Scotch Whisky

The first thing people think of when they hear the word Scotland is whiskey, including  Scotch as it is also called. Although Scotland is known for many things other than just whiskey, such as golf, haggis and kilts, it is for good reason that it is precisely the whiskey that, over time, has been dubbed 'Scotch'. The Scots have always been the true pioneers of whiskey making, which many others have tried to emulate, including the Irish, the Americans and even the Danes. However, none of these places has given rise to a similarity between their nation and their whiskeys. Even in Ireland, where one is also very proud of their Irish whiskeys, the impact and marketing effect has been as great as in Scotland.

It is especially because of the very varied nature of the Scottish highland and lowland respectively, as well as a fantastic entrepreneurial spirit that has enabled the Scots to produce such a large and varied selection of whiskey over time.

Generally, Scottish whiskey is divided into three main types: Each whiskey type has its own flavor and aroma, but the most prevalent type of Scotch Whiskey is Malt Whiskey. It is also from here that one has the very well known Single Malt Whiskeys, which is what most associate with Scottish whiskeys.

Find the right whiskey for your Scotch and soda

It's not just the whiskeys that 'Scotch' has become synonymous with. The same goes for drinks, specifically the legendary Scotch and soda cocktail. This cocktail originated in the USA in the 19th century as part of the highball trend imported to the United States by Englishmen.

Scotch and soda basically consists of Scotch whiskey and carbonated water - these can be both Blended Whiskeys, Grain Whiskeys and Single Malt Whiskeys. However, most people here agree that Single Malt Whiskeys are the best for this particular drink. Therefore, if you want an exclusive version of "Scotch and Soda", we highly recommend you use a Glenlivet Scotch or a Macallan Scotch.

How to make the drink:

Pour two parts of Scotch Whiskey into a glass and six parts of carbonated water. That is it! Here you can choose to use ordinary carbonated water or carbonated water with citrus as you prefer.

A "Scotch and Soda" can be a great way to start drinking whiskey, as the carbonated water makes the drink even more fresh, which especially young palates prefer.

    Ex-Tennessee casks are a rare sight in a Scottish warehouse. Evolution is built on them alone, which makes it one of the more unusual bottlings from the north coast.

    Glenglassaugh Evolution is a Single Highland Malt Scotch Whisky matured in first fill ex-Tennessee casks and bottled at 50%.

    The whisky carries no age statement. It is non-chill filtered and of natural colour, and the 50% is chosen to hold the cask spice and the sweetness of the malt up at the same time.

    The casks are hand-picked, and because they are first fill a lot of wood comes through. The result is a drier and more peppery whisky than the sherried part of the range.

    Nose

    Sweet barley, pineapple and soft buttery vanilla. Deeper oak spice and caramelised pear develop after a while.

    Palate

    Robust, with white pepper and oak running through crisp green apple and freshly cracked barley. A gentle salted caramel emerges alongside ripe banana.

    Finish

    Vibrant, with classic oak spices and soft fruits wrapped in vanilla.

    Hazelburn 10 Year Old Marsala Cask Denmark is a Campbeltown Single Malt Scotch Whisky distilled at Springbank, finished in Marsala casks and bottled at 58.8%.

    Hazelburn is one of the three styles produced at Springbank Distillery, standing apart by being triple distilled and entirely unpeated - an unusual combination in Campbeltown that gives a lighter, more refined whisky than its smoky siblings. This 10 year old was distilled in June 2007 and bottled in May 2018, after which a Marsala cask finish added sweetness and body that pairs well with Hazelburn's fresh core character. Only 258 bottles were released for the Danish market via Juuls Vinhandel.

    Light caramel and strawberry jam meet almost overripe citrus, patisserie pastry and a touch of vanilla.

    The Brisbane by Adelphi is a 5 year old fusion of Australian and Scotch malt whisky, bottled at cask strength at 57.5% ABV by the independent Scottish bottler Adelphi.

    A "fusion whisky" here means that whisky distilled in Australia has been blended with Scotch malt whisky from Glen Garioch and Glen Grant, two prominent Highland and Speyside distilleries, creating a bottling that bridges two whisky worlds on opposite sides of the globe.

    Only 925 bottles of this fusion were produced, with no added colouring and no chill filtration, allowing the raw interplay between the Australian and Scotch components to come through in full.

    Adelphi Distillery was founded in 1826 by the River Clyde in Glasgow, closed in the early 1900s, but was revived in 1993 as an independent bottler when a grandson of a former owner brought back the name with a philosophy of bottling only the very best casks.

    The bottle did not say whisky, and that was deliberate. Scottish law requires three years in cask before the word can be used, and Ardnamurchan had not got there yet. So they called it Spirit and sent it out anyway, so people could follow the distillery from the very beginning.

    The Expert's Description

    Ardnamurchan 2017 AD2 Spirit is a Highland Single Malt Spirit from Ardnamurchan Distillery, bottled at 53.6% by Adelphi. It is the distillery’s second annual release of young spirit and may not be called whisky, because it has not spent the three years in cask that Scottish law requires.

    Ardnamurchan was built by the independent bottler Adelphi on the remote Ardnamurchan peninsula on Scotland’s west coast. There had never been a legal distillery on the peninsula before the site opened in 2014. The distillery makes two styles, one peated and one unpeated, matured in American and Spanish oak.

    The run of Spirit releases spans 2016 to 2019, and AD2 is the second in the sequence. The distillery’s first proper Single Malt Whisky arrived in September 2020. The spirit is neither chill filtered nor coloured.

    Tasting Notes

    Nose

    Young and direct. Fresh malted barley first, then pear, green apple and a clear cereal sweetness. A light peat smoke sits beneath it all along with a clean, almost bready note you only meet in spirit that has not had time to be rounded off.

    Palate

    Powerful and raw in the good sense. Malt and grain fill the middle of the mouth, while the cask’s vanilla has only just begun to report in. There is a peated undercurrent and a peppery warmth, and at 53.6% the texture is oily and full.

    Finish

    Medium and dry. Grain, malt and a lightly smoky edge that lets go sooner than an older whisky would.

    The distillery sits on the Highland boundary itself. The pot stills stand in the Highlands while the casks mature across the road in the Lowlands — same address, two regions.

    The expert's description

    Glengoyne 12 Year is a Single Highland Malt Scotch Whisky matured in a combination of first fill bourbon and sherry casks along with refill casks, bottled at 43%.

    Around forty percent of the casks are first fill and the rest are refill. That balance gives the whisky more weight than the ten year old without making it heavy, and the 43% gives it a little more body in the glass.

    The malt is unpeated like the rest of the range. Without smoke it is citrus peel, coconut and sherry that carry the flavour, making this one of the more fruity twelve year olds from the Highlands.

    Tasting notes

    Nose

    Lemon zest, coconut and shortbread with toffee apple. Sherry, ginger and vanilla behind it.

    Palate

    Round and malty with dried fruit, nuts and soft oak. The sherry is clear but does not lie over everything.

    Finish

    Medium length and lightly spiced with nuts, malt and a dry oak note.
