Danish Whisky

Over the course of the last four years, Danish whiskey from smaller distilleries have taken the international whiskey world by storm! And with good reason. The nature of the Danish and greater Scandinavian countries are ideal for whiskey production. Many Danish whiskies are single malts, like Køge-based Braunstein. In addition, there has been a great deal of interest in Stauning and Thy Whisky.

Because of their fantastic taste, the many Danish whiskies have won various prizes around the world over the past five years. This has cemented Danish whiskey as some of the very best whiskey in the world. It is a wide belief that we can look forward to even more exciting Danish whiskies.

    On June 5, 2025, twenty Sall Whisky Friends gathered in the village of Sall with empty glasses and open minds. In front of them stood five samples, each carrying its own story - bourbon, Amontillado, Palo Cortado, Oloroso and PX. By the end of the evening, the choice was made, and a new whisky was born from shared taste and a good dose of stubbornness.

    Sall Whisky Friend Blend #1 is a Danish Single Malt Whisky composed of five different sherry and bourbon casks and bottled at 61.2%.

    The bottle is the result of a shared blending session at Sall Whisky Distillery, where twenty Sall Whisky Friends came together to taste their way to the best combination. Since every drop comes from the distillery's own spirit, this is technically closer to a vatting than a blend - but Friend Blend simply has a ring to it nobody wanted to trade away.

    The foundation is five samples, each with its own character: 30 litres Ex-Bourbon, 4 litres Ex-Amontillado, 10 litres Ex-Palo Cortado, 30 litres Ex-Oloroso and 20 litres Ex-PX. The five whiskies were combined and filled onto a 2nd Fill Ex-Bourbon Quarter Cask, where they married for roughly a year before bottling in a limited run of 146 numbered bottles.

    The release is dedicated to the Sall Whisky Friends, and every bottle carries its own number - a small reminder that this whisky was made together, not behind closed doors.

    Did You Know?

    Sall Whisky Distillery was founded by seven young men from the local area, who in 2016 rallied over 600 backers through a crowdfunding campaign to get the distillery built. The first spirit was distilled in 2017 on a small 100-litre copper pot still, using barley grown organically on a local farmer's own fields - the same soil that still supplies the distillery's grain today.

    Out on the Jutland bog the peat waits in dark layers of old plant matter, cut and dried the old way. Sall Whisky digs it up with a local peat guild and smokes their malt with it until the smoke sits deep in the grain. Tørv 2.5 is round five in that story - same fields, same stubborn peat.

    The Expert's Take

    Tørv 2.5 is a peated Danish Single Malt Whisky matured in a combination of ex-bourbon and ex-sherry casks, bottled at 51%.

    Tørv is the smoky side of Sall Whisky Distillery's core range, sitting alongside the softer Muld and the sherry-driven Glød. The barley for 2.5 is the organic varieties Prospect and Evergreen, grown on the distillery's own fields Kvolbæk and Gejlund - this time drawn from two harvest years, 2020 and 2021, because Sall would rather use what the fields actually gave than wait for one uniform crop. The malt is a mix of pale and Vienna malt, smoked with Danish bog peat from North Jutland, supplied by the distillery's friends at Tørvebisserne in Moseby. The whisky is double distilled in direct-fired copper pot stills - a slower, more hands-on method than most young distilleries bother with. From there it rests in a combination of ex-bourbon and ex-sherry casks before being bottled without chill filtration or added colour in August 2026. Only 850 bottles were filled from this batch.

    Tasting Notes

    Nose

    Smoke arrives first - earthy and light, closer to fresh bog peat than a heavy Islay style. Behind it sits sweetness from the pale malt, with a touch of honey.

    Palate

    The smoke carries through onto the palate, met by a tart-sweet edge from the sherry casks and a rounder, softer character from the ex-bourbon casks.

    Finish

    Long and smoky, with a dry, peaty edge that slowly gives way to a faint malt sweetness.

    Did You Know?

    The peat for the Tørv series isn't dug by Sall themselves - it comes from Tørvebisserne, a small group of friends in Moseby, North Jutland, who cut peat from the local bog the old-fashioned way. Danish bog peat has a completely different composition of plant matter than Scottish peat, and that difference is what gives the Tørv series its own smoke character instead of just copying Islay.

    On Denmark's windswept west coast, where the North Sea weather rolls straight in, there's a distillery that once had the idea of resting its rye whisky in casks that used to hold maple syrup from Vermont. Back then it was pure curiosity. Today it's one of the most talked-about Danish whiskies ever made.

    Expert's Description

    Stauning R.Y.E. Maple Syrup Cask Studio Series is a Danish Rye Whisky matured in new American oak casks and finished in Maple Syrup casks from Vermont, bottled at 53.5%.

    The story starts with a single cask, No. 517, which Stauning experimented with a few years back. It turned out to be one of the most awarded Danish whiskies ever, winning the World's Best Single Cask Single Rye category at the World Whiskies Awards 2023. That exact cask sold out fast, and demand for another shot at the same combination never really stopped. With the Studio Series release, Stauning gets as close to the original as it can, even if it isn't the same bottle.

    The grain is Danish rye and barley from local farms, floor-malted and kiln-dried at the distillery, using the same approach the distillery's nine founders started out with. The whisky is double distilled in Stauning's 24 small pot stills, heated by direct fire, an old-fashioned, labour-heavy method most other distilleries don't bother with anymore. From there, the spirit first rests in new, heavily charred American oak casks before moving into casks that once held maple syrup from Vermont. Those last casks are what really leave their mark: a rich sweetness, warm spices like vanilla and cinnamon, and a touch of liquorice and charred wood layered over the rye's natural spiciness. The release is limited to 2,500 bottles from 10 casks.

    Tasting Notes

    Nose

    Warm spice meets dried fruit right away, cinnamon and vanilla from the maple syrup casks, with ripe raisin and a hint of fresh rye bread somewhere behind it.

    Palate

    Caramelised apple and ripe plum arrive first, followed by toasted oak. The sweetness is velvety and kept in check throughout by the rye's spicy, almost peppery edge.

    Finish

    Long and gently warming, with a fruity finish and a mouthfeel that feels softer than you'd expect at 53.5%.

    Nose

    Finish

    Medium length and spiced. The rye spice persists, followed by a clean, gentle sweetness.

    Stauning Miniature Gift Set Høst R.Y.E. RØG is a tasting set with three Danish whiskies from Stauning Whisky in West Jutland, each bottled in 5 cl miniatures.

    Stauning was founded in 2005 by nine friends with no whisky-making experience whatsoever, but plenty of stubbornness. Since then it's grown into Denmark's best-known whisky distillery, still the only one in the country to floor-malt its own rye and barley and distil on traditional copper pot stills built in the Scottish tradition. The grain is grown locally within a bicycle-ride of the distillery by Ringkøbing Fjord, and every step, from field to bottle, happens under one roof.

    The three whiskies in this box each show a different side of Stauning. Høst is the house's soft and approachable double malt, R.Y.E. is the distillery's signature product and the very foundation of the range, and RØG is the newest addition to the core lineup – a smoked double malt that brings peat and heather into the glass. Together they make for a quick, hands-on introduction to what Danish whisky can be.

    Soft and fruity, with ripe peach, caramel and dark berries, rounded off by a touch of port wine and light floral notes from maturation in American oak with port casks.

    R.Y.E.

    Spiced and full-bodied, with freshly baked rye bread, dark fruit and toasted oak, unfolding into a long, sweetish finish from ageing in new American oak.

The result is a distinctly smoky whisky with a soft and natural smoke character that differs markedly from Scottish peated expressions.

    Beech smoking is a Nordic tradition rooted in smoke ovens and food preservation. In whisky it gives a milder, rounder smoke than peat – with notes of forest floor and light resin rather than ash and sea air.

    Soft beech smoke with forest floor, honey and light fruit. Very different from classic peated whisky.

    Did You Know?

    The ferry Ragna, pictured on the label, has sailed the route between Mellerup and Voer since 1963 and is named after the leaseholder's wife. The crossing itself is far older — in 1740, the widow Sophia Seefeld was granted a royal charter to operate a ferry here, making the route one of Denmark's oldest of its kind.

Mosgaard Whisky was founded in 2015 by Gitte and Jes Mosgaard on the Danish island of Funen, on a former farm overlooking apple orchards and the Langeland Sound. The distillery works exclusively with organic raw materials, including organic Danish barley from Gyrup Malteri, and won the award for Best Danish Distillery three years running at the Berlin International Spirits Competition (2019-2021). The Black Palo expression is matured in casks that give the whisky a dark colour and a spicy, powerful character, bottled without added colour or chill filtration.
