    There was a time when Talisker 10 Year Old came in 100cl bottles carrying an illustrated map of Skye on the label - built for large bars and export markets where a standard 70cl didn't go far enough. This "Map" edition is one of the surviving examples.

    Talisker 10 Year Old Old Version 1 Map is a 100cl Isle of Skye Single Malt Scotch Whisky, matured in American oak casks and bottled at 45.8%. The label dates from an earlier design period, when Talisker used a map motif of Skye on some of its larger bottles.

    The 100cl format was common for bar and export use, but is rarer to come across today, since most Talisker releases are sold in 70cl. The whisky itself is the same classic 10 Year Old, just in an older and larger format.

    Dalmore 1990/2008 Signatory Vintage 17 years is a Highland Single Malt Scotch Whisky matured in a sherry butt and bottled at cask strength of 59.2% without added colouring.

    The cask carries the number 9411, was filled on 11 September 1990 and emptied on 25 March 2008. The outturn was 501 bottles. Dalmore sits at Alness on the shore of the Cromarty Firth and is known for its heavy, sherried house style — which is exactly why a single sherry cask suits the spirit so well. The distillery lets very few casks go on to independent bottlers, making this release unusual.

    Nose

    Deep and dark. Raisin, orange peel and dark chocolate, with walnut, leather and a warm spiced note from the wood.

    Kilchoman 2007/2017 Kolding Whiskylaug is an Islay Single Malt Scotch Whisky, 10 years old from a single bourbon cask and bottled at 55.1 %.

    The whisky was distilled on 16 May 2007 and bottled on 25 August 2017 from cask number 102. Like its companion cask 130, it was selected exclusively for Kolding Whiskylaug af 1999, but this time with only 240 numbered bottles in total.

    The small difference in strength, 55.1 % against cask 130's 55 %, is a small testament to how differently two casks from the same warehouse can develop over ten years of maturation — a reminder of why single cask whisky can never be repeated.

    Ardmore 2010/2021 Islay Cask Finish Wilson & Morgan 10 Years Old is a Highland Single Malt Scotch Whisky matured in American oak and finished in an Islay cask, bottled at 48%. Cask 803511 was distilled on 30 June 2010 and bottled on 16 June 2021 in the Barrel Selection Private Cask range.

    An Islay finish on a whisky that is already peated is a double dose. Ardmore’s own smoke is dry and earthy from inland peat in Aberdeenshire, while the Islay cask lays salt, seaweed and a medicinal edge over the top. The two kinds of smoke come from different landscapes and behave differently in the glass.

    Wilson & Morgan was founded in 1992 and is run by the Venetian Rossi family. Italy has an unusually long tradition of independent whisky bottling, and several of the most respected houses in the trade are Italian.

    Nose

    Smoke in two layers: first the dry ashy one from Ardmore, then a saltier and more medicinal note from the Islay cask. Vanilla, honey and a light toasted malt sit underneath.

    Palate

    Dry and smoky from the first sip. Ash and salt open, then malt sweetness and a touch of citrus that keeps the whisky from becoming one-note. At 48% the body is good, and the smoke holds all the way without turning sharp.

    The whisky was distilled on 16 November 2007 and matured for 13 years across six selected bourbon casks, numbers 382, 383, 384, 386, 387 and 388, before being bottled in May 2021. The relatively high cask strength preserves the bourbon cask's vanilla sweetness in an intense, concentrated form, while Edradour's light, floral core character comes through clearly. 1,290 bottles were released.

    Vanilla and honey, with a hint of green apple and pale oak.

    Spicy and full-bodied with caramel, citrus peel and a fine peppery warmth.

    The cask was filled in May 1992 and emptied again in May 2004 — almost to the day twelve years later. Signatory has a fondness for that kind of precision, and it rubs off on the whisky.

    Clynelish 1992/2004 Signatory Vintage 12 years is a Highland Single Malt Scotch Whisky matured in a hogshead and bottled at 46% without added colouring.

    The cask carries the number 6304 and gave 395 bottles. Signatory Vintage was founded in 1988 by Andrew Symington and is among the most prolific independent bottlers in Scotland; the house also owns Edradour today. A twelve year old Clynelish from bourbon wood shows the distillery's waxy core with little cask interference, and releases from the early 1990s are becoming hard to find.

    Tasting notes

    Nose

    Clean and cool. Lemon peel, green apple and wet stone, with wax and a light saline note behind.

    Palate

    Crisp and malty. Apple, honey, cereal and that oily Clynelish texture, with pepper and a touch of liquorice towards the end.

    Finish

    Medium and dry, with mineral, citrus and a waxy finish that sits around for a long time.
