled on 25 March 2024. 1st fill sherry butts are the heaviest tools in the box — a butt holds around 500 litres, and when it is filled with oloroso for the first time it gives everything it has. On a bright, fruity spirit like Glenburgie’s that is a direct confrontation. The whisky is neither chill filtered nor coloured.

    The 57.1% is no accident. Signatory's 100 Proof range holds every bottling at exactly 100 degrees British proof, and the Exceptional Cask mark is used when the casks sit above the normal level of the range in Signatory's own judgement. Edition #2 is the second release under that mark.

    Tasting notes

    Nose

    Dried fruit and dark syrup, with fig, raisin and walnut. Behind it sits a layer of leather and a dry, almost dusty spice note.

    Palate

    Powerful and dry sherry. Dark chocolate, dried figs and nuts, with a firm bitterness from the cask. The Glenburgie fruit sits underneath and fights its way forward towards the end.

    Finish

    Very long. Cocoa, tobacco and dried fruit giving way slowly to a dry, nutty close.

    A sherry butt holds around five hundred litres, twice what an ordinary cask carries. That means less wood surface per drop and a slower, more measured maturation. Eleven years does not sound like much, but in a butt they count differently.

    Ben Nevis 2011/2023 Hepburn's Choice 11 years is a Highland Single Malt Scotch Whisky matured in a sherry butt and bottled at 46 % without chill filtration and without added colour.

    The cask was filled in 2011 and drawn in 2023, yielding 880 bottles. That is a high outturn, but it follows from a cask of that size, and it also means the bottling actually reached an audience rather than vanishing within a week.

    Hepburn's Choice is a range from Hunter Laing, the family firm behind Ardnahoe on Islay among others. The range consists purely of single casks bottled at 46 % without filtration or colouring, and it is intended as the honest working series of the house rather than as prestige releases.

    Dried fig, walnut and a dry sherry note. Behind it sit malt and a suggestion of orange peel.

    Medley Old Version Kentucky Straight Bourbon Whiskey is an American bourbon from Kentucky, bottled at 43%. The Medley family has distilled whiskey since 1800, when John Medley IV moved his family from Maryland to Washington, Kentucky. The family tradition continued across generations, and in 1901 George Medley relocated the distillery to Owensboro for better access to river shipping on the Ohio River. After Prohibition was repealed in 1933, Thomas Aquinas Medley began production of a new bourbon, and in 1940 five Medley brothers founded the Medley Distilling Company. The Medley Bros. label was originally created in the 1940s as the brothers' shared tribute to the family's whiskey heritage, and has since been revived by the seventh and eighth generations of the family.

    Annandale Man O'Sword Cask 342 Single Malt Scotch Whisky is a single-cask bottling from Annandale Distillery, matured in cask no. 342, bottled at cask strength, 61 %. Annandale Distillery was founded in 1836 as one of Scotland's first legal distilleries, but closed in 1918 while owned by none other than Johnnie Walker. The distillery lay derelict for nearly a century, until Professor David Thomson and Teresa Church read about it in the book 'Scotch Missed: Lost Distilleries of Scotland', tracked down the ruined building, bought the site in 2007 and reopened the distillery in 2014 after extensive restoration. The distillery produces two main expressions: the unpeated Man O'Words and the peated Man O'Sword, continuing the distillery's historic tradition of smoky whisky.

  • Annandale Man O' Words Cask 397 bottle from a Fino sherry cask, Lowland Single Malt Scotch Whisky

    Fino is the sherry nobody uses for whisky. It is pale, bone dry and matured under a living film of yeast. Putting a young, fruity Lowland malt into a cask like that is either reckless or precise. Here it is the latter.

    The Expert's Description

    Annandale Man O' Words Cask 397 is a Lowland Single Malt Scotch Whisky matured in an ex-Fino Sherry Butt and bottled at 60.4% cask strength. The cask was filled in 2018 and emptied in 2023, giving around five years.

    Man O' Words is the distillery's unpeated range, named after Robert Burns. Fino is the driest and palest of the sherry styles, so an ex-Fino cask delivers something entirely different from the classic Oloroso: no raisins and dark fruit, but salted almonds, green apple acidity and a dry, almost bakery-like nuttiness.

    That suits Annandale’s spirit unusually well, being fresh and fruit-driven already. Instead of laying a heavy coat of fruit over the top, the Fino cask tightens the whisky and gives it more edge. The whisky is non-chill filtered.

    Tasting Notes

    Nose

    Green apple and pear first, then salted almonds and a dry yeasty note that is the Fino cask’s fingerprint. Citrus peel and something close to white bread sit at the back.

    Palate

    Dry and taut to begin, unusual for a whisky from a sherry cask. Apple acidity and almond open, then a mild spiced warmth and a light sweetness from the spirit itself. The 60.4% brings power, yet the whisky stays lean rather than full.

    Finish

    Bladnoch Liora is a Lowland Single Malt Scotch Whisky matured in Ex-Bourbon and New Oak and bottled at 52.2% without chill filtration and without added colour.

    The combination of refill bourbon casks and new American oak is chosen to set the distillery's fresh apple character against toasted caramel and spice. New oak gives up considerably more tannin and vanillin than a refill cask, which is why it is usually used in smaller proportions.

    Liora belongs to Bladnoch's named series, where the age statement is dropped in favour of the cask make-up. The high bottling strength is part of the concept and makes the whisky more concentrated than the Lowland style normally is.

    Fresh cut apples with toasted caramel and a floral note on top.

    Palate

    Cask no. 306993 was filled in 2009, first rested in a refill hogshead and then spent 36 months in a first fill Pedro Ximénez cask before being emptied in 2023. It produced 267 bottles in the Barrel Selection range.

    Wilson & Morgan was founded in 1992 by Fabio Rossi in Treviso, and the Rossi family has traded in spirits in the Veneto since the 1920s. The house's signature is long secondary maturation in active casks — an Italian approach where whisky is handled with the same logic as wine.

    Tasting notes

    Nose

    Very organic and almost farmyard at first, with overripe plums, fig and raisin on top. A clear wine streak runs across the whole thing.

    Palate

    Rich and dark with Pedro Ximénez up front: dates, dark syrup and pumpernickel. The meaty core of the spirit pushes back against the sweetness, and the 57 % gives the whisky a warm, spiced middle.

    Finish

    Very long and sweet with raisin, dark chocolate and a lightly bitter oak note at the end.

    Glengoyne 15 Year is a Highland Single Malt Scotch Whisky matured in a fixed mix of bourbon and sherry casks and bottled at 43% with natural colour.

    The split is twenty percent first fill bourbon casks, twenty-five percent first fill sherry casks and fifty-five percent refill sherry casks. The bourbon casks keep the whisky bright, the first fill sherry casks add colour and dried fruit, and the refill casks tie it all together.

    The malt is unpeated as in the rest of the range. Without smoke there is plenty of room for the casks, and the fifteen years give a clearly deeper tone than the twelve year old without making the whisky heavy.

    The rye field lies three hundred metres from the stills. That is not a romantic turn of phrase, it is an address. At Arbikie everything is sown, harvested, distilled, matured and bottled on the same farm running down to Lunan Bay, and that makes this whisky something very few Scottish distilleries can imitate.

    Arbikie 1794 Batch 22 is a Highland Single Grain Scotch Whisky matured in new charred American oak casks and bottled at 48%. The batch yielded 2,490 bottles, and the whisky is neither chill filtered nor coloured.

    The rye makes it a Single Grain rather than a Single Malt, since the term Single Malt is reserved for whisky made solely from malted barley. 1794 was the first rye whisky ever made in Scotland, and the name refers to the year distilling first took place at Arbikie. Maturation happens entirely in new charred oak, which is unusual in Scotland but entirely normal for American rye.

    Every batch turns out differently, because weather, field and grain variety shift from year to year. Batch 22 carries a deep rich amber colour from the new wood and aromas of hedgerow berries, black tea and caramel. The Stirling family has been farming since 1660 and has been at Arbikie for four generations.

    Hedgerow berries and black tea first, with a layer of warm caramel underneath. The rye reports in as dried dill and a peppery, almost green note. The new oak gives vanilla and a light resinous scent, more American than Scottish.

    Palate

    Spicy and dry from the start. The rye fills the mid-palate with pepper and a sweetish cereal character, while the charred oak lays caramel, cinnamon and burnt sugar on top. At 48% there is body enough to carry it without the whisky turning hard.

    Finish

    Long and spicy. Pepper, dried fruit and a dry woody close, where the rye hangs on longest.

The release belongs to the Cooper's Choice range from The Vintage Malt Whisky Company in Glasgow. Dalmunach opened in 2015 and is still so new that every bottling helps draw the picture of what the house style actually is.

    Nose

    Dark and syrupy. Raisin, date and fig, with dark chocolate, coffee and a young, cereal freshness underneath.

    Palate

    Dense and sweet. Caramelised sugar, dried fruit and cocoa, with a peppery warmth from the cask strength. The PX cask dominates, but the young spirit pushes back with cereal and malt.

    Finish

    Long and sweet, with raisin, dark chocolate and a dry spiced close.

    The whisky was distilled in November 2007 and bottled in 2023 in a run of 306 bottles. The Coopers Choice is The Vintage Malt Whisky Company's series for single casks, often with unusual cask combinations.

    Fifteen years is young for grain, but the high bottling strength and the amontillado cask give the whisky more edge than the soft thirty year olds have. It is a different kind of grain experience: drier, spicier and less creamy.

    Toasted almonds and dried apple with pale caramel, salt and a trace of orange peel.

    Palate

    Dry and spiced with nuts, grain and a fine bitterness from the sherry cask. The 56% gives good concentration.

    Elements of Islay Sherry Cask is an Islay Blended Malt Scotch Whisky matured in 1st fill and refill sherry butts and hogsheads and bottled at 54.5%.

    The range divides Islay by cask type, and this is the dark end. Where Bourbon Cask leaves the smoke standing free with vanilla underneath, the sherry wood here lays down a layer of figs, dates and dark chocolate that the smoke then has to climb through. The result carries more weight and more spice than anything else in the range.

    The malt comes from several Islay distilleries and which ones is not disclosed. The 54.5% is chosen to hold both the smoke and the sherry together, and the whisky is neither chill filtered nor coloured.

    Tasting notes

    Nose

    Tobacco lingering in an emptied sandalwood cigar box, smoked fish, and above it lemon oil, fresh ginger root and a hint of menthol.

    Palate

    Smoky, phenolic and slightly medicinal. Figs and dates arrive first as the smoke builds, with honey, orange marmalade and citrus underneath as counterweight. Further in: dark chocolate around candied orange, crystallised stem ginger and muscovado syrup over a sticky ginger cake.

    Finish

    Long, with a gentle smoke that lingers alongside dried autumn fruit.
