    In the fields around Dalcross, north of Inverness, the Rose family has farmed the land since 1913. The Organic is Bruichladdich's love letter to their organic barley, distilled unpeated and built entirely around fruit, honey and blossom.

    Expert description

    The Organic 2011 is an Islay Single Malt Scotch Whisky from Bruichladdich, matured in first-fill bourbon casks and bottled at 50%.

    The Rose family has run Mid Coul Farm in the north of Scotland since 1913, and their organic Publican barley is still grown on principles that build on earlier generations' farming, without artificial fertiliser or pesticides. Bruichladdich uses this barley to show that organic growing can produce a whisky with a character entirely its own.

    The whisky was distilled in 2011 and matured for 11 years on cask, unpeated throughout. The result is a light, fruit-forward single malt in which the grain and the wood are left to speak undisturbed.

    Tasting notes

    Nose

    Creamy caramel and cantaloupe melon meet ripe stone fruit and lemon zest, followed by toasted oak, orange blossom, honey and malted barley sugar, spiced with honeysuckle, rose and geranium.

    Palate

    Barley sugar sweetness carried on a full texture opens into honeyed citrus, toasted oak, vanilla fudge and ripe pear, while a fresh, salty sea breeze mingles with vanilla and cedar from the cask.

    Finish

    Soft and lightly tangy, with a finish of honey, toasted oak and a trace of sweet barley that lingers for a long time.

    Waves belongs to Bruichladdich's multi-vintage range, assembled by Jim McEwan during his time as master distiller. It is a lightly to medium peated Islay malt where bourbon casks lay the foundation with vanilla, malt and pale grain, while the madeira finish draws raisin, dark fruit and a touch of wine spice over the top.

    The second edition dropped the age statement the first release carried and came in new packaging, but the philosophy is unchanged: to show the softer, cleaner side of Islay. The peat sits as a quiet undertone rather than a blast, and the dram turns more maritime the longer it stands in the glass.

    From the mid-1980s onward, the Westering Home label – named after the lines from Islay's national song – was for a long time the only official Bunnahabhain release available outside the distillery itself. Back then the house style hadn't yet settled on the 46.3% known today, and this 12 Years Old is bottled at 43%, the standard of that period.

    The bottle represents a bygone era of Bunnahabhain's history, when the distillery was far less known, and even a 12 Years Old core release was hard to come by outside Scotland.

    Bunnahabhain 2001/2025 Symington's Choice 23 Years Old is an Islay Single Malt Scotch Whisky matured in an oloroso sherry butt and bottled at cask strength, 59.5%.

    Symington's Choice is Signatory Vintage's newer series, named in honour of the founder himself, gathering some of the most richly matured casks from the house's vast stock. This Bunnahabhain was distilled in October 2001 and rested for 23 years on cask #1438, before being bottled straight from the wood in April 2025.

    The long maturation on oloroso sherry has given the whisky a deep, almost mahogany hue, and at 59.5% cask strength, every drop of water you add opens fresh layers in the glass.

    Signatory Vintage filled this cask, #589, in February 2007 and left it undisturbed for twelve years, before drawing it straight from the wood in October 2019 without reducing the strength. That leaves a whisky with all the power the sherry cask has to offer, and nothing added to soften it.

    587 bottles came from this single cask, and no two are quite alike from first pour to last – that's the nature of a single cask.

    Bunnahabhain Sherried Smoke Coopers Choice is a Single Islay Malt Scotch Whisky finished in an oloroso sherry butt and bottled at 46%.

    Coopers Choice is the work of The Vintage Malt Whisky Company, which since 1992 in Glasgow has specialised in selecting and bottling rare, characterful single casks from Scotland's finest distilleries. At Coopers Choice, quality trumps quantity – every bottle is bottled in small batches, typically without chill filtration and with natural colour.

    This release was distilled at Bunnahabhain and finished in oloroso sherry casks from cask #0322, adding both depth and a warm smoky character to the already peated spirit.
