Scotch Whisky

The first thing people think of when they hear the word Scotland is whiskey, including  Scotch as it is also called. Although Scotland is known for many things other than just whiskey, such as golf, haggis and kilts, it is for good reason that it is precisely the whiskey that, over time, has been dubbed 'Scotch'. The Scots have always been the true pioneers of whiskey making, which many others have tried to emulate, including the Irish, the Americans and even the Danes. However, none of these places has given rise to a similarity between their nation and their whiskeys. Even in Ireland, where one is also very proud of their Irish whiskeys, the impact and marketing effect has been as great as in Scotland.

It is especially because of the very varied nature of the Scottish highland and lowland respectively, as well as a fantastic entrepreneurial spirit that has enabled the Scots to produce such a large and varied selection of whiskey over time.

Generally, Scottish whiskey is divided into three main types: Each whiskey type has its own flavor and aroma, but the most prevalent type of Scotch Whiskey is Malt Whiskey. It is also from here that one has the very well known Single Malt Whiskeys, which is what most associate with Scottish whiskeys.

Find the right whiskey for your Scotch and soda

It's not just the whiskeys that 'Scotch' has become synonymous with. The same goes for drinks, specifically the legendary Scotch and soda cocktail. This cocktail originated in the USA in the 19th century as part of the highball trend imported to the United States by Englishmen.

Scotch and soda basically consists of Scotch whiskey and carbonated water - these can be both Blended Whiskeys, Grain Whiskeys and Single Malt Whiskeys. However, most people here agree that Single Malt Whiskeys are the best for this particular drink. Therefore, if you want an exclusive version of "Scotch and Soda", we highly recommend you use a Glenlivet Scotch or a Macallan Scotch.

How to make the drink:

Pour two parts of Scotch Whiskey into a glass and six parts of carbonated water. That is it! Here you can choose to use ordinary carbonated water or carbonated water with citrus as you prefer.

A "Scotch and Soda" can be a great way to start drinking whiskey, as the carbonated water makes the drink even more fresh, which especially young palates prefer.

    The whisky was distilled in 1989 and bottled in February 2003 after 13 years of maturation, during which the Port Pipes added a deep berry sweetness and a reddish hue to Springbank's already oily, complex style. A total of 3,120 bottles were released of this edition.

    Nose

    Dark forest berries and a hint of port sweetness meet Springbank's signature oily, salty backbone.

    Palate

    Rich and berry-laden with cherry and blackcurrant playing against a lightly spiced, salty edge.

    Springbank is the distillery whisky nerds speak of in hushed tones, located in Campbeltown, the small whisky district that once had over 30 distilleries and today has only three left. Springbank is the only distillery in Scotland that still does everything itself, from floor malting to bottling. With only 1,180 bottles worldwide and a cask makeup of 80% bourbon, 10% sherry and 10% red wine, this is an early part of a series that could well become a lasting, sought-after annual tradition.

    Nose

    Dried pineapple and mango meet ripe melon and honey, with Springbank's earthy, old-fashioned character and a hint of sandalwood underneath.

    Palate

    Caramelised lemon meringue and a creamy texture reminiscent of custard. Mango and pineapple return, this time wrapped in oak and a touch of caramelised popcorn.

    Finish

    Earthy and long, with coconut, fresh basil and a hint of characteristic Scottish heather moor.

    Rundlets and Kilderkins are small wooden casks with a capacity of around 68 litres, which were historically sold directly to the local gentry of Campbeltown. The small size of the casks ensures more contact between whisky and oak during maturation, accelerating the process so the whisky presents as more mature than its actual age suggests. A total of 9,000 bottles were released of this edition, unfiltered and without added colour.

    Nose

    Bold oak character meets dried fruit and a hint of spice from the accelerated cask contact.

    Palate

    Full and oak-driven with caramel and spiced vanilla, carried by an oily Springbank structure.

    There is ice in the air over the Kintyre peninsula, and behind Springbank's walls, time has been allowed to work quietly. This bottle comes from a single cask, filled in October 1999, when no one knew it would end up marking a hundred years of Danish wine trading.

    Springbank 26 Year Old Single Cask Juuls 100th Anniversary is a Campbeltown Single Malt Scotch Whisky distilled in October 1999, matured in a first-fill sherry cask and later a refill bourbon cask, and bottled at natural cask strength, 44.1%.

    The whisky rested for 20 years in the sherry cask before being transferred in 2019 to the refill bourbon cask, where it matured for a further six years. The cask yielded exactly 108 bottles. The release marks the 100th anniversary of Juuls Vin & Spiritus, which has imported Springbank to the Danish market since 1926, and was first presented at an anniversary tasting in January 2026.

    Tasting Notes

    Nose

    Dried figs, raisins and a touch of sherry sweetness mix with salty sea air and a hint of beeswax, with a light smokiness underneath.

    Palate

    Full and lightly oily, with caramelised sugar, dark chocolate and ripe stone fruit. Six years in the bourbon cask has softened the edges and added vanilla and toasted oak.

    Finish

    Long, salty and lightly dry, with a closing hint of spiced ginger and a lingering smokiness.

    The whisky was distilled in October 2013 and bottled after just five years, giving a young and raw take on Staoisha – Bunnahabhain's peated spirit. A. D. Rattray drew it from cask #10537 and bottled it straight from the wood without chill filtration.

    The young age means the peat smoke stands right at the front of the glass, while the bourbon cask has only just begun to add a light sweetness on top.

    Talisker 10 Year Old Old Version 1 Map is a 100cl Isle of Skye Single Malt Scotch Whisky, matured in American oak casks and bottled at 45.8%. The label dates from an earlier design period, when Talisker used a map motif of Skye on some of its larger bottles.

    The 100cl format was common for bar and export use, but is rarer to come across today, since most Talisker releases are sold in 70cl. The whisky itself is the same classic 10 Year Old, just in an older and larger format.

    Nose

    The nose is powerful with smoke, sea salt and citrus, backed by a deep sweetness and a hint of pepper foreshadowing the fullness to come.
