    Cask number 159, 332 bottles, and that was that. Valinch & Mallet are two Italians who bought a bourbon cask of Glenburgie in 2010 and left it alone for eleven years before emptying it. No finish, no adjustment — just the cask as it was.

    Glenburgie 11 Year Old Valinch & Mallet 2010/2021 is a Highland Single Malt Scotch Whisky from a single bourbon cask, bottled at cask strength 52.6%.

    The cask was filled in 2010 and emptied in 2021 — bourbon cask number 159, which gave 332 bottles. A single bourbon cask with no finishing period is the most honest way to show a distillery: there is no sherry to cover anything and no blending to smooth out the cask’s quirks. What you taste is what those eleven years ended up giving.

    Valinch & Mallet was founded in 2015 by two Italians, Davide Romano and Fabio Ermoli, who wanted to carry the Italian tradition of whisky bottling forward. Italy has had access for decades to Scottish casks that never reached the British market, and a number of the most talked-about bottlings of the 1970s and 80s arrived exactly that way.

    Tasting notes

    Nose

    Bright and clean. Green apple, pear and lemon peel, with vanilla and coconut from the bourbon cask. A cereal malt note sits under the fruit.

    Palate

    Powerful and fruit-sweet. Honey, ripe pear and vanilla, with a peppery edge from the 52.6%. The soft, fruity Glenburgie style comes through clearly with nothing to hide behind.

    Finish

    Long and warm. Vanilla and apple first, then a dry close of American oak and white pepper.

    Exceptional Cask is Signatory's way of saying a cask stands out. Here it is 1st fill oloroso sherry butts that have been allowed to work on a Glenburgie for fifteen years. That is far more sherry than the distillery is normally subjected to.

    Glenburgie 2008/2024 Signatory Vintage 15 Year Old Exceptional Cask 100 Proof Edition #2 is a Speyside Single Malt Scotch Whisky matured in 1st fill oloroso sherry butts and bottled at 57.1%.

    The spirit went into cask in 2008 and was bottled on 25 March 2024. 1st fill sherry butts are the heaviest tools in the box — a butt holds around 500 litres, and when it is filled with oloroso for the first time it gives everything it has. On a bright, fruity spirit like Glenburgie’s that is a direct confrontation. The whisky is neither chill filtered nor coloured.

    The 57.1% is no accident. Signatory's 100 Proof range holds every bottling at exactly 100 degrees British proof, and the Exceptional Cask mark is used when the casks sit above the normal level of the range in Signatory's own judgement. Edition #2 is the second release under that mark.

    Tasting notes

    Nose

    Dried fruit and dark syrup, with fig, raisin and walnut. Behind it sits a layer of leather and a dry, almost dusty spice note.

    Palate

    Powerful and dry sherry. Dark chocolate, dried figs and nuts, with a firm bitterness from the cask. The Glenburgie fruit sits underneath and fights its way forward towards the end.

    Finish

    Very long. Cocoa, tobacco and dried fruit giving way slowly to a dry, nutty close.

  • Glenburgie 8 Year Old Gordon & MacPhail old bottle with white neck band

    A white band around the neck. That is the kind of detail that places a bottle in time long before you read the label. This is Gordon & MacPhail’s Glenburgie from the years when the bottler was one of the few places you could find the distillery under its own name at all.

    Glenburgie Old Version 8 Year Old is a Highland Single Malt Scotch Whisky bottled by Gordon & MacPhail at 40%.

    Eight years is young, but it was normal for the older Gordon & MacPhail ranges, where the distillery character was meant to come through without many years of cask on top. The Glenburgie spirit is soft and fruity, and at 40% the whisky comes out light and round rather than powerful.

    Gordon & MacPhail has been bottling Scotch from Elgin since 1895 and was for decades the most important source of single malt from distilleries that released nothing themselves. Glenburgie is one of those — almost the entire output goes into blends, and without bottlers like G&M most people would never have tasted the distillery.

    Tasting notes

    Nose

    Malt and baked apple, with pale honey and a trace of vanilla. Calm and understated, as older 40% bottlings often are.

    Palate

    Soft and light. Pear, honey and cereal malt, with a dry turn mid-palate. The body is slender, but there is more texture than the number on the label suggests.

    Finish

    Short to medium. Malt and a dry touch of oak closing quietly.

    Gordon & MacPhail has been in Elgin since 1895 and for many years filled its own casks at the distilleries. That means the firm has in practice held its own stock of whisky from houses that have never released an official bottle themselves.

    PX only. No oloroso to dry it out, no bourbon to lighten it. Ode to The Dark is the most uncompromising of the three in The Master’s Anthology, and the name was not chosen at random.

    Glendronach Ode to The Dark is a Highland Single Malt Scotch Whisky matured entirely in Pedro Ximénez sherry casks and bottled at 50.8%.

    PX is the sweetest and most concentrated sherry type, and a whisky that sits in it alone picks up a depth and a colour no other cask combination can give. The 50.8% is pitched high to keep the heavy fruit in check — at a lower strength the sweetness would easily turn cloying.

    The bottling forms part of The Master’s Anthology, a trio of Highland Single Malt Scotch Whisky composed by master blender Rachel Barrie and launched in December 2024. The three releases carry no age statement and are each built around their own cask direction — Ode to The Valley, Ode to The Embers and Ode to The Dark.

    Tasting notes

    Nose

    Dark chocolate and black cherries, with dates and a hint of bitter coffee. There is a heavy syrup note that PX casks always lay in.

    Palate

    Dense and sweet. Dates, raisin and dark chocolate, with a coffee bitterness cutting through. The cask strength gives the whisky enough structure not to collapse under its own sweetness.

    Finish

    Very long. Cocoa, dark fruit and a dry, almost burnt close.

    Glendronach and smoke is not an obvious combination. The distillery has built its whole name on sherry, and peated spirit is something it makes rarely. Ode to The Embers is one of the few times the two meet in the same bottle.

    Glendronach Ode to The Embers is a peated Highland Single Malt Scotch Whisky matured in oloroso and Pedro Ximénez sherry casks, bottled at 48.4%.

    Most of the maturation takes place in oloroso casks with a share of Pedro Ximénez, and that is a deliberate build: the oloroso gives the dryness the smoke can play against, while the PX rounds off the sharp edges. The whisky carries no age statement, because the composition was chosen by cask rather than by year.

    The bottling is the peated one of the three in The Master’s Anthology, composed by master blender Rachel Barrie and launched in December 2024. The series is intended as three different answers to the same question — what sherry casks can actually be used for.

    Nose

    Smoked malt and glowing charcoal, with dark fruit and sherry behind. There is an oily note beneath the smoke that does not resemble Islay.

    Palate

    Full and smoky. Dried fruit and nuts from the sherry casks meet an earthy, warm smoke, and the PX share lays in a sweetness that holds it all together.

    Finish

    Long. Smoke and dark fruit giving way slowly to a dry, spiced close with a trace of ash.

    Cask number 9. Not one of the long numbers that usually fill Signatory labels, but a single low figure — and behind it sits a Glendullan that spent its final stretch in a 1st fill oloroso hogshead.

    Glendullan 2009/2025 Signatory Vintage 15 Year Old is a Speyside Single Malt Scotch Whisky with a finishing period in a 1st fill oloroso sherry hogshead, bottled at cask strength 55.6%.

    The spirit went into cask on 19 November 2009 and was bottled on 11 April 2025 from cask number 9. The bottling gave 344 bottles, non-chill filtered and with no added colour, and forms part of the Signatory Cask Strength Collection. A 1st fill oloroso hogshead works quickly, and even a short finish leaves clear marks.

    Glendullan was built in 1897 by the Aberdeen blender William Williams and sits in Dufftown in the middle of Speyside. The distillery supplies large volumes to the Diageo blends today, not least Old Parr, so only a fraction of production is ever bottled under its own name.

    Tasting notes

    Nose

    Dark raisins and toasted almonds, with rich caramel and a trace of cinnamon. Beneath the sherry lies a warm, sweet malt note.

    Palate

    Full and layered. Sherry-soaked figs, dark chocolate, nutmeg and oak spice. The interplay between dried fruit and spice keeps the 55.6% in check.

    Finish

    Long and warming. Lasting sweetness from the dried fruit and subtle tannins fading gradually into toasted oak.

    No finish. No port casks, no wine casks, no detour. Glenfarclas has built its whole range on sherry casks alone, and the 15 year old is where that decision pays out most.

    Glenfarclas 15 Year Old is a Speyside Single Malt Scotch Whisky matured in sherry casks and bottled at 46%.

    The 46% is higher than in both the 10 and the 12 year old, and that is no accident. Fifteen years in sherry casks builds a depth that a low bottling strength would have flattened, and the extra three percentage points keep both the sweetness and the spice in place.

    For many people the 15 year old is the point where Glenfarclas stops being an everyday whisky and becomes something you reach for deliberately. The sherry is still recognisable from the younger releases, but it has been joined by roasted nuts, dates and a texture that is clearly fuller.

    Nose

    Complex sherry notes with a touch of understated smoke, cream caramel and a small hint of dried fruits such as dates and figs.

    Palate

    Great body with elegant balance. Plenty of sweetness from the sherry casks, malty tones, roasted nuts and a light smoke that sits beneath the fruit rather than on top of it.

    Finish

    Long and lingering with lavish sweetness, light smoke and plenty of complexity.

    The harbour town of Portsoy lies a few kilometres from the distillery, and that is where this whisky takes both its name and its direction. The smoke here is not island-hard, but it is clear enough to change the whole expression.

    Glenglassaugh Portsoy is a peated Highland Single Malt Scotch Whisky matured in sherry, bourbon and port casks and bottled at 49.1%.

    The smoke comes from peated malt and is laid over the distillery coastal character. It is a maritime smoke with seaweed and tar rather than the dry ash smoke known from several of the islands.

    Portsoy is the smoky one of the three permanent expressions Glenglassaugh launched in the summer of 2023. The port casks are what set it apart from the other two, laying a dark fruit note in beneath the smoke.

    Tasting notes

    Nose

    Rich maritime notes of tropical fruit with hints of soy from the sherry cask, followed by liquorice port notes and finally seaweed.

    Palate

    Full-bodied with dark chocolate, fermented soy and charred mango with syrup and a crack of sea salt.

    Finish

    Medium length with campfire smoke, cinnamon, leather and black pepper.

    The green capsule and the name Glen Guin give away that this bottle has a few years behind it. It is a discontinued version of the ten year old Glengoyne from when the label looked different.

    Glengoyne 10 Year Green Cap is a Single Highland Malt Scotch Whisky matured in sherry casks and bottled at 40%.

    The whisky is the distillery classic ten year old in older packaging. Glengoyne uses no peat, and the malt is dried with warm air alone, so there is no smoke in the glass — only malt, sherry and fruit.

    Bottles like this one are no longer in production. The packaging has changed several times over the years, and it is the ones with the green capsule and the old name that collectors look for.

    Lang Brothers meant to call the distillery Glengoyne, but a clerk wrote Glen Guin in the paperwork, and that name stood in the books for decades. Only later was it corrected to the name we know.

    Twenty-five percent first fill sherry casks is a lot for a permanent bottling. It is the sort of cask split usually only worked out on paper by people rather too interested in wood — and here you can taste it.

    Glengoyne 15 Year is a Highland Single Malt Scotch Whisky matured in a fixed mix of bourbon and sherry casks and bottled at 43% with natural colour.

    The split is twenty percent first fill bourbon casks, twenty-five percent first fill sherry casks and fifty-five percent refill sherry casks. The bourbon casks keep the whisky bright, the first fill sherry casks add colour and dried fruit, and the refill casks tie it all together.

    The malt is unpeated as in the rest of the range. Without smoke there is plenty of room for the casks, and the fifteen years give a clearly deeper tone than the twelve year old without making the whisky heavy.

    Dried fruit, nuts and orange peel with a note of cinnamon cake and soft oak.

    Palate

    Round and malty with raisin, walnut and dark caramel. The sherry takes up more room than in the younger expressions, with a firm spiced middle.

    Glenlossie 10 Year Old Lady of the Glen is a Speyside Single Malt Scotch Whisky bottled at full cask strength, 56.6%.

    Distilled in 2013 and bottled in 2023 by the independent bottler Lady of the Glen, run by Hannah Whisky Merchants, the whisky comes from a single cask, No. 5308, a refill hogshead finished in an ex ruby port cask. Lady of the Glen always bottles single cask, non-chill filtered and with no added colour, so what lands in the glass is the whisky exactly as the cask left it.

    Glenlossie rarely appears as a standalone single malt, since most of its output feeds blends such as Haig's and Dimple – every independent Glenlossie release is a small look behind that curtain.

    Tasting Notes

    Nose

    Ripe red berries and a touch of port-wine sweetness sit over Glenlossie's cereal base. There's a hint of dried apricot and a light, spiced warmth from the high strength.

    Palate

    Habitation St. Etienne Martinique Rhum Agricole Extra Vieux XO is an AOC Martinique Rhum Agricole, blended from rums matured for at least a decade in carefully selected Cognac casks and bottled at 43%.

    The XO expression draws on some of the oldest stocks in HSE's cellars at Habitation Saint-Étienne, some of which date back to the 1960s. Because the rum has rested in Cognac casks rather than the more common American oak, it takes on a deep amber colour and a profile that leans on Cognac tradition's finesse rather than rum's typical sweetness.

    Nose

    Complex yet not overwhelming, with light, fresh fruit notes, a grassy character and sweet mocha, complemented by pronounced notes of cocoa, mocha and pale tobacco with a hint of black pepper and nutmeg.

    Somewhere in a Scottish warehouse sat a cask nobody could quite place anymore. Pure Highland malt whisky, matured for years on bourbon oak, without a name and without a story, until two curious bottlers from Fintry found it and gave it a new finish and a new chapter.

    Heart of Gold 2013/2024 is a Highland Blended Malt Scotch Whisky, composed of malt whisky finished in a fresh Sauternes cask and bottled at 50%.

    Behind the bottle stands The Uncharted Whisky Co., a small independent bottler run by Jack Breslin and Dana de Vos from Fintry, Scotland. The spirit in Heart of Gold is a marriage of malt whiskies from the Highland region, first matured in standard ex-bourbon casks before Uncharted Whisky discovered the parcel and chose to give it a final chapter in a fresh Sauternes wine barrique, cask reference UC030. The whisky was distilled in April 2013 and bottled in March 2024, giving it 10 years of total maturation, with only 363 bottles produced of this release.

    Because the original distilleries behind the blend are not disclosed, Heart of Gold is a whisky that lives on its cask treatment rather than a named distillery, the Sauternes cask leaving a clear, sweet signature over the clean Highland malt character.

    Nose

    Ripe stone fruit and pineapple meet dried apricots and a light lemon-sherbet freshness, with a sweet, wine-like undertone from the Sauternes cask.

    Palate

    Candied pineapple and a full, buttery character that moves into honey and freshly baked brioche.

    Finish

    Long and sweet, with peaches and a creamy, almost custard-like close where the Sauternes wine sweetness lingers longest.

Heaven's Door was created through a collaboration between music legend Bob Dylan and spirits entrepreneur Marc Bushala, officially launched in 2018. The name is drawn from Dylan's classic 1973 song 'Knockin' on Heaven's Door', and the brand is meant as a tribute to his passion for American whiskey's history and storytelling tradition. The distinctive iron gates featured on the bottles were created by Dylan himself at his own metalworking shop, Black Buffalo Ironworks, and several editions have showcased his paintings on hand-made ceramic bottles.
