In the old malt lofts in Skjern, the maltsters still turn the grain by hand. That same rye, grown in West Jutland's fields, ends up here – matured in Pedro Ximénez sherry casks into a whisky that is a little sweeter than most. But never soft.
Expert description
Stauning Rye PX Sherry Oak is a Danish Rye Whisky matured in Pedro Ximénez sherry casks and bottled at 46%. Stauning Whisky was founded in 2005 by nine friends in Skjern, West Jutland, and is today one of Denmark's most acclaimed distilleries. Rye PX combines the character of floor-malted, locally grown rye with the intense sweetness of PX sherry casks. Pedro Ximénez is the sweetest sherry style, made from sun-dried grapes, leaving a rich, dark, fruit-forward impression in the whisky.
Tasting notes
Nose
Sweet, caramelised raisins open the nose, followed by dark figs and soft honey spice. Underneath, rye spice adds pepper and a hint of baked grain.
Palate
Round and sweet with spiced rye pushing through. Dried cherries, dark syrup and a touch of dark chocolate. The sherry is clear but lets the rye speak.
Finish
Long and warm. Slightly bitter cocoa and persistent rye spice carry through to the end.

Did you know?
Stauning is one of the few distilleries in the world that floor malts all its grain in-house. The maltsters spend hours each day raking and turning the sprouting rye and barley by hand – a practice that has largely disappeared from commercial distilleries.
