    Talisker Port Ruighe is a no-age-statement Isle of Skye Single Malt Scotch Whisky, matured in American and European oak casks and finished in port casks, bottled at 45.8%. The name Port Ruighe refers to the small bay near the distillery and to the historic trade between Scotland and Portugal.

    The port casks soften Talisker's usually sharp, peppery style and add a layer of dark fruit and chocolate, without losing the maritime core. That makes Port Ruighe the sweetest and most approachable release in the distillery's core range.

    Tasting Notes

    Nose

    The nose is softer and sweeter than the classic Talisker style, with sea air, light saltiness and restrained smoke sitting alongside dried red fruit, raisins, stewed cherries and a deep chocolate note from the port casks.

    Palate

    The palate opens with salted caramel and port-driven berries, while salt and pepper keep it recognisably Talisker underneath the rich sweetness.

    Finish

    Cardhu is known as the gentle one. Then came 2021, when Diageo gave the distillery fourteen years, wine casks and 55.5% — and suddenly the gentle one was not gentle at all.

    Expert description

    Cardhu 14 years Special Release 2021 is a Single Malt Scotch Whisky finished in wine casks and bottled at 55.5%.

    The bottle is called The Scarlet Blossoms of Black Rock and belongs to Diageo's annual Special Releases series, where eight distilleries each year show a side of themselves you do not otherwise see. For Cardhu that meant a finish in wine casks, laying dark fruit and a dry, almost tannic edge over the usual house honey. The series is released once and never repeated.

    Tasting notes

    Nose

    Red berries and plum first, then honey and baked apple underneath. The wine cask brings a dry, almost dusty spice, and the strength reads as warmth rather than sharpness.

    Palate

    Powerful and juicy. Cherry, dark chocolate and orange peel, with Cardhu's honeyed sweetness beneath it all. The oak tightens things up in the middle and gives a dry grip the 12 year old simply does not have.

    Finish

    Long and dry, with red berries, cocoa nibs and a spiced warmth that stays put.

    Bimber Apogee XII is a 12 Year Old Pure Malt Whisky, composed of selected single malts from the Highlands and Speyside and finished in ex-bourbon casks that had previously matured Bimber's own spirit, bottled at 46.3% ABV.

    Bimber Distillery sits in the heart of London and was founded in 2015 by whisky enthusiasts with Polish roots – the name "bimber" is Polish slang for homemade moonshine, a nod to the founders' own journey from home experiments to an acclaimed distillery. With the Apogee series, they step outside their own distillate and show a deep understanding of vatting and cask management in the more classic Scottish tradition.

    The name Apogee means "highest point," a tribute to the oldest and most developed malts used in the blend. It's a whisky that bridges two whisky cultures: Scottish heritage and Bimber's own London craft.

    Nose

    Nutmeg and honeycomb meet brown sugar and soft oak, while cooked orchard fruit and a touch of orange blossom honey give the nose a warm, baked character.

    Seven years is young for a Highland malt, and that is exactly why it is interesting. The cask has not taken charge yet, and the raw, oily character of the Ben Nevis spirit still stands and fills the glass on its own.

    Please note: There is rust on the cap of the bottle. It does not affect the contents, but it is worth knowing before you order.

    The expert's description

    Ben Nevis 2013/2021 Signatory Vintage 7 years is a Single Highland Malt Whisky matured in hogsheads, casks no. 414 and 415, and bottled at 46 %.

    The bottling is assembled from two hogsheads that were kept together and drawn as one. That does not make it a single cask, but the outturn is still small, and the two casks were chosen because they pulled in the same direction.

    Signatory Vintage was founded in Edinburgh in 1988 by Andrew Symington and has been based at the Edradour distillery in Pitlochry since 2002. The house is known for bottling young casks where the style of the distillery is still clear, rather than banking on age alone.

    Nose

    Fresh barley, green apple and a lightly oily note. Vanilla and hay sit behind it.

    Palate

    Young and direct with malt, lemon peel and a powerful cereal core. The oak stays discreet and lets the spirit talk.

Four Roses was founded in 1888 by Paul Jones Jr. The story behind the name has it that Jones proposed to a Southern belle who said yes while wearing a corsage of four roses — hence the brand's name. The current distillery in Lawrenceburg, Kentucky, was built in 1910 in an unusual Spanish Mission style and has been on the US National Register of Historic Places since 2000.

    Four Roses is known in the bourbon world for using no fewer than 10 different recipes, combining the house's five yeast strains with two different mash bills. Each yeast strain brings its own character — from spicy and floral to fruity and herbal — giving the distillery an unusually broad flavour palette to blend from.

    Ardmore 2010/2021 Signatory Vintage 11 Years Old is a Highland Single Malt Scotch Whisky matured in bourbon casks 800999 and 801000 and bottled at 46%. It was distilled on 6 May 2010 and bottled on 6 August 2021 in Signatory’s Un-Chillfiltered Collection, giving 480 bottles.

    Vatting two casks rather than bottling them separately is a deliberate choice. You lose the individuality of a single cask but gain a larger, better balanced release where one cask’s quirks get evened out. As long as all the whisky comes from one distillery, the term Single Malt Whisky still applies.

    Here there is no Islay past in the wood and no sherry, only plain bourbon casks. That gives Ardmore’s own peated character and malt sweetness a clear run, and the result is the most straightforward of Signatory’s Ardmore releases in this range.

    Tasting Notes

    Nose

    Vanilla and pale malt first, with dry smoke as a firm undercarriage. There is honey, green apple and a light coconut note from the bourbon wood. Clean and precise with nothing heavy about it.

    Palate

    Malty and soft. Vanilla and baked apple open, then the smoke arrives as a dry earthy note alongside white pepper. At 46% the body is good, and the balance between sweetness and smoke stays even the whole way.

    Finish

    Medium length. Malt, vanilla and a dry ash note that lets go cleanly without bitterness.

    Signatory Vintage from Pitlochry is one of Scotland's most respected independent bottlers. Their Un-Chillfiltered Collection sets the standard: always at least 46% ABV, no chill filtration, no added colouring. This bottling was distilled on 16 September 2010 and matured in two 1st use hogsheads (#804786 and #804792), bottled on 31 May 2021. Exclusively for the Danish market.

    Nose

    Fresh lemon zest and light floral tones combined with creamy vanilla and gently spiced oak. A delicate underlying maltiness.

    Orkney sat under Norse rule for close to 600 years, and the inheritance is still there in the place names, the burial mounds and the way the islanders speak. Highland Park pulled that history forward, put a god's name on the label and let the strength do the talking.

    Highland Park Thor 16 Year Old The Valhalla Collection Single Orkney Malt Scotch Whisky 52.1% is a Single Orkney Malt Scotch Whisky matured for 16 years in oak casks and bottled at 52.1%.

    Thor opened The Valhalla Collection, a set of four releases named after figures from Norse mythology. The god of thunder came first, followed one at a time by Loki, Freya and Odin, and the series has long since closed. The outturn for Thor was 23,000 bottles spread across the world.

    The bottle sits inside a frame of curved wooden staves shaped after the prow of a longship. The packaging is not decoration for its own sake. Kirkwall, the town the distillery stands above, was founded by Norsemen, and Highland Park has built its identity on that connection for decades rather than on the Scottish Highlands its name suggests.

    At 52.1% this sits well above the distillery's core range, and you feel it. The malt stands closer together, the peat smoke takes up more room, and the oak spice steps forward instead of waiting in the background. In return it takes water better than most.

    Tasting notes

    Nose

    Toasted malt and dark honey sit heavy in the glass, with ripe peach and a trace of red berries above them. The peat announces itself as warm spice rather than bonfire.

    Palate

    Powerful, but it does not hit. Caramel and honey arrive first, then ginger, cinnamon and dry oak spice, with an earthy peat smoke running underneath and holding the whole thing together.

    Finish

    Long and slightly dry. The ginger lingers alongside vanilla and oak, and the smoke is the last thing to let go.

    Orkney belonged to the Danish-Norwegian crown until 1468, when Christian I pledged the islands as part of his daughter Margaret's dowry to the Scottish king. The money was never paid, and the islands never went back.

    Kilchoman 2007/2017 Kolding Whiskylaug Private Cask is an Islay Single Malt Scotch Whisky, 10 years old from a single bourbon cask and bottled at 55 %.

    The whisky was distilled on 6 June 2007 and bottled on 25 August 2017 from cask number 130, a bourbon cask allowed to mature for a full ten years. Only 246 bottles exist in total from this specific cask, which was selected exclusively for Kolding Whiskylaug af 1999.

    As a private cask bottling, it represents the best of Kilchoman's traditional, hands-on approach, combined with the extra depth a full decade of maturation brings. The high alcohol strength of 55 % gives the whisky structure and intensity, while it still remains well balanced.

    Powerful peat notes meet dried fruit, sea salt and a hint of spice.

    Palate
