Bivrost Yggdrasil 2024 is crafted by the world’s northernmost distillery in the cold landscapes of Norway. This whisky is made from Nordic malted barley, melted glacier water, and undergoes a complex fermentation process. Yggdrasil has matured in Oloroso casks and the distillery’s own in-house charred barrels, stored within their Viking-style longhouse at freezing temperatures. The Arctic temperature fluctuations impact the whisky’s maturation, with an average yearly temperature of 0.6°C.

The final result is a complex and fruity whisky with aromas of dried fruits, bonfire, roasted nuts, orange blossoms, and a hint of peat. The palate offers an impressive complexity and a velvety mouthfeel with notes of toasted oak, caramelized mandarin, and a touch of peat.

This edition – Third Venom from Vat No. 17 – is based on a solera-inspired maturation system, where whisky is first aged in first fill bourbon casks and then transferred to an Oloroso sherry butt. A portion of the vat is bottled, and the remainder is topped up with fresh bourbon-matured whisky, creating depth and continuity in the flavour profile.
