    A bottle named after a Nirvana song and a distillery that may not be named. Uncharted Whisky Co. makes a virtue of not taking itself too seriously.

    Dalrymple Come As You Are 2012/2023 Uncharted Whisky Co. 11 years is a Lowlands Blended Malt Scotch Whisky matured in an ex-oloroso sherry butt and bottled at cask strength of 55% without chill filtration and without added colouring.

    The cask carries the number UC026, was filled in July 2012 and emptied in October 2023 with an outturn of 687 bottles. Dalrymple is the name the bottler uses for malt whisky from the Lowlands where the source may not be disclosed. The Lowlands is Scotland's gentlest region, and eleven years in an active sherry cask gives that light style a depth it otherwise rarely reaches.

    Nose

    Dark fruit and cereal. Raisin, orange peel and a light herbal note, with cocoa and spice underneath.

    Palate

    Full for a Lowland malt. Dried fruit, malt and dark chocolate, with a dry sherry edge and a peppery warmth from the cask strength. The region's lightness is still there under the sweetness.

    Finish

    Long and dry, with nuts, dark fruit and a warm spiced close.

    Vino de Naranja is an Andalusian speciality made from sun-dried orange peel and matured in solera. Putting it on a seventeen year old Highland malt is not something many had thought of.

    Deanston 17 years Orange Wine Cask Finish is a Highland Single Malt Scotch Whisky matured fifteen years in ex-bourbon casks with a final finish in Vino de Naranja casks and bottled at 53.6% without chill filtration and without added colouring.

    Deanston has occupied a converted cotton mill at Doune since 1966 and has never followed the crowd. The first fifteen years in bourbon wood give the honeyed depth and waxy texture the house is known for. The whisky is then moved into casks from Vino de Naranja, a Spanish orange wine made from sun-dried peel and aged in a traditional solera system.

    Tasting notes

    Nose

    Orange peel and honey first, then dried apricot, vanilla and a warm spiced note. A lightly bitter citrus note sits under the sweetness.

    Palate

    Full and concentrated. Marmalade, honey and malted barley, with a dry orange edge from the finish and a peppery warmth from the strength. The wax from the bourbon casks is still clear.

    The cask carries the number 7403 and gave 239 bottles. Adelphi traces back to a Glasgow distillery from 1826, and the name was revived in 1993 as an independent bottling house. Today Adelphi also owns the Ardnamurchan distillery on Scotland's west coast. A first fill bourbon barrel is smaller than a hogshead and therefore works faster — over ten years it gives Deanston's honey a clear vanilla frame.

Sauternes comes from Bordeaux and is made from grapes affected by noble rot, which concentrates the sugar. On a honeyed Highland malt like Deanston it reinforces the sweetness rather than working against it.

The relatively high cask strength preserves the bourbon cask's vanilla sweetness in an intense, concentrated form, while Edradour's light, floral core character comes through clearly. 1,290 bottles were released.

    The range began in 2008 with small apothecary bottles and a code in place of a distillery name. Bourbon Cask is one of the core releases and brings together malt from several Islay distilleries, where the heavy barbecue smoke of the south coast meets the lighter, zestier style of the north. Elixir Distillers does not disclose which distilleries are involved.

    The bourbon wood was chosen because it lets the smoke stand clearly in front. Where a sherry cask would lay dark fruit over the top, American oak contributes vanilla and coconut that push the peat forward instead of covering it. The whisky is neither chill filtered nor coloured, and the 54.5% was chosen to give it full weight.

    The bottle was made for Fèis Ìle 2025, the annual whisky and music festival on Islay, and holds whisky from three different Islay distilleries. Which three is not revealed. The flavour target, by contrast, is entirely specific: the whole release is built to land on s’mores, with smoke, burnt sugar and chocolate arriving in the same mouthful.

    To get there, Elixir Distillers worked with three types of wood. Pedro Ximenez and oloroso sherry casks deliver the dark sweetness, 1st fill bourbon casks give vanilla and body, and toasted new oak contributes the burnt, almost caramelised edge. The whisky is neither chill filtered nor coloured.

Equipo Navazos started in 2005 as a group of Spanish sherry enthusiasts led by Jesús Barquín and Eduardo Ojeda, who found 65 casks of exceptionally fine, over 20-year-old Amontillado hidden away in a bodega in Sanlúcar. Together with a circle of friends, they bought one cask and released it under the name La Bota de Amontillado — the first in what is now the celebrated, chronologically numbered La Bota series. Since then, Equipo Navazos has expanded its repertoire to include white wine, brandy, rum and whisky, always with the same philosophy: finding and bottling exceptional, often overlooked casks.

    In Bardstown, Kentucky's self-declared bourbon capital, a thirteen-metre copper still runs around the clock. Here, at Lux Row Distillers, a recipe dating back to 1957 gets to be raw, undiluted, and completely unapologetic.

    Old Ezra 7 Year Barrel Strength is a Kentucky Straight Bourbon Whiskey bottled straight from the barrel with no water added, at a barrel strength of 58.5%.

    Where many barrel strength bourbons turn harsh and bracing at high proof, Old Ezra does the opposite. It's aged for seven years in new, charred American white oak barrels, and the result is surprisingly rounded even at 117 proof. The mash bill runs 78% corn, 12% malted barley, and 10% rye, distilled according to a recipe tracing back to the birth of the Ezra Brooks brand in Kentucky. The whiskey is charcoal filtered after distillation for its trademark smoothness, but it's neither chill filtered nor coloured, so what lands in the glass is as close as it gets to what came out of the barrel.

    Old Ezra 7 isn't an anniversary release or a one-off drop. It sits in Ezra Brooks' permanent lineup, and it's earned its keep, landing at number 7 on Whisky Advocate's Top 20 Whiskies list and picking up several double gold medals at the San Francisco World Spirits Competition along the way.

    Sweet caramel and vanilla meet toasted oak and brown sugar, with a hint of dark chocolate and baking spice underneath.

    Palate

    Rich and spicy, with brown sugar, cinnamon, and dried fruit carried by oak and a touch of black pepper that bites just enough without taking over.

    Famous Grouse 4.5 Litre is a Blended Scotch Whisky bottled at 40% in a 450 cl bottle.

    The bottle is supplied with a metal pouring cradle so it can be served without being lifted. That is a practical necessity rather than an accessory, since a full bottle at this size weighs far too much to handle freehand at a table.

    The whisky inside is the classic Famous Grouse, created in Perth in 1896 and owned by William Grant & Sons since July 2025. Malt whisky from Scottish distilleries, with Highland Park historically among those providing the character, is bound together with grain whisky into a soft blend with no sharp edges. The format is aimed at parties, bars and collectors with shelf space.
