Up in Thy, in the far northwest of Jutland, a family farm has been passed down through eight generations. Today the barley goes from the field to the farm's own malt house, then the still, then the cask. Five years later, this is what comes out.

Thy Whisky PX & Bourbon 5 year is an organic Danish Single Malt Whisky matured in PX sherry casks and bourbon casks and bottled at 51.7%.

It is made from Odyssey barley at Thy Whisky in northwest Jutland, where growing, malting, mashing, distilling, maturing and bottling all happen on the same estate. The malt is a mix of pale malt and malt smoked over beechwood, so the smoke comes from beech and not from peat.

Two kinds of cask do the work. PX stands for Pedro Ximénez, a sweet sherry known for dried fruit and cocoa, while bourbon casks usually add vanilla and toffee. The spirit was distilled in 2020 and 2021, spent five to six years in wood and was bottled in October 2026.

Nose

Dried fruit and cocoa first, then vanilla and something close to fresh pastry. The beechwood smoke sits behind it all, warming.

Palate

Rich and malty, with fruit, toffee and vanilla. Warm spices and cocoa arrive mid-palate, and the smoke stays with you throughout.

Finish

Warm and spicy, with beechwood smoke and juicy oak at the end.
