Danish oak is dense and resinous compared to European and American oak, and gives the whisky a distinct botanical fullness with notes of wild herbs and dried fruits.

Mosgaard Whisky was founded in 2015 by Gitte and Jes Mosgaard on the Danish island of Funen, on a former farm overlooking apple orchards and the Langeland Sound. The distillery works exclusively with organic raw materials, including organic Danish barley from Gyrup Malteri, and won the award for Best Danish Distillery three years running at the Berlin International Spirits Competition (2019-2021). Quarter casks are smaller than standard barrels, giving the whisky greater contact with the wood and driving faster, more intense maturation.

Part 3 puts the focus on French virgin oak, whose tight, spicy oak character stands in clear contrast to the heavy fruit sweetness of Oloroso sherry.

Hunter Laing's The Kinship series is created as a tribute to Islay's distilleries and the traditions that have shaped the island's whisky. Each bottling is selected cask by cask and released in small quantities, focusing on maturity, character and provenance. The Kinship No. 1 is the first in the series — a 27-year-old Bowmore bottled specifically for Feis Ile 2017, the annual whisky festival on Islay. Nose

Complex and aged. Dark fruit, sherry sweetness and dried flowers with a hint of sea breeze and gentle, elegant smoke from Bowmore's characteristic peat.

Taste

Silky and deep. The sherry cask dominates with fig, dried plum and dark chocolate. The peat whispers in the background — present but transformed by 27 years of maturation.

Finish

Very long and luxurious. Dried fruit, warm spice and a delicate coastal smoke that slowly fades. Exceptional length for this age and ABV.

Madeira is wine that has been deliberately heated. The casks carry that treatment with them, and it is a quite different sweetness from sherry — more caramelised, less raisiny. On the bright Glencadam spirit it makes for an unusual combination.

Glencadam Madeira Wine Cask Finish is a Highland Single Malt Scotch Whisky with a finishing period in madeira casks, bottled at 46%.

Madeira is made by heating the wine over an extended period, which gives it a dry, nutty and lightly burnt character. The casks therefore add dried fruit, honey and spice rather than the dark syrup you get from Pedro Ximénez. The whisky is neither chill filtered nor coloured and carries no age statement.

The Glencadam spirit is bright and fruit-driven, and precisely for that reason it takes a cask finish without disappearing. The madeira settles as a layer of rich fruit over the softer core, and the result is rounder than the core release without turning heavy.

Dried fruit and honey, with spice and a lightly burnt sweetness. Behind it the bright Glencadam orchard fruit keeps things fresh.

Palate

Rich and fruity. Dried apricot, honey and nuts, with a soft, round sweetness and a spice that arrives late. The 46% gives the whisky enough body to carry the cask.

Medium and soft. Honey and dried fruit sliding out into a dry, lightly nutty close.

Macallan 12 Year Old Double Cask is a Speyside Single Malt Scotch Whisky matured in sherry seasoned European and American oak casks and bottled at 40%. While the classic Sherry Oak uses only European oak, Double Cask introduces American oak casks seasoned with Oloroso sherry. American oak provides a softer, sweeter profile with more vanilla and coconut, and the result is a lighter, more accessible Macallan than its Sherry Oak sibling.

Double Cask is a good entry point into the Macallan range and a great everyday dram. It does not eclipse its older Sherry Oak sibling, but it is more approachable and has broader appeal.

Glenburgie 2010/2022 Càrn Mòr Strictly Limited 12 Year Old is a Speyside Single Malt Scotch Whisky matured in a Pedro Ximénez sherry hogshead and bottled at 47.5%.

The whisky was distilled in 2010 and bottled in 2022 with an outturn of 1,418 bottles, non-chill filtered and with no added colour. PX sherry is made from sun-dried grapes and is far sweeter than oloroso. The casks give raisin, fig and dark syrup rather than the dry nuttiness oloroso lays in, and on a bright spirit like Glenburgie’s that means a noticeably rounder whisky.

The Glenburgie style is fruity, soft and elegant, with juicy apples, pears and bright malt notes. Càrn Mòr bottlings are known for letting that clean profile through, and here the PX cask gives a balance of sweetness, freshness and lightly spiced depth.

Raisin and fig first, with dark syrup and a warm spice note. Beneath the sweetness sit ripe fruit, vanilla and a trace of citrus.

It is the first small batch expression from Ærø Whisky A/S and marks a different direction from the distillery's single cask series. Ærø Whisky produces exclusively from locally grown barley from the island of Ærø, malted on the distillery's own malt floor and double-distilled in a closed circuit. The distillation dates from 2017, and the whisky is matured in oak casks — a combination of sherry casks and new oak. The small batch method means the contents are vatted from a selection of casks, producing a more consistent and accessible style than the cask strength expressions.

Nose
