Sall Whisky presents a truly special Danish whisky, matured in rare Fondillón casks from Alicante, Spain. Fondillón, known as the Wine of Kings, is a wine produced only in very limited quantities. As a result, there are only a handful of these casks in existence – and Sall Whisky is among the very first distilleries in the world to mature whisky in this unique type of wine cask.

The result is a whisky with a character never before seen in Denmark. The deep wine profile from Fondillón merges with Danish malt to create an expression that is both powerful and refined. With an alcohol strength of 55.4% and a limited production of just 340 bottles, this release is aimed at collectors and enthusiasts who want to experience something entirely new in Danish whisky history.

Sall Whisky Founder’s Cask #1 – Kåre marks the beginning of a new annual single cask series from Sall Whisky Distillery, where each of the founders selects one personal cask. This first release is signed by Kåre, hand‑numbered, wax‑sealed and drawn from a former mezcal cask – a maturation that gives the whisky a character rarely seen in Danish whisky.

The whisky is 5½ years old and the oldest release from Sall to date. The mezcal cask adds a fresh, green and lightly mineral profile, where bright malt meets warm notes of agave, lime, honey and vanilla. The aroma opens with pear, citrus and oak, while the palate is soft, light and nuanced with a dry, clear and elegant finish. It is a meeting of north and south, where grain from eastern Jutland and South American cactus create a lively and unexpected whisky experience.

Founder’s Cask #1 is bottled as a single cask in only 294 bottles of 50 cl, presented in a dark green apothecary bottle with original artwork by Milly Mist. A personal, rare and characterful release for collectors and enthusiasts seeking Danish whisky with depth, edge and identity.

TØRV 2.4 is the fourth release in the peated series from Sall Whisky, shaped by the distinctive smoke from elegant peat sourced from the peat guild in Moseby. This particular peat gives the TØRV series its signature character: a soft, aromatic smoke with both sweet and floral nuances.

Sall Whisky TØRV 2.4 is an organic, peated single malt that highlights the distillery’s ability to combine Danish terroir with a pronounced yet refined smoky profile. The whisky is made from barley grown on Sall’s own fields and malted as Pale and Vienna malt. Every bottle can be traced back to the exact field where the grain was harvested, making TØRV a true single farm release with full transparency.

The TØRV series derives its characteristic smoke from peat supplied by the Moseby peat guild. This fine, aromatic peat creates a gentle, floral smoke that stands apart from the heavier maritime Islay style. The smoke supports the whisky without overshadowing its natural sweetness and grain character.

TØRV 2.4 is matured in a combination of bourbon, oloroso and Pedro Ximénez casks, creating a layered and complex flavour profile where smoke, sweetness and fruit interact.

The barley comes from the fields Kvolbæk and Gejlund, harvested in 2019, 2020 and 2021, using the varieties Evergreen and Prospect. The whisky is fully organic and bottled at 51.7 percent.

Sall Whisky x Rum Nation Belize 2025 Release Single Malt Danish Whisky 54.1%

Sall Whisky x Rum Nation Belize 2025 Release is a collaboration where Sall Whisky’s grain‑driven, organic style meets the rich, tropical character of Rum Nation’s Belize rum. In the spring of 2025, Mac Y and Sall began a partnership that started with Syv Sind Gin but quickly grew into a shared whisky project. Mac Y offered one of their newly emptied rum casks, and the idea of a rum finish took shape.

The whisky is 3.5 years old and primarily matured in ex‑bourbon casks before being transferred in spring 2025 to an ex‑rum cask that had previously held a juicy, full‑bodied Belize rum for 17 years (rom06606). After just under half a year in the rum cask, the whisky was ready, now carrying a deeper layer of sweetness, fruit and tropical warmth.

It was launched at Mac Y’s 15‑year anniversary Rum & Whisky Festival, where it became the best‑selling malt whisky of the event – a clear sign that the meeting between Sall and Belize struck something special.

Samhain Series – a limited release of six single-cask Scotch whiskies. The series celebrates Scotland’s rich folklore and eerie mythology, coinciding with the ancient Celtic festival of Samhain, the precursor to modern Halloween.

Each whisky in the Samhain Series tells a story through local legends, with atmospheric labels designed by Edinburgh-based artist and designer Steven Shand, who has over 13 years of experience in the Scottish whisky industry. Shand’s intricate artwork and storytelling complement the atmospheric whiskies and capture a haunting essence of Scotland’s past.

Each bottle is sourced from distilleries in the Speyside, Highland, and Lowland regions. As with all Lady of the Glen releases, the Samhain Series is hand-bottled, undiluted at natural cask strength, free of chill-filtration, and retains its natural color, preserving the purity of the whisky.

Lady of the Glen has wanted to collaborate with Steven since they saw his contemporary illustration of Tam O’Shanter at the Fife Whisky Festival. His use of color and detail was both a feast for the eyes and unsettling in a good way. They decided to celebrate Scotland’s Samhain festival by pairing richly illustrated Scottish stories with distilleries from the same regions. For the series, they selected some of their finest 40-liter octaves to highlight a wide range of rich flavors that would stand out just like the stories themselves.
