The concept is built on a collaboration with farmers on four North Jutland islands, all growing the same variety — Odyssey, a malting barley specially suited for whisky production. The same grain, the same distillery, but four different terroirs that produce measurably different flavour profiles from island to island. The raw spirit is matured in used Jack Daniels bourbon oak casks on Livø before bottling. The whiskies are organic and unpeated. The first release took place on 10 June 2023 at Musikkens Hus in Aalborg, with 50 tasting judges from around the world. Whyte & Mackay 21 år & 12 år Tantalus Set Blended Scotch Whisky 2 x 37,5 cl 40% is a Blended Scotch Whisky and bottled at 40%.
The set combines two iconic expressions from Whyte & Mackay, a 21 year old and a 12 year old, both created using the house's signature double maturation method, where malt and grain whiskies first mature separately before being blended and matured again together in sherry casks. The 21 year old was created by the house's Master Blender Richard Patterson.

Ripe pear, dried apricots and sweet toffee.
