    Stauning El Clásico 2022 Vermouth Finish is a Danish Rye Whisky finished in vermouth casks and bottled at 45.7% without chill filtration. The expression is part of the Research Series and was made by finishing Stauning's rye whisky in vermouth casks. Vermouth is an aromatised wine with botanical ingredients – herbs, flowers and spices – and the casks add a dry, floral dimension to the rye's natural spiciness.

    El Clásico references the classic encounter – grain meets wine – and the result is a whisky unlike any other in Stauning's range.

    Nose

    Botanical and fresh. Dry herbs, light florals and citrus from the vermouth with the rye's natural spiced grain in the background.

    Palate

    Light and elegant. The rye's spiciness meets botanical notes – anise, citrus and mild herbs – with a dry sweetness and florality from the vermouth.

    Finish

    Medium-long and dry. Botanical traces and lightly spiced rye linger with a pleasant bitterness at the close.

    Twenty-five winters on the slope of Ben Rinnes leave a mark on a spirit. The heavy, meaty distillate the distillery is known for has had time to settle and spread out. This is a bottle that smells of old warehouses and damp oak floors.

    Benrinnes 1996/2022 Signatory 25 years is a Speyside Single Malt Scotch Whisky matured in hogsheads and bottled at 53.2 % cask strength.

    Signatory Vintage filled two hogsheads, cask no. 11712 and 11716, on 28 October 1996 and emptied them again on 18 January 2022. The result was 537 bottles for the Cask Strength Collection, the range where Signatory lets the cask speak without water and without filtration. The whisky is neither chill filtered nor coloured.

    Until 2007 Benrinnes ran an unusual partial triple distillation, and the entire production still passes through worm tubs sunk in cold water outside. That gives a spirit with weight and an almost meaty texture — exactly the kind of body that can carry a quarter of a century in oak without tiring.

    Tasting notes

    Nose

    Old oak, dried apricot and a dry nuttiness reminiscent of walnut shells. Underneath sit honey, a little cinnamon bark and a faint oily note that only comes with age.

    Palate

    Full and warm from the first sip. Malt, dark orange marmalade and caramelised sugar meet a peppery edge from the oak. The 53.2 % pushes, but it is never harsh — a few drops of water open a fruity core of baked apple.

    Finish

    Long and dry with toasted malt, tobacco leaf and a layer of spiced oak that lingers. It ends where many younger whiskies have run out of things to say.

    The cask was filled in 1996 and touched again in 2022. In between, the whisky world went from forgotten to overheated, and Auchroisk got its own name back. The cask simply lay there waiting.

    Auchroisk 1996/2022 Signatory 25 Years Old is a Single Speyside Malt Scotch Whisky matured for 25 years in sherry cask no. 2 and bottled at 48.5%. The cask gave 684 bottles, and the whisky is neither chill filtered nor coloured.

    Twenty-five years in a sherry cask is a long time, and the strength of 48.5% tells its own story: a fair amount has evaporated along the way, and what remains is concentrated. Signatory bottles at cask strength without adjustment, so the figure on the label is what the cask gave.

    Auchroisk was built in 1974 to supply malt for the J&B blend, and the distillery’s bright, citrus-driven style takes on an entirely different expression here. The sherry has had a quarter of a century to lay dark fruit and spice over the top.

    Tasting Notes

    Nose

    Dark and deep. Raisins, fig and orange marmalade first, then walnut, dark chocolate and a dry old oak note. A fine leathery note sits at the bottom.

    Palate

    Full and concentrated. Dried fruit and sherry sweetness open, then nuts, cinnamon and a dry spiced oak arrive. At 48.5% there is good weight without sharpness, and twenty-five years of maturation shows in the texture, which is thick and oily.

    Finish

    Long and dry. Dark fruit, nuts and spiced oak that let go slowly and leave a lightly bitter chocolate note.

    Signatory Vintage was founded in 1988 by brothers Andrew and Brian Symington in Edinburgh and later moved to Pitlochry, where they bought the Edradour distillery in 2002.     Distilled on the same day as its four-year-younger sister, but these casks were left standing. Four extra years in hogsheads sounds like little — in the glass the difference is obvious.

    Dailuaine 1997/2022 Signatory 24 years is a Speyside Single Malt Scotch Whisky matured in two hogsheads and bottled at 47.4% without chill filtration and without added colouring.

    The casks are numbered 7227 and 7235, were filled on 21 May 1997 and emptied on 20 January 2022. The outturn was 369 bottles. The release belongs to Signatory's Cask Strength Collection, where the whisky goes into bottle at the strength the cask delivers. Dailuaine is one of those distilleries where almost the entire production disappears into blends, and twenty-four year old bottlings exist essentially only through independent bottlers.

    Nose

    Ripe apples, pears and quince, with vanilla, malt and a mild spiced oak behind.

    Palate

    Silky with well-integrated alcohol. Sweetness and freshness first, then vanilla, malt and spiced oak, in a balanced and elegant mouthfeel.

    Finish

    Dry and harmonious, with the complexity and maturity stepping forward at the close.

    Twenty-one years in a sherry butt and still almost sixty per cent in the bottle. That only happens when the cask was filled high and the warehouse ran cool, and it says something about how little escaped through the wood along the way.

    BenRiach 2000/2021 Signatory Vintage 21 years Cask Strength Collection is a Single Speyside Malt Whisky matured in a sherry butt, cask no. 6, and bottled at 59.2 % cask strength without chill filtration and without added colour.

    The whisky went into cask on 24 May 2000 and was drawn on 13 August 2021. The cask yielded 685 bottles, which fits a butt of that size, and no water was added. The 59.2 % is the natural strength of the cask after twenty-one years.

    The Cask Strength Collection is the Signatory range for single casks bottled exactly as they come from the warehouse. The series is used for casks the house judges able to carry full strength, and the malted core of BenRiach has the body required.

    Tasting notes

    Nose

    Dark fruit, walnut and orange peel with a deep sherry note. Behind it sit cocoa and old leather.

    Palate

    Very powerful and dense with raisin, fig and spiced oak. The strength bites, but the fruit holds its ground and settles as a layer on top.

    Very long and warm with dark chocolate, nut and a dry, spiced close.

    Twenty-one years in a refill sherry butt does not sound like much on paper. But a used cask works slowly, and when it finally lands, it is the distillery you taste — not the wood.

    Braeval 2000/2021 Signatory Vintage 21 Years is a Single Speyside Malt Scotch Whisky from Refill Sherry Butt #6392, bottled at cask strength, 59.2%, with natural colour.

    The whisky was distilled on 16 February 2000 and bottled on 13 August 2021. The cask gave 592 bottles, which fits a butt of around 500 litres, and the whole run comes from the same day's production at Braeval.

    A refill cask has already given most of its sherry character to an earlier filling. The whisky therefore does not turn dark and heavy but keeps Braeval's light, floral style with a quiet sherry note underneath.

    Nose

    Baked apple and heather with a layer of dried apricot, almond and pale oak.

    Palate

    Concentrated and malty with honey, nuts and a fine fruit acidity. The alcohol is high, but the fruit keeps pace.

    Blair Athol's heavy, nutty spirit is good company for a sherry cask. Thirty-five months is a long finishing period, so the cask has had the chance to reach further into the whisky than a typical six to twelve month finish.

Aber Falls marked the first single malt distilled in North Wales in 120 years. The whisky is made entirely from Welsh barley and water from the nearby Aber Falls waterfall, located within the boundaries of Snowdonia National Park. In 2023, Welsh single malt achieved official Geographical Indication (GI) status, recognising it as a quality product with a distinct style.

    Twenty-five years as a Danish whisky importer deserves more than a speech. Mac Y picked a peated cask from Glasgow that had spent its final months in Ruby Port and marked the anniversary with 482 half bottles. Smoke and red fruit in one glass. There is a reason that cask was chosen.

    1770 Glasgow Mac Y 25th Jubile Release is a Lowland Single Malt Scotch Whisky matured in a 1st fill ex-bourbon cask and finished in a Ruby Port barrique, bottled at 55.3% in 50 cl format. Cask 17/803 was distilled on 12 October 2017 and bottled on 4 November 2021, yielding 482 bottles.

    The spirit is peated, and that matters: Glasgow Distillery only runs peated malt for part of the year, so the volume is limited from the outset. The bourbon cask laid down vanilla and coconut, and the Ruby Port cask stacked red fruit and sweetness on top. That combination gives the whisky its unusual balance of sweet smoke and berries.

    The bottling was created for Mac Y’s 25th anniversary in September 2021, and the whisky is neither chill filtered nor coloured.

    Tasting Notes

    Nose

    Sweet peat smoke first, close to a toasted marshmallow held near a fire pit. Then rich chocolate cake, freshly planed oak and a note of rolling tobacco. Further back sit cracked leather and a hint of preserved cherry.

    Palate

    Rich and smooth. Strawberry and raspberry open, then sponge cake, cocoa and milk chocolate with coffee beans in the background. The smoke lies underneath as a warm floor rather than a point. At 55.3% there is body without hard edges.

    Finish

    Long and layered. Full red fruit, a smoked barbecue note and dried dark fruits that release slowly.

    This bottle sat on the shelf long before Highland Park drew its current look. The label is the old one, the glass has the old shape, and inside sits a malt that went into wood a quarter of a century earlier. The wind off the North Atlantic had plenty of time to do its work.

    Highland Park 25 Year Old Single Orkney Malt Scotch Whisky 48.1% is a Single Orkney Malt Scotch Whisky matured for 25 years in oak casks and bottled without chill filtration at 48.1%.

    This release carries the older bottle design used before the distillery's most recent redesign of the range. Label, bottle shape and typeface belong to a generation many collectors recognise from their own cabinet, and that design is no longer produced. Highland Park's 25 Year Old has also been bottled at several strengths over the years, and this particular edition sits at 48.1%.

    Highland Park distils at Kirkwall on Orkney and has done so since 1798. It is one of the very few Scottish distilleries still turning part of its own malt by hand on its own malting floors, and the house matures mainly in sherry-seasoned oak. That combination is why a Highland Park rarely tastes only of smoke or only of sherry, but of both at once.

    Twenty-five years shifts the balance between the two. The peat smoke loses its edge and turns earthy, the dark sherry fruit moves forward, and the wood hands over tannin and spice at a pace only Orkney's cool climate allows. Liquid disappears every year, and what remains is denser and softer than the younger expressions. Without chill filtration it keeps its full weight on the tongue.

    Toasted malt and dried fruit lead, figs and dates, then orange peel and a hint of old leather. The peat lies deep and quiet underneath and never pushes forward.

    Palate

    Full and rounded. Caramel and dark sherry sweetness open, followed by cocoa, tobacco leaf and dry oak spice. The smoke is warm and settled, more glowing peat than open fire.

    Finish

    Long and soft. The sweetness holds for a good while, and a dry wisp of smoke closes it out alongside a trace of salt.

The whisky matures for 18 years in a combination of Oloroso sherry casks and American oak casks and is today a discontinued release from Glenfiddich's range. The distinctive ceramic bottle makes it as much a collector's item as a whisky to drink.

    Nose

    Toasted almonds, dried apricot and a warm sherry sweetness.

    Palate

    Rich and spiced with caramel, dark chocolate and a deep, round oak.

    Springbank Rundlets & Kilderkins 2001/2012 is a Campbeltown Single Malt Scotch Whisky distilled in November 2001, bottled in January 2012 at 49.4%.

    Rundlets and Kilderkins are small wooden casks with a capacity of around 68 litres, which were historically sold directly to the local gentry of Campbeltown. The small size of the casks ensures more contact between whisky and oak during maturation, accelerating the process so the whisky presents as more mature than its actual age suggests. A total of 9,000 bottles were released of this edition, unfiltered and without added colour.

    Nose

    Bold oak character meets dried fruit and a hint of spice from the accelerated cask contact.

    Palate

    Full and oak-driven with caramel and spiced vanilla, carried by an oily Springbank structure.
