Stauning Private Cask Whisky.dk 5 Year 2011/2017 is a Danish Malted Rye Whisky bottled at cask strength 57.5%. This Private Cask was commissioned and owned by Whisky.dk – a single cask from Stauning's distillery, selected, matured and bottled exclusively for our shelves. Malted rye differs from Stauning's standard rye by using 100% malted rye grain, resulting in a softer, sweeter and more complex profile with rye's characteristic spiced fruitiness. Distilled in 2011 and bottled five years later in 2017, this is a unique bottle that cannot be replicated.
Tasting notes
Nose
Spiced rye, green fruit and vanilla. A hint of cardamom and honey beneath the characteristic rye edge.
Palate
Full-bodied and spiced with rye bread, gentle sweetness and dark fruit. Pepper notes arrive mid-palate and persist.
Finish
Medium to long with dry rye spices and a warm finish. Clear, clean rye character throughout.

The whisky is made from 100% Danish rye malt, floor-malted in-house at Stauning and distilled in copper pot stills. 4,800 bottles produced. Non-chill filtered with natural colour.
Stauning Rye represents the best from the Jutland rye fields. With a spicy and fruity profile – and no smoke – it is a markedly different expression from Stauning's SMOKE and KAOS series. The November 2018 edition is characterised by rye at its most complex.

Nose
Spiced rye with dried fruit, orange peel and a touch of ginger. A malt-rich depth with hints of vanilla and nut.
Palate
Full and spicy. Rye bread, dark fruit and light pepper. Good structure without being heavy.

The series is called Closed Distilleries, and when the cask was selected in 2013 the name fitted precisely. Glen Keith had stood still since 1999, and a French bottling house got hold of a bourbon cask from 1995. It yielded 175 bottles.

Glen Keith 1995/2013 Part des Anges 17 Year Old is a Speyside Single Malt Scotch Whisky matured in a bourbon cask and bottled at cask strength 55.5%.
The cask was filled in 1995 and emptied in 2013 after 17 years. The bottling gave 175 bottles, non-chill filtered and with no added colour, and the whisky formed part of the Closed Distilleries series — Part des Anges' selection of whisky from distilleries that were silent or shut. The irony is that Glen Keith was started up again in 2013, the very year the bottle appeared.
Part des Anges is a French bottling house founded in 2005 by Thierry Richard and Laurent Buob. They have specialised in whisky from distilleries without a future, which has produced a set of bottles that now works rather like an archive of a period when Scotch whisky was shutting down instead of building.
Tasting notes
Nose
Concentrated and bright. Pineapple, yellow melon and vanilla pod, with a sharp orange peel on top. A cask that has had plenty of time without taking over.
Palate
Powerful and oily without being heavy. Tropical fruit, coconut and honey, with a firm peppery middle from the 55.5%. The malt sits clearly beneath it all.
Finish
Very long. Vanilla, pineapple and white pepper drying slowly into a note of pale oak.

The Highland Park Appreciation Society is not a club you wander into by chance. Its members have followed the distillery for years, and in 2016 they were allowed to point at one single cask in the warehouses at Kirkwall. They chose a sherry butt filled in 2003. It gave 576 bottles, and then the cask was empty.

Highland Park HPAS 13 Year Old Single Orkney Malt Whisky 59.1% is a Single Orkney Malt Whisky drawn from one refill sherry butt, cask #2115, bottled undiluted at its cask strength of 59.1%.
HPAS stands for the Highland Park Appreciation Society, the society for the distillery's most committed followers. The bottling belongs to Highland Park's Single Cask Series, where one cask is emptied and sold as it stands, and this particular cask was picked for the society. The spirit went into wood in 2003 and into glass in 2016.
A butt is among the largest casks in Scottish maturation at around 500 litres, and a refill cask has held whisky before. It gives up colour and wood more slowly, so after thirteen years the distillery character still leads, with the dried fruit of sherry framing it rather than covering it. The cask yielded 576 bottles.
Cask strength makes this a dense dram. Everything the wood handed over sits in the glass without a drop of water, and the smoke from Highland Park's own peated malt has far more room than in the core range.
Tasting notes
Nose
Raisins, dark orange marmalade and toasted malt. Below sits a dry, sooty peat smoke and a note of leather. The alcohol prickles for the first few seconds and settles after a couple of minutes in the glass.
Palate
Thick and oily. Dates, dark chocolate and clove, then a clear edge of pepper and a smoke that tastes of hearth ash rather than tar.
Finish
Long and warm. The dried fruit of the sherry hangs on, the spice tightens, and a dry, salty note closes the whole thing.

Quest was launched in 2018 as a replacement for the 1824 Collection in the Travel Retail segment and is matured in four cask types: ex-bourbon casks, sherry seasoned European oak casks, sherry seasoned American oak casks and hogsheads. The combination creates an expression with fruity freshness and lightly spiced sweetness — accessible and well balanced.
As a NAS whisky, Quest is designed for consistency rather than vintage depth. It is a whisky that works without demanding anything of the drinker.

Nose
Soft and welcoming with ripe mandarin and apricot. Vanilla sugar, toasted oak and a light spicy hint in the background.

Bladnoch was producing in that period under Bell's and United Distillers, and the spirit is made in the pale, classic Lowland style. After 1993 the distillery stood idle for long stretches, which has left the 1980s vintages thin on the ground.

Compass Box Hedonism The Muse is a Blended Grain Scotch Whisky bottled at 53.3% without chill filtration and without added colouring.
Hedonism was the first commercial blended grain whisky when Compass Box launched it in 2000, and The Muse is the house bottling at cask strength. Grain whisky is distilled in a column still rather than a pot still and is usually used as a soft backbone in blends. Given long maturation in good American oak it instead develops a creamy, coconut-like sweetness no malt whisky can produce. At 53.3% it stands far more powerfully than the standard Hedonism.

Nose
Vanilla pod, coconut and crème brûlée. Behind them sit sugared popcorn, pale caramel and a trace of wood shavings.
Palate
Velvety and sweet. Vanilla, coconut milk, white chocolate and pale syrup, with a warm spiced note that comes from the strength rather than the oak. The texture is thick without turning cloying.

Tullamore Dew Irish Whiskey is the brand's classic core expression, here in a large 450 cl bottle, bottled at 40%. The Tullamore distillery was founded in 1829 by Michael Molloy. After his death, his nephew Bernard Daly took over management and hired a 15-year-old stable boy named Daniel Edmund Williams as general manager. Williams eventually came to own the distillery and helped modernise the entire town of Tullamore — introducing electricity in 1893, the town's first telephone line, and its first motorised vehicle. After his death, his initials, D.E.W., became a permanent part of the brand name.

Hazelburn 10 Year Old Marsala Cask Denmark is a Campbeltown Single Malt Scotch Whisky distilled at Springbank, finished in Marsala casks and bottled at 58.8%.
Hazelburn is one of the three styles produced at Springbank Distillery, standing apart by being triple distilled and entirely unpeated - an unusual combination in Campbeltown that gives a lighter, more refined whisky than its smoky siblings. This 10 year old was distilled in June 2007 and bottled in May 2018, after which a Marsala cask finish added sweetness and body that pairs well with Hazelburn's fresh core character. Only 258 bottles were released for the Danish market via Juuls Vinhandel.

The Brisbane by Adelphi is a 5 year old fusion of Australian and Scotch malt whisky, bottled at cask strength at 57.5% ABV by the independent Scottish bottler Adelphi.
A "fusion whisky" here means that whisky distilled in Australia has been blended with Scotch malt whisky from Glen Garioch and Glen Grant, two prominent Highland and Speyside distilleries, creating a bottling that bridges two whisky worlds on opposite sides of the globe.
Only 925 bottles of this fusion were produced, with no added colouring and no chill filtration, allowing the raw interplay between the Australian and Scotch components to come through in full.
Adelphi Distillery was founded in 1826 by the River Clyde in Glasgow, closed in the early 1900s, but was revived in 1993 as an independent bottler when a grandson of a former owner brought back the name with a philosophy of bottling only the very best casks.

The bottle did not say whisky, and that was deliberate. Scottish law requires three years in cask before the word can be used, and Ardnamurchan had not got there yet. So they called it Spirit and sent it out anyway, so people could follow the distillery from the very beginning.

Ardnamurchan 2017 AD2 Spirit is a Highland Single Malt Spirit from Ardnamurchan Distillery, bottled at 53.6% by Adelphi. It is the distillery’s second annual release of young spirit and may not be called whisky, because it has not spent the three years in cask that Scottish law requires.
Ardnamurchan was built by the independent bottler Adelphi on the remote Ardnamurchan peninsula on Scotland’s west coast. There had never been a legal distillery on the peninsula before the site opened in 2014. The distillery makes two styles, one peated and one unpeated, matured in American and Spanish oak.
The run of Spirit releases spans 2016 to 2019, and AD2 is the second in the sequence. The distillery’s first proper Single Malt Whisky arrived in September 2020. The spirit is neither chill filtered nor coloured.
Tasting Notes
Nose
Young and direct. Fresh malted barley first, then pear, green apple and a clear cereal sweetness. A light peat smoke sits beneath it all along with a clean, almost bready note you only meet in spirit that has not had time to be rounded off.
Palate
Powerful and raw in the good sense. Malt and grain fill the middle of the mouth, while the cask’s vanilla has only just begun to report in. There is a peated undercurrent and a peppery warmth, and at 53.6% the texture is oily and full.
Finish
Medium and dry. Grain, malt and a lightly smoky edge that lets go sooner than an older whisky would.

Nose
Waxy honey and dried apricot sit over a lightly nutty malt. Given time in the glass, a faint soapy, floral note emerges too, typical of older Speyside malts.
Palate
Soft and round, with toffee, lightly toasted almonds and a hint of old oak polish. The 23 years have smoothed every edge, without the whisky losing its cereal core.
Finish
Dry and faintly tannic, with a lingering honeyed note and a distant whisper of spiced wood.

Bottled without chill filtration and with natural colour at cask strength.

As a single cask bottling, the entire release comes from one and the same cask, without being blended with whisky from other casks. That makes every bottle part of a unique, unrepeatable batch, where the cask's full character comes through directly at high strength.
The powerful ABV means the whisky benefits from a few drops of water, which loosens up the layers of spice and fruit that the cask strength otherwise holds tightly together.

Big Peat 25 years Vintage 1992 Gold Edition is an Islay Blended Malt Scotch Whisky bottled at 52.1 % cask strength.
The whiskies were distilled in 1992 and bottled in 2017 in an outturn of 3,000 bottles. The release is neither chill filtered nor coloured and is the first of three in Douglas Laing's Vintage Series.
The Gold Edition opened a trilogy that continued with the Platinum Edition at 26 years and The Black Edition at 27 years. All three come from the same 1992 vintage and are built from some of Islay's most sought after single malts.
Tasting notes
Nose
Complex and nuanced. Smoke meets caramel and vanilla, with dried fruit, sea salt and a light medicinal tone behind.
Palate
Full and oily. Powerful peat smoke up front, balanced by honey and burnt sugar, followed by dark chocolate, leather and spice.
Finish
Long and warm, with peat and sweetness fading slowly. An elegant dryness of oak and nuts closes it.
