Kavalan Distillery was founded in 2005 by King Car Group in Yuanshan, Yilan County, Taiwan, and was the country's first whisky distillery. The name Kavalan is drawn from the old name for the Yilan area and the name of its indigenous people. The distillery is located where cold air from the Xueshan Mountains meets humid Pacific breezes, giving a unique subtropical microclimate and access to mineral-rich spring water. Since its first product launched in 2008, Kavalan has won over 950 gold medals in international spirits competitions.

Yellowstone Limited Edition 2018 Kentucky Straight Bourbon Whiskey is that year's release of the distillery's annual limited release, composed as a batting of several cask types and ages, bottled at 50.5%. Yellowstone Bourbon was introduced in 1872 by the J. B. Dant Distillery and named after the American national park established that same year. After decades outside the family's hands, the brand was acquired by Luxco in 1993 and transferred to Limestone Branch Distillery in 2015 — a distillery founded in 2010 by brothers Stephen and Paul Beam, who as seventh-generation members of the Beam and Dant families can trace their distilling heritage back to their great-great-uncle Jacob Beam, who distilled bourbon as early as 1794.

Ardlair 2011/2023 Signatory Vintage 12 Years Old is a Highland Single Malt Scotch Whisky matured in a refill Oloroso Sherry Butt and bottled at 63.4% cask strength. Cask 900028 was distilled on 27 January 2011 and bottled on 8 March 2023, giving 622 bottles in Signatory's Cask Strength Collection.

Ardlair is the Ardmore distillery’s unpeated whisky, and because there is no smoke to contend with, the cask can work directly on the spirit’s fruitiness. The refill sherry cask gives a complex, fruity profile without drowning the spirit’s own character, and that balance is the whole point of a refill cask over a first fill.

The whisky is bottled without chill filtration and with natural colour. Ardmore sits at Kennethmont in Aberdeenshire and has been running since 1898.

Tasting Notes

Nose

Fresh apples first, then pistachios and burnt almonds. A dry sherry note sits behind, along with a light salted caramel sweetness that ties it together. At 63.4% the alcohol is obvious, so give the glass a little time.

Clynelish 1995/2024 Symingtons Choice 28 years is a Highland Single Malt Scotch Whisky matured in an oloroso sherry butt and bottled at cask strength of 53.5%.

The cask is numbered 11250, was filled on 21 November 1995 and emptied on 29 April 2024. It gave 447 bottles. The Symingtons Choice range is named after Signatory founder Andrew Symington, who entered the Whisky Magazine Hall of Fame in 2021. Leaving Clynelish for 28 years in oloroso is a bold call — the distillery's waxy core can easily be buried in sherry, but here the two hold each other in check.

Nose

Deep and dark. Raisin, fig and toffee first, then orange peel, walnut and a damp tobacco note from the old wood.

Auchroisk was built in 1974 to supply malt for the J&B blend, and the distillery’s bright, citrus-driven style is almost entirely covered here. It is the sherry that speaks, with the spirit holding the structure underneath.

The name Tantallan is borrowed from the 600-year-old ruin of Tantallon Castle on the Firth of Forth, and this whisky was one of the very first brands launched by The Vintage Malt Whisky Company after its founding in 1992. Because the source distillery stays undisclosed, enthusiasts keep guessing at its origin, and one of the most common guesses among connoisseurs is Mortlach.

The name Orkney, paired with the bracketed hint (HP), is Signatory Vintage's discreet compromise: the distillery cannot be named, but the cask code DRU17/A63 and the nickname point unmistakably to Highland Park. The whisky spent its entire maturation in a single cask, number 27 — nothing blended in, nothing added.

The cask was filled on 7 May 2005 and bottled on 17 February 2023, yielding 612 bottles with natural colour and no further dilution.

Black Bottle 10 Years CVH is a Blended Scotch Whisky bottled at 40%.

The release is a limited follow-up to standard Black Bottle, with every component in the blend matured for at least ten years. Fruity grain whisky meets both peated and unpeated single malts, and as across the range it is the Islay component that sets the tone. The extra time in wood shows most clearly in the texture, which is oilier than in the young expression.

The producer's own notes for the ten year old point to smoked cherry wood, caramel and charred embers, and that is a fair description: the smoke has a sweet, woody edge rather than the medicinal peat associated with the southern Islay distilleries.

Nose

Caramelised sugar and smoked fruitwood, almost like a barbecue burning down. Behind it sit dried apricot and a brush of vanilla.

Palate

Soft and full with toffee and malted grain, then the smoke rolls in as glowing ash and a nip of black pepper.

Dalmore 2023 Edition 18 years is a Highland Single Malt Scotch Whisky matured in American white oak and 30 year old Matusalem oloroso sherry casks and bottled at 43%.

The distillery sits at Alness on the shore of the Cromarty Firth and has since 1839 worked in a heavy, sherried style. The partnership with the sherry house González Byass gives Dalmore access to oloroso casks that held wine for three decades, and it is those that give the 18 year old its depth.
