    First fill casks are the ones taking Scotch for the first time after bourbon. The wood is still active and gives vanilla, coconut and a clear sweetness — over eighteen years that becomes a deep, honeyed character without the oak taking over. It is the house signature, sweet honeyed fruit with a long swell, pushed as far as it goes. Deanston has distilled in a converted cotton mill at Doune since 1966.

    Batch 001 is the pair of digits collectors look for first. Signature was the Balvenie attempt at showing what three cask types can do together, and the first batch is the one every later release has been measured against.

    Balvenie Signature 12 Batch 001 is a Single Speyside Malt Whisky matured in 1st fill bourbon casks, refill bourbon casks and sherry casks and bottled at 40 %.

    Signature launched in 2008 as a bottling built on three cask types rather than the usual two. David Stewart selected the casks by hand, and each batch carried its own number. Batch 001 is the first release in the series, which was phased out again a few years later.

    Each cask type plays its own part. First fill bourbon gives vanilla and coconut, the refill casks let the honey character of the spirit come through, and the sherry casks lay raisin and spice on top. Bottling at 40 % keeps the whole thing restrained and coherent.

    Honey, vanilla and pale apple, with a note of coconut and a discreet sherry sweetness behind.

    Palate

    The whisky brings together components from bourbon casks, oloroso sherry casks, Madeira casks, Marsala casks, port pipes and Cabernet Sauvignon casks. When it appeared it was the first single malt built on that many different cask types. The name refers to King Alexander III, who according to legend was saved from a charging stag by an ancestor of Clan Mackenzie — and in gratitude granted the clan the right to carry the animal on its arms. It is the same stag that appears on every Dalmore bottle today.

    The distillery was raised in 1963 on the Ayrshire coast in answer to a trade dispute with the large blending houses of the day, and it has supplied the backbone of the William Grant blends ever since. The Patent Still range was the first serious attempt by the house to sell grain whisky under its own name, and the twenty-five year old opened the series.

    The composition is a marriage of whisky from 1st fill and refill bourbon casks with a smaller share from sherry wood and virgin oak. The bourbon casks carry the creamy vanilla character, while the others lay darker fruit and spice underneath. The 42% is pitched low enough to let the texture do the carrying.

    Fary Lochan 2010/2013 Autumn Batch 01 is a Danish Single Malt Whisky from the autumn 2010 distillation, bottled in 2013 at 48%, 50 cl. It is one of the earliest bottlings from Fary Lochan in Give, Jutland, founded in 2009 by Jeff Callaway. Three years of maturation is at the minimum legal threshold for whisky, but reflects a period when the distillery was experimenting with early releases. Non-chill filtered with natural colour.

    Nose

    Young malt, fresh oak, light floral notes and vanilla.

    Palate

    Malty, lightly fruity, fresh oak and a young spirit note.

    Finish

    Short to medium, fresh and light with a mild oak dryness.

    Seventeen years is an awkward number for a whisky. It was chosen because the casks were ready — not because anyone thought it looked good on a label.

    Deanston 17 years Old Version is a Highland Single Malt Scotch Whisky bottled at 40%.

    The release predates Deanston moving its core range to 46.3% without chill filtration and without added colouring. Seventeen years in cask is uncommon even today, and when this was bottled it was among the house's oldest releases. Deanston has distilled since the mid-1960s in a converted cotton mill by the River Teith, and the long maturations show a different side from the core range.

    Tasting notes

    Nose

    Mature and restrained. Honey, dried apple and malt, with vanilla, nuts and a dusty note from the years in glass.

    Palate

    Soft and round. Malt, honey and candied fruit, with a warm spiced middle. At 40% it is light, but the seventeen years have given a depth the strength cannot hide.

    Finish

    Medium and dry, with nuts, malt and a mild oak warmth.

    High. The release is discontinued, and Deanston has not had a standing 17 year old in the range since. Older releases from the house keep getting harder to find.

    Did you know?

    Deanston is one of the few Scottish distilleries that uses no peat at all. All the malt is unpeated, and the smoke simply does not exist in the house — which is why long maturation here is about fruit and nuts rather than burning off smoke.
