On the remote Morvern peninsula, where Scotland's west coast is at its most inaccessible, Annabel Thomas built a distillery from the ground up, with every decision filtered through sustainability.

    Expert's Description

Nc'nean Huntress 2023 is an Organic Single Highland Malt Whisky from the Nc'nean distillery, bottled at 48.5%.

The Huntress series is built around a philosophy of discovery – forging your own path, inspired by the guiding star Neachneohain. For this 2023 edition, the distillery used four different yeast strains, including some borrowed from winemaking, resulting in an unusually complex flavour with caramel sweetness, forest berries and a touch of spice. Only 4,556 bottles were filled for worldwide release.

The nose offers dried fruit, red berries and ripe plum.

  • Glenglassaugh Portsoy bottle with a dark label and harbour motif
    Item no.: 22227865480-67093-0348

The harbour town of Portsoy lies a few kilometres from the distillery, and that is where this whisky takes both its name and its direction. The smoke here is not island-hard, but it is clear enough to change the whole expression.

    The expert's description

Glenglassaugh Portsoy is a peated Highland Single Malt Scotch Whisky matured in sherry, bourbon and port casks and bottled at 49.1%.

The smoke comes from peated malt and is laid over the distillery coastal character. It is a maritime smoke with seaweed and tar rather than the dry ash smoke known from several of the islands.

Portsoy is the smoky one of the three permanent expressions Glenglassaugh launched in the summer of 2023. The port casks are what set it apart from the other two, laying a dark fruit note in beneath the smoke.

    Tasting notes

    Nose

Rich maritime notes of tropical fruit with hints of soy from the sherry cask, followed by liquorice port notes and finally seaweed.

    Palate

Full-bodied with dark chocolate, fermented soy and charred mango with syrup and a crack of sea salt.

    Finish

Medium length with campfire smoke, cinnamon, leather and black pepper.

  • Craigellachie 10 years Signatory oloroso butt bottle at high cask strength
    Item no.: 22227865480-67093-0164

Sixty-seven point four percent. Not many whiskies come out of the cask carrying numbers like that — and fewer still can hold them without burning.

    Expert description

Craigellachie 2012/2023 Signatory Vintage 10 years is a Speyside Single Malt Scotch Whisky matured in an oloroso butt and bottled at cask strength of 67.4% without chill filtration and without added colouring.

The cask carries the number 900694, was filled on 4 September 2012 and emptied on 12 January 2023. The outturn was 610 bottles. Signatory Vintage was founded in 1988 by Andrew Symington and is among the most prolific independent bottlers in Scotland. Craigellachie makes a heavy, meaty spirit in worm tubs, and an oloroso butt over ten years lays dried fruit on top without being able to drown the minerality.

    Tasting notes

    Nose

Concentrated and dark. Raisin, fig and orange peel, with walnut, dark chocolate and a flinty note under the sherry.

    Palate

Massive but not sharp. Dried fruit, cocoa and malt, with an oily texture carrying the alcohol. The sulphurous distillery edge cuts through the sweetness and gives direction.

    Finish

Very long and dry, with nuts, dark fruit and a warm spiced close that keeps going.

    Did you know?

A cask strength of 67.4% after ten years means the cask lost very little alcohol along the way. That happens in cool, damp warehouses where water evaporates more slowly than alcohol — one reason Scottish warehouses often sit low and close to water.

    Item no.: 22227865480-67093-0161

Same June day in 2012, same distillery, same bottler — but an entirely ordinary bourbon hogshead. Here you get Benrinnes without cask tricks: clean spirit, ten years and full strength.

    The expert's description

Benrinnes 2012/2023 Signatory Vintage 10 years is a Speyside Single Malt Scotch Whisky matured in a bourbon hogshead and bottled at 58.9 % cask strength.

Cask no. 310545 was filled on 25 June 2012 and emptied on 12 January 2023. The cask yielded 275 bottles, and the whisky is neither chill filtered nor coloured.

A hogshead of roughly 250 litres is built from the staves of American bourbon casks, reassembled in a slightly larger format. It strikes a balance between cask influence and spirit character that suits a heavy distillate like Benrinnes' well.

    Tasting notes

    Nose

Fresh and grainy with green apples, lemon peel and a hint of newly cut hay. The vanilla sits discreetly beneath the fruit.

    Palate

Powerful and clean. Barley, honey and pear meet a peppery warmth from the alcohol. There is a rich, almost waxy texture that holds on to the flavour.

    Finish

Long, dry and grainy with white pepper and a puff of citrus.

A detour through the Caribbean before the whisky lands back in the English countryside: cane sugar and ripe pears, wrapped in a robust 55.6%.

    Expert's Description

Cotswolds 2022 Rum Cask Matured is a blended single malt English whisky matured in rum-seasoned casks and bottled at 55.6% ABV.

The whisky is the third release in Cotswolds Distillery's Hearts & Crafts series, which celebrates the craftsmanship tradition of the Arts & Crafts movement that flourished in the Cotswolds. The spirit is matured in rejuvenated French oak casks that previously held red wine and were subsequently seasoned with fine Caribbean rum, before being bottled in 2022 in a run of 3,000 bottles.

The tube is decorated with an exclusive William Morris-inspired design, a visual tribute to the series.

    Tasting Notes

    Palate

  • Glen Moray Wilson & Morgan bottle with reddish port-tinted whisky
    Item no.: 22227865480-67093-0143

Fifty-four months in port casks. That is four and a half years, and it is not a finish — it is a second maturation laid on top of the first. Wilson & Morgan chose 2nd fill port pipes precisely so as not to run over a Speyside spirit that is lighter than it looks.

    The expert's description

Glen Moray 2007/2022 Wilson & Morgan 15 Year Old is a Speyside Single Malt Scotch Whisky finished in port casks and bottled at cask strength 57.9%.

The whisky was distilled in 2007 and bottled in 2022 from casks number 5878, 5879 and 5880. Its final fifty-four months were spent in 2nd fill port pipes, and the bottling gave 586 bottles, non-chill filtered and with no added colour. The choice of used port casks is clearly deliberate: there is colour and dark fruit, but the wine never takes charge.

Wilson & Morgan is Italian. Fabio Rossi started the firm in 1992 and runs it from Treviso north of Venice, and the house has built its reputation on single casks and small batches chosen with an Italian eye for texture and finish rather than sheer power. Glen Moray carries a mineral, almost waxy mouthfeel, which the port casks here make more muscular without blurring.

    Tasting notes

    Nose

Dark and red cherries, with liqueur-filled chocolates. Creamy and dark rather than fruit-sweet, and underneath sits a dry, mineral note from the spirit.

    Palate

Maraschino cherries and Sachertorte, with dried plums and a spiced edge. The sweetness is there but not sugared, and the waxy mouthfeel of Glen Moray comes through clearly at 57.9%.

    Finish

Warm and building. The spice grows in strength while the cherry retreats into a dry, almost cocoa-like close.

  • Glen Elgin Tapestry Speyside Single Malt Scotch Whisky bottle from three cask types
    Item no.: 22227865480-67093-0106

It is called Tapestry because three cask types are woven together rather than following one another. That is a different idea from the classic finish, where one cask gets the last word.

    The expert description

Glen Elgin 2009/2022 Tapestry 13 Years Old is a Speyside Single Malt Scotch Whisky matured in oloroso sherry casks, Pedro Ximenez sherry casks and bourbon casks, bottled at 50%.

The whisky was distilled in 2009 and bottled in 2022 after thirteen years. Tapestry is a range from the Uncharted Whisky Company, founded by the Scot Jack Breslin and the Dutch-German Dana de Vos, who both worked in the whisky trade for many years before setting up on their own.

The three cask types each pull in their own direction. The bourbon casks give vanilla and pale fruit, oloroso adds nut and dried fruit, and Pedro Ximenez brings the dark, almost syrupy sweetness. Put together they land on a profile none of them would have given alone. The whisky is bottled at 50% without chill filtration and without colouring.

    Tasting notes

    Nose

Raisin and dried apricot first, then vanilla and walnut, with a note of dark syrup in the background.

    Palate

Full and layered. Yellow fruit and honey from the bourbon wood, dates and nut from the sherry, and a dark sweetness tying it together.

    Finish

    Item no.: 22227865480-67093-0100

Eight years of maturation gives this edition of The True Circle more depth and complexity than its younger sibling - still true to the distillery's circular philosophy.

    Expert Description

Maen 8 Year The True Circle is a Blended Pure Malt Japanese Whisky, bottled at 43%.

Like the younger standard edition, this 8-year-old pure malt is built on Maen Distillery's philosophy of a close cycle between grain, water and time. The extra maturation gives the whisky a more developed character with deeper fruit and oak notes.

    Tasting Notes

Ripe apples, honey and toasted oak.

    Palate

Round and full-bodied with caramel, vanilla and a hint of spice.

  • Caol Ila 2014 2022 Murray McDavid 8 Years Benchmark Pauillac wine cask Bordeaux bottle
    Item no.: 22227865480-67093-0092

Pauillac is Bordeaux at its finest – Lafite, Mouton, Latour. When casks from one of the world's most celebrated wine regions meet Caol Ila's Islay smoke, something unexpected happens: the powerful wine residue in the wood gives a peaty and fruity note rarely found at the distillery.

    Expert's description

Caol Ila 2014/2022 Murray McDavid 8 Years Benchmark Series is an Islay Single Malt Scotch Whisky matured in Pauillac wine casks, bottled at 50% without chill filtration and with natural colour. 1,399 bottles.

Pauillac casks come from the Pauillac wine district in Bordeaux – home to Chateau Lafite Rothschild, Mouton Rothschild and Latour. The casks are laden with red Bordeaux wine and add tannin-rich, fruity and slightly earthy notes to spirits that have rested in them.

Murray McDavid's Benchmark Series puts the distillate's character at the centre and finds casks that lift it without overpowering it. Eight years and 50% in Pauillac casks give a Caol Ila with an unexpected winey depth.

    Tasting notes

    Nose

Smoke and dark fruit – blueberry and cherry from the wine cask, with Caol Ila's salty maritime smoke in the background. A hint of earth and tannins.

    Palate

Smoke and wine sweetness in good balance. Dark berry fruit, salt and a touch of Bordeaux tannins. Good body at 50%.

    Finish

Peat and fruit alternate in a medium-length finish with a light, dried fruit note at the end.

  • 1770 Glasgow Mac Y Selection Tokaji Finish bottle, Lowland Single Malt Scotch Whisky from Glasgow Distillery
    Item no.: 22227865480-67093-0086

Hungarian dessert wine and Scottish malt whisky are not an obvious match. Yet a Tokaji barrique sat waiting in a Glasgow warehouse, and for the final months before bottling the whisky was allowed to stretch out in it. You can smell that somebody took a chance.

    The Expert's Description

1770 Glasgow 2018/2022 Mac Y Selection Tokaji Finish is a Lowland Single Malt Scotch Whisky matured in 1st fill ex-bourbon casks and finished in a Tokaji barrique, bottled at 52%. Cask 18/968 was distilled on 3 February 2018 and bottled on 25 October 2022, giving 303 bottles for the Danish importer Mac Y.

Tokaji is a Hungarian sweet wine made from botrytised grapes, and its casks are used only very rarely for Scotch. Where a sherry cask brings dark fruit and nuts, Tokaji pulls towards apricot, honey and a tart marmalade note that leaves the whisky brighter and fresher than a typical finish. The bourbon wood underneath keeps the vanilla and cereal sweetness in place.

The whisky was distilled at Glasgow Distillery, where the mash ferments for over 72 hours before slow distillation in copper pot stills. Neither chill filtration nor colouring came anywhere near the bottle.

    Tasting Notes

    Nose

Dried apricot and orange marmalade first, with honey and a little yellow plum behind. Then the bourbon cask brings vanilla and a light pastry note, close to a Danish. A fine acidity runs through it all and stops the sweetness turning sticky.

    Palate

Sweet and juicy to begin: apricot, honeydew melon and candied lemon. Mid-palate the oak and white pepper tighten up and a faintly waxy texture appears. The 52% gives body without heat. After a few minutes in the glass a dried mango note steps forward.

    Finish

Medium length. Honey and citrus peel first, then drier oak and a touch of ginger. The sweetness fades calmly.

    Did You Know?

Tokaji was for centuries the most sought-after wine in Europe. Louis XIV is said to have called it Vinum Regum, Rex Vinorum, the wine of kings and the king of wines. Casks like these almost never turn up in Scottish warehouses, and when they do it is usually because a small distillery fancied trying something the big ones cannot be bothered with.

The Whistler 6 Year Old Single Cask Oloroso Sherry is a Single Cask Irish Whiskey matured in a first fill Oloroso Sherry Butt, bottled at natural cask strength 59.55%.

The whiskey has matured its entire maturation period in a single first fill Oloroso Sherry Butt from Jerez, which has contributed plenty of colour and nuance to the flavour. • Fascadale 14 year Highland Park Adelphi Batch 10 whisky bottle, natural colour
    Item no.: 22227865480-67093-0067

The label says Fascadale. It is not a distillery but Adelphi's way of speaking about Orkney without naming the place aloud. Heather peat, salt wind and fourteen quiet years in wood.

    The expert's description

Fascadale 14 year Highland Park Adelphi Batch 10 is a Single Highland Malt Scotch Whisky from Orkney, non-chill filtered and bottled with natural colour at 46%.

Fascadale is the name Adelphi gives the casks it may not label with the distillery name. The whisky comes from Highland Park, and the series has run under the Fascadale name across a long line of batches. Adelphi ranks among Scotland's most respected independent bottlers and picks its casks one at a time rather than buying in bulk.

Batch 10 is a closed release of 1,498 bottles. At 46% the spirit has the body to carry its smoke without the alcohol pushing the fruit aside, and since neither filter nor colouring has touched it, what sits in the glass is the shade the cask gave it.

Peat cut on Orkney comes from treeless, heather-covered moorland. That is why the smoke reads floral and earthy rather than tarry, and after fourteen years in wood it lies beneath the honey and apple instead of covering them.

    Tasting notes

    Nose

Heather blossom and honey arrive first, then a dry, earthy smoke closer to smouldering heather than to tar. Behind it sit fresh apples, a hint of vanilla and a breath of sea water.

    Palate

Soft and almost oily in the mouth. Citrus peel and malt sweetness open the round, a warm current of pepper and cinnamon follows, and a lightly salted edge keeps the sweetness in check.

    Finish

Medium length. The smoke settles in like a faint peat ember while the honey sweetness ebbs away and leaves dried apple skin behind.

  • Elements of Islay Bourbon Cask bottle with apothecary label from Elixir Distillers
    Item no.: 22227865480-67093-0031

The label looks like something lifted from an old pharmacy, and that is deliberate. Elixir Distillers built the whole range around the idea of Islay as an element you could extract and bottle in its pure form.

    The expert description

Elements of Islay Bourbon Cask is a Blended Islay Malt Scotch Whisky matured in 1st fill and refill bourbon barrels and bottled at 54.5%.

The range began in 2008 with small apothecary bottles and a code in place of a distillery name. Bourbon Cask is one of the core releases and brings together malt from several Islay distilleries, where the heavy barbecue smoke of the south coast meets the lighter, zestier style of the north. Elixir Distillers does not disclose which distilleries are involved.

The bourbon wood was chosen because it lets the smoke stand clearly in front. Where a sherry cask would lay dark fruit over the top, American oak contributes vanilla and coconut that push the peat forward instead of covering it. The whisky is neither chill filtered nor coloured, and the 54.5% was chosen to give it full weight.

    Tasting notes

    Nose

Sugar and vanilla pod first, then tropical fruit, mango and pineapple, and behind it a thin ribbon of chimney smoke drifting in and out.

    Palate

Cappuccino dusted with cocoa, warm vanilla brioche and fruit poached in maple syrup, while a peat fire builds underneath it all.

    Finish

Long and sooty with salt, lemon peel and a dry ash note that stays well after the sweetness has gone.

    Item no.: 2227865479-1106-197280322-154

Portuguese red wine casks are rare guests in Scotch whisky. Casado 2022 Release is Kilchoman's take on what happens when classic Islay peat gets company from deep, red-wine-tinged fruit out of Iberia.

    Expert's description

Kilchoman Casado 2022 Release is an Islay Single Malt Scotch Whisky, matured in a combination of ex-bourbon and Portuguese red wine casks and bottled at 46 %.

The release is the result of carefully selected casks, brought together to create a harmonious flavour experience. Combining ex-bourbon casks with Portuguese red wine oak casks achieves a deep and complex flavour profile, where the red wine's fruit sweetness layers on top of Kilchoman's classic peated character.

The result is a soft, round whisky where notes of peated smoke, caramel, vanilla and dried fruit dance in a different balance to the distillery's more familiar sherry and port-matured releases.

    Tasting notes

    Nose

Enticing smoke, sweetness and spice meet dark berry fruit and a light winey acidity from the red wine casks.

    Palate

Soft and round, with notes of peated smoke, caramel, vanilla and dried fruit gliding elegantly across the palate.

    Finish

Long-lasting, with a pleasant warmth and a final trace of dark fruit and oak.

  • Ardmore 12 year old Adelphi Selection bottle from an ex-Laphroaig cask, Highland Single Malt Scotch Whisky
    Item no.: 22227865555-88874123

The cask came from Laphroaig on Islay. The whisky came from Ardmore in Aberdeenshire. Two peated houses from opposite ends of Scotland shared the same wood, and the result was 194 bottles, released for the Danish market alone.

    The Expert's Description

Ardmore 2009/2022 Adelphi Selection 12 Years Old is a Highland Single Malt Scotch Whisky matured in a used bourbon cask from Laphroaig and bottled at 58.6% cask strength. Cask 709300 was distilled on 16 December 2009 and bottled on 11 October 2022, giving 194 bottles for FC Whisky in Denmark.

An ex-Laphroaig cask is not neutral. Laphroaig is one of the most heavily peated whiskies in Scotland, and phenols from the previous filling remain in the staves. Put Ardmore’s own peated malt into that cask and you get two kinds of smoke that are not alike: Ardmore’s dry earthy Highland smoke and a saltier, more medicinal undercurrent from Islay.

Adelphi is known for a very strict selection, where only a small fraction of the casks the house tastes make it through. The whisky is neither chill filtered nor coloured.

    Tasting Notes

    Nose

Peat smoke and salt first, with tar and a suggestion of iodine behind, the Laphroaig inheritance is obvious. Vanilla, honey and toasted malt from the bourbon wood sit underneath.

    Palate

Powerful and oily. Smoke and salt open, then honey, vanilla and a dry peppery spice. The 58.6% pushes hard, but there is body enough to carry it. A few drops of water draw out the sweetness and calm the salt.

    Finish

Long and dry. Ash, salt and spiced oak, with a final malt sweetness lingering beneath the smoke.

    Did You Know?

The cask has travelled an unusual route. Expert description

Breath of The Highlands 2009/2022 is a Single Highland Malt Scotch Whisky, distilled in 2009 and bottled in 2022 after 12 years of maturation, selected by Adelphi Selection. The name was revived in 1993 as an independent bottler, known for its strict quality standards — Adelphi tests around 25 casks for every one approved for bottling under the Adelphi name, equating to under 4% of the casks tested. The company today also owns its own distillery, Ardnamurchan, the westernmost distillery on the Scottish mainland.

Adelphi's nosing panel has Charles MacLean at the head of the table, and they say no to far more casks than they say yes to. Cask no. 305256 got through — and you can taste why in the nose alone.

    The expert's description

Benrinnes 2011/2022 Adelphi Selection 11 years is a Speyside Single Malt Scotch Whisky bottled as a single cask at 56.2 % full cask strength.

Cask no. 305256 was filled in 2011 and emptied in 2022, yielding 341 bottles. The whisky is neither chill filtered nor coloured, and Adelphi bottle, as always, without reduction.

Adelphi was revived as an independent bottler in 1993 and today owns Ardnamurchan Distillery on the west Highland peninsula of the same name. Casks are selected by a nosing panel chaired by whisky writer Charles MacLean, and only a fraction of the casks tasted reach the bottle.

    Tasting notes

    Nose

Powerful and malty with baked apple, cinnamon sugar and a touch of melted butter. The alcohol takes up space at first but settles quickly.

    Palate

Intense and oily. Barley, honey and peppery spice gather around a core of yellow fruit. Water loosens it up and draws out vanilla.

    Finish

Long and warm with toasted grain, nutmeg and a dry oak conclusion.
