Kentucky Tavern Kentucky Straight Bourbon Whiskey is an American bourbon, bottled at 40%. The trademark was first registered in 1903 by the Glenmore Distillery Company, which itself had roots dating back to 1849 under the name R. Monarch Distillery, before James and Francis P. Thompson took over and renamed it in 1901. Kentucky Tavern quickly became Glenmore's flagship brand and one of the company's best-selling products throughout the 20th century. During Prohibition, Glenmore operated as a concentration warehouse, bottling and distributing medicinal whiskey. In 1992, the Thompson family sold the company to United Distillers, and in 1994 Kentucky Tavern became part of the Barton portfolio. Today the brand is produced by the Sazerac Company at the Barton Distillery in Bardstown, Kentucky.

The whisky was distilled on 29 March 2006 and bottled exactly five years later, on 29 March 2011, from bourbon cask number 03/06. That makes it one of the earliest releases where Kilchoman dared to commit to a fixed 5 year age statement, at a time when the distillery was still known mainly for its young, energetic 3 year old releases.

Pedro Ximénez, or simply PX, is made from sun-dried grapes pressed into a thick, dark and intensely sweet wine. The casks that held it give the whisky a markedly different character to drier sherry styles like Fino or Amontillado — here it's all about deep sweetness, dried fruit and an almost syrupy texture.

Portuguese red wine casks are rare guests in Scotch whisky. Casado 2022 Release is Kilchoman's take on what happens when classic Islay peat gets company from deep, red-wine-tinged fruit out of Iberia.

Kilchoman Casado 2022 Release is an Islay Single Malt Scotch Whisky, matured in a combination of ex-bourbon and Portuguese red wine casks and bottled at 46 %.

The release is the result of carefully selected casks, brought together to create a harmonious flavour experience. Combining ex-bourbon casks with Portuguese red wine oak casks achieves a deep and complex flavour profile, where the red wine's fruit sweetness layers on top of Kilchoman's classic peated character.

The result is a soft, round whisky where notes of peated smoke, caramel, vanilla and dried fruit dance in a different balance to the distillery's more familiar sherry and port-matured releases.

Cognac and Islay peat sounds like an unlikely pairing — until you taste it. Kilchoman sourced casks from a single French cognac house and let them lay a layer of dried fruit and warm spice over their spirit, without the smoke ever losing ground.

Kilchoman Cognac Cask Matured Limited Release is an Islay Single Malt Scotch Whisky, matured in ex-cognac casks and bottled at 50 %.

The casks come from Bossuet Cooperage in France and all originate from the same cognac house — a detail that ensures a consistent, characterful cask influence across the whole release. The 300-litre casks previously held cognac, itself double distilled in copper pot stills and matured for a minimum of two years in French oak, typically Limousin, before being emptied and refilled with new-make Kilchoman spirit.

The result builds on Kilchoman's classic house style — citrus-fresh peat smoke carried on Islay's coastal air — while adding an extra layer of dried fruit, caramel and warm spice from the cognac casks' history. It's a release that shows how much a single cask type can shift a whisky without it losing its identity.

Tasting notes

Nose

Dried apricots and orange peel meet caramel and a hint of freshly brewed coffee, while the peat smoke sits as a calm undercurrent throughout.

Palate

Soft and spiced, with notes of raisin, honey and warm cinnamon that slowly give way to a rising wave of Islay smoke and a touch of dark chocolate.

Fino is the most delicate of all sherry styles — light, dry and almost briny. Letting Kilchoman's raw peat smoke meet that kind of finesse shouldn't work. But it does, because both share the same coastal character.

Kilchoman Fino Sherry Cask Matured Limited Release is an Islay Single Malt Scotch Whisky, matured in ex-Fino Sherry casks and bottled at 50 %.

Fino comes from the Jerez region in southern Spain and is made from Palomino grapes grown in chalky albariza soil. The wine is aged under a layer of yeast called flor, which protects it from oxygen and gives Fino its characteristic dry, yeasty profile. Maturation takes place in American oak using the traditional solera system, typically over 4-7 years.

When Kilchoman matures its spirit in these casks, the whisky draws yeast and dough notes, almonds and a distinct briny profile from the wood — a profile that plays surprisingly well with Islay's own maritime character and peat smoke.

Nose

Fresh yeast and lightly baked dough meet toasted almonds and a clear sea breeze, with the peat smoke sitting as a deep, dark base beneath it all.

Palate

Dry and mineral, with notes of almonds, citrus peel and a light acidity from the Fino casks that slowly gives way to warm smoke and a touch of fresh herbs.
