A bourbon brand that survived Prohibition with its name but not its distillery returns with a more accessible release.

    Expert description

The Wiseman American Kentucky Straight Bourbon Whiskey is an American bourbon from Kentucky Owl, bottled at 45.4%. The Kentucky Owl brand was founded by Charles Mortimer Dedman in 1879 and was among the many Bardstown distilleries shuttered for good by Prohibition. The brand lay dormant until a descendant revived it in 2014, in the middle of the modern bourbon boom, quickly gaining a reputation for one-off, exclusive releases. Kentucky Owl was acquired by Stoli in 2017 and is today one of Bardstown Bourbon Company's contract production customers. The Wiseman launched in 2021 as Kentucky Owl's first regularly available bourbon, created by John Rhea of Four Roses fame, blending Kentucky Owl's own 4-year-old wheated and high-rye bourbons with sourced bourbons aged 5.5 and 8.5 years.

    Item no.: 22278333-7412

One day there was no Thornæs 1st Release. Then there was. That is how it feels with the first bottles from a new distillery – and Thornæs Distillery in North Zealand's 1st Release is exactly that: the beginning.

    Expert description

Thornæs 1st Release is an organic Danish Single Malt Whisky bottled at 50.9% from Thornæs Distillery in North Zealand. It is the distillery's very first official whisky release – the historic bottle that marks the moment a distillery goes from being new to having a history. Tasting notes

    Nose

Fresh and organic with the clear North Zealand distillate at the centre. Lightly fruity with the imprint of organic grain and early maturation.

    Palate

50.9% gives body and weight. The early maturation is noticeable, but the distillate quality is clear – clean, fruity and with potential for what comes after in the distillery's future releases.

    Investment potential

High. A 1st Release from a distillery is by definition a rare historic bottle – there is no second first release. Thornæs 1st Release is the bottle that marks the start of an organic Danish distillery, and it is no longer in production.

    Did you know?

First releases from new distilleries tend to rise in collector value over time – not necessarily because the whisky is the best bottle the distillery will ever make, but because they represent a unique historic moment. Thornæs 1st Release is the very concrete proof that one day, organic whisky started being distilled in North Zealand.

  • Bottle of Thornæs The 5 Pedros Fad 064 Organic Single Malt Danish Whisky
    Item no.: 0595566-79999

Five PX casks. Five stories. Fad 064 is its own – and no cask's version is identical to another's. Thornæs Distillery from North Zealand reveals that Pedro Ximenez never says the same thing twice.

    Expert description

Thornæs The 5 Pedros Fad 064 is an organic Danish Single Malt Whisky bottled at 50% from Thornæs Distillery in North Zealand. The whisky is part of The 5 Pedros series – five individual Pedro Ximenez sherry casks bottled separately to showcase the difference from cask to cask within the same cask type. Fad 064 carries its individual PX character: the intense sweetness of raisins and dark fruit combined with the freshness of the organic North Zealand distillate. Bottled without dilution at 50%.

    Tasting notes

    Nose

PX sherry's typical raisin and dark chocolate notes with a fresh underpinning from the organic distillate. Slightly different from Fad 066 – the sister cask.

    Palate

Rich and fruity PX sweetness at 50% with figs and dried fruit. The single cask quality gives it a unique personality that belongs only to this cask.

    Finish

Long and dark with dried fruit and a persistent, deep PX chocolate close.

    Investment potential

Medium. Single cask from a small Danish distillery in limited quantity – and Fad 064 only exists in this cask's volume.

    Did you know?

The difference between Fad 064 and Fad 066 is not just a number. Even though both are PX casks from The 5 Pedros and meet the same distillate, each cask will have left its own imprint – slightly different colour, slightly different intensity, a subtle difference in fruit nuances. That is the essence of single cask whisky: each cask is an island unto itself.

Five casks. Five Pedro Ximenez. One number on each. Thornæs has chosen to bottle them individually – and Fad 066 is one of the five. An organic Danish single malt at 50% from North Zealand.

    Expert description

Thornæs The 5 Pedros Fad 066 is an organic Danish Single Malt Whisky bottled at 50% from Thornæs Distillery in North Zealand. The whisky is part of The 5 Pedros series – five individual Pedro Ximenez sherry casks bottled separately, so the flavour differences from cask to cask stand clearly. It is bottled without dilution at 50% and comes from Thornæs Distillery's focus on transparency and single cask expressions.

    Tasting notes

    Nose

PX sherry with raisins, dark chocolate and dried fruit. The organic grain base lifts the heavy PX sweetness slightly and gives freshness.

    Palate

Full-bodied PX sweetness at 50% with figs, dark plums and a warm spiciness from the oak and PX cask. The single cask character gives a unique individuality that sets it apart from batched whiskies.

    Did you know?

The 5 Pedros is Thornæs Distillery's investigation of what happens when five identical Pedro Ximenez casks meet the same distillate – but are bottled separately. The idea is to show that even one cask type never delivers exactly the same result twice. Fad 066 is one of these unique stories.

Before the cask. Before the maturation. Thornæs Åro is the pure distillate – what will become whisky when it meets oak. A 20 cl new make at 58% from North Zealand for those who want to understand the starting point.

    Expert description

Thornæs Åro is a Danish Single Malt Raw Spirit bottled at 58% from Thornæs Distillery in North Zealand. It is an unaged new make – the distillate in its purest form before cask maturation. Raw spirit as a category is interesting to taste because it gives a clear picture of what the organic North Zealand malt distillate is made of: grain, water and fermentation. No cask has yet left its mark. The bottle comes in 20 cl – a good format for tasting and for the curious whisky drinker who wants to learn Thornæs from the ground up. The name Åro likely refers to a part of Thornæs Distillery's identity or terroir in North Zealand.

    Tasting notes

    Nose

Fresh and grainy – the organic malt is clear. Sweetish grain notes, perhaps a touch of peach, and a purity that only belongs to unaged new make spirit.

    Palate

58% gives warmth and intensity. Grain and yeast are central – a clear and precise flavour without cask influence. Interesting to taste if you are used to aged whisky, as the contrast is significant.

    Finish

Warm and clear with the organic grain's clean imprint. No cask character, no maturation influence.

Raw spirit – also called new make or white dog – is the very foundation of all whisky. What separates it from whisky is maturation alone. Expert description

Thy Spelt-Rye 2020 is a Danish Spelt Rye Whisky bottled at 50% in a 70 cl bottle. Distilled from certified organic spelt and rye from the 2020 season at Thy Whisky Distillery in Thy. The vintage stamp ties this expression to a specific harvest – and gives the opportunity to compare with other years. A rare chance to experience what spelt and rye from a specific year in northwest Jutland tastes like.

50% is a good balance point: strong enough to show the full complexity of the spelt-rye combination flavour profile, but approachable enough to enjoy without water.

    Tasting notes

    Nose

Spiced and slightly nutty with rye bread, spelt sweetness and light herbs. Earthy and authentic.

    Palate

Beech forest meets north Jutland grain. Thy Whisky Bøg is the distillery's smoky expression – but not with peat. Here it is beech wood shavings from the Jutland forests that provide the character.

    Expert description

Thy Whisky Bøg Core Expressions is a Danish Organic Single Malt Whisky bottled at 50% in a 70 cl bottle. Distilled from certified organic barley, floor-malted in-house and smoked with beech wood shavings – not peat. The result is a distinctly smoky whisky with a soft and natural smoke character that differs markedly from Scottish peated expressions.

Beech smoking is a Nordic tradition rooted in smoke ovens and food preservation. In whisky it gives a milder, rounder smoke than peat – with notes of forest floor and light resin rather than ash and sea air.

    Tasting notes

    Nose

Soft beech smoke with forest floor, honey and light fruit. Very different from classic peated whisky.

In Thy they grow the grain themselves. Malt it themselves. And distil it themselves. Thy Whisky Core Expressions is the result – an organic single malt that says something clear about the place it comes from.

    Expert description

Thy Whisky Core Expressions is a Danish Organic Single Malt Whisky bottled at 48% in a 70 cl bottle. The distillery uses home-grown, certified organic barley from the Thy area and malts it in-house. It is a single estate expression in the true sense – grain, malting, distillation and maturation all take place on or close to the same piece of land in northwest Jutland.

Core Expressions is Thy Whisky's flagship single malt – the clear, unpeated foundation against which all other expressions from the distillery are measured. A good introduction to the northwest Jutland whisky style.

Danish oak. Not Scottish, not American – oak felled in Denmark, shaped into casks and filled with Thy Whisky's own-distilled single malt. That is what makes Thy Whisky Danish Oak special.

    Expert description

Thy Whisky Danish Oak is a Danish Single Malt Whisky bottled at 51% in a 70 cl bottle. Made from certified organic barley grown and malted at the distillery in Thy. Matured exclusively in Danish oak casks – one of the most locally rooted cask choices a Danish distillery can make. Danish oak is dense and resinous compared to European and American oak, and gives the whisky a distinct botanical fullness with notes of wild herbs and dried fruits.

Danish Oak is a bold choice. Danish oak is slower to work with than bourbon casks, and the result is a whisky with more edge and character than most introductory releases from Thy Whisky. A special bottle for those who want something different.

    Tasting notes

    Nose

Dense and aromatic with wild herbs, oak bitterness and dried fruits. A little resin and light spice.

    Palate

Thy Whisky Vesterhav is a Danish Single Malt Whisky bottled at 50% in a 70 cl bottle. Made from certified organic barley grown in Thy and distilled in-house. Vesterhav is named after the North Sea that characterises the coast and climate of northwest Jutland – and reflects the broad, open nature of Thy in its flavour profile.

Vesterhav is not just a name – it is a character. The whisky is shaped by the northwest Jutland climate that gives slow maturation and a purity in the flavour profile that is clearly different from whiskies from more temperate regions.

    Expert description

Thy Whisky Destillat 1 is a Danish New Make bottled at 40% in a 50 cl bottle. A raw spirit – unpeated, unaged distillate of certified organic barley, undiluted from the characteristic copper pot stills at Thy Whisky Distillery in Thy. New make is whisky's starting point: the distillate that is then filled into casks and over time becomes whisky. Tasting Destillat 1 is tasting the foundation for what Thy Whisky then builds upon.

For whisky enthusiasts, new make spirit is a unique window into the distillery's soul. Here there is no cask character, no age – only the pure taste of the distillate, the grain and the distillation process.

    Tasting notes

    Expert description

Thy Whisky Distillery Edition Cask No. 292 is a Danish Organic Single Malt Whisky bottled at cask strength 59.6% in a 50 cl bottle. Distilled from certified organic barley at Thy Whisky Distillery in northwest Jutland and bottled from a single cask – Cask No. 292. Distillery Edition designates the distillery's own line of single cask expressions: specially selected casks, bottled without dilution, without chill filtration and with natural colour.

59.6% is cask strength in the literal sense. It is the whisky as the cask made it. A little water opens it up and reveals a sweetness and depth that can otherwise hide behind the alcohol.

    Tasting notes

Distilled from certified organic barley, malted and smoked with beech wood shavings in-house at Thy Whisky Distillery in northwest Jutland. Imperial. A name that carries history with it. Imperial barley is one of the oldest known malting barleys – and Thy Whisky has used it to distil a single malt that focuses specifically on the grain's identity.

    Expert description

Thy Whisky Heritage Barley Imperial 2019 is a Danish Single Malt Whisky bottled at 56% in a 70 cl bottle. Distilled in 2019 and matured at Thy Whisky Distillery in Thy. Imperial is a historic English malting barley variety with roots going back to the 19th century, which was once dominant in British beer and whisky production. Thy Whisky are pioneers in rediscovering these heritage barley varieties in Danish whisky – a series that includes KORNMOD, STOVT and Maltmod.

56% is a good strength for this type of heritage barley single malt – powerful enough to show the grain's character, but not excessive. A 2019 distillation provides a well-matured foundation.

    Tasting notes

    Nose

Fresh and grain-expressive with honey, light herbs and a richer, more substantial malt dimension than modern malting barley. The Imperial character is clearly present.

    Palate

Full-bodied and grain-rich with sweet malt, light oak influence and a deeper, more substantial grain base than standard barley. Interesting and different.

    Finish

Moderately long with clean malt sweetness and light oak warmth. Solid and satisfying.

    Did you know?

Imperial barley was developed in England in the 1820s and was for a long time the dominant malting barley variety in Britain. With the industrialisation of agriculture it disappeared in favour of higher-yielding but flavourwise more neutral modern varieties. Today Imperial is grown primarily for specialist use – and Thy Whisky is one of the first distilleries in Scandinavia to use it for whisky.
