    264 bottles. That is everything that came out of thirty-two years in a single bourbon cask. Evaporation took the rest, and what remains is concentrated in a way young whiskies cannot imitate.

    Cambus 1991/2024 Coopers Choice 32 Years is a Lowland Single Grain Scotch Whisky from Bourbon Cask #79880, bottled at 47.5% without chill filtration and without added colour.

    The whisky was distilled in September 1991 at the now closed Cambus distillery and bottled in January 2024 as part of the Cooper's Choice series from The Vintage Malt Whisky Company. The cask gave 264 bottles.

    After thirty-two years the strength sits at 47.5%, which tells you the cask lost some power along the way. That is typical of very long maturation in a quiet warehouse and gives a softer whisky than bottlings still above 50%.

    Tasting notes

    Nose

    Vanilla custard and coconut macaroon with ripe banana and a trace of pale oak.

    Palate

    Very soft and creamy with fudge, honey and white chocolate. The age reads as texture rather than as wood.

    Finish

    Long, soft and sweet with vanilla, grain and a fine, dry close.

    This expression was distilled at Tamnavulin in 2009 and bottled in 2024, having first matured in American oak casks before finishing in a single Malaga wine cask, Cask No. 0772. Malaga is a sweet, sun-ripened Spanish dessert wine, and the cask lends the whisky a distinctive winey sweetness and depth not found in the distillery's standard core range.

    The Antiquary 21 Year Old Port Cask is a blended Scotch whisky matured for at least 21 years and then married in Port Casks, casks that previously held tawny Port wine, before bottling at 40% ABV.

    The Port casks come from the Symington family's estates in Portugal, and the whisky has been allowed to rest in them for up to three years after its long base maturation, giving it a markedly deeper and sweeter profile than the house's standard 21 year old.

    The Antiquary was founded by the Hardie brothers in Edinburgh and is now owned by Tomatin Distillery Co, which relaunched the brand in 2024 with a new trio of blends, of which this Port Cask expression is one.

    Twenty-three years is a long time for a grain whisky. Long enough that the cereal stops tasting of cereal and starts tasting of a bakery, and just short enough that the cask has not taken over.

    Dumbarton 23 Years Old Dram Mor is a Lowland Single Grain Scotch Whisky matured in a refill bourbon barrel and bottled at cask strength 57.1%.

    Dumbarton on the river Clyde closed in 2002 and was later demolished. The distillery supplied grain whisky to some of the largest blends in Scotland, and only rarely did any of it appear in its own right. With every year that passes, the remaining casks grow fewer.

    Dram Mor selected cask number 211885, a refill bourbon barrel that still stood at 57.1% after twenty-three years. The whisky is bottled without chill filtration and without added colour, and the cask gave 182 bottles. The name Dram Mor means big dram in Gaelic.

    Nose

    Creamy vanilla with a hint of cherry tart and sweet, buttery shortcrust pastry.

    Palate

    Sweet and buttery with a surprisingly three-dimensional depth for a single grain. Delicate spices tie it together and keep the sweetness in place.

    Warming and more robust than you might expect, in the best possible way, closing with oak and dried fruit.

    Eight years might not sound like much in whisky terms, but in a first-fill cask the wood works fast. The result is a dram that tastes older than its age – dark, spicy and with a richness usually associated with far more mature releases.

    One cask. Not a selection, not a marriage of many, but a single hogshead filled in 2006 and emptied again eighteen years later. Kenny and Viktorija Macdonald bottled it exactly as it stood: no filtration, no colouring, no water. What is in the bottle is what was in the wood.

    Highland Park 18 Year Old Dràm Mòr Single Malt Scotch Whisky 57.1% is a Single Malt Scotch Whisky drawn from one hogshead and bottled without chill filtration at cask strength of 57.1%.

    Dràm Mòr is a small Scottish bottling house in Dumbarton, started in 2019 by husband and wife Kenny and Viktorija Macdonald. They began as an export agency for Scotch before buying casks of their own, and the company now ships its bottlings to 14 countries. Every cask is tasted and picked individually, and everything goes out at full strength with natural colour.

    The spirit went into wood in 2006 and was bottled in 2024 after 18 years in hogshead no. 3535. A hogshead holds roughly 250 litres and is built from the staves of American bourbon barrels, rebuilt with an extra stave and fresh ends. It is larger than the barrel it came from, so the ratio of liquid to wood is lower. Maturation runs slower, and the distillery character stays in place instead of being overrun by oak. The cask gave 292 bottles.

    Cask strength here means no water was added after maturation. The 57.1% carries the oils and heavy aroma compounds that dilution would otherwise push into the background, and without chill filtration the texture stays thick and faintly waxy. In return the whisky wants a few minutes in the glass before it opens up.

    Tasting notes

    Nose

    Salt seaweed and dry straw meet honey and dried heather. Behind them sits a thin veil of smoke, closer to cool ash than open fire, and a twist of lemon peel.

    Palate

    Powerful and oily. Citrus and lemon sorbet cut through first, then roasted pears and a clear note of white pepper. The smoke settles lightly on top and keeps the sweetness in check.

    Finish

    Long and warm. The pepper hangs on, and at the end Highland Park's peat unfolds and rounds everything off with a dry, earthy tone.

Imperial is a historic English malting barley variety with roots going back to the 19th century, which was once dominant in British beer and whisky production. Thy Whisky are pioneers in rediscovering these heritage barley varieties in Danish whisky – a series that includes KORNMOD, STOVT and Maltmod.

    56% is a good strength for this type of heritage barley single malt – powerful enough to show the grain's character, but not excessive. A 2019 distillation provides a well-matured foundation.

    Arran 2006/2024 Single Cask Denmark 18 Year Old is a Single Islands Malt Scotch Whisky matured in a refill Oloroso hogshead and bottled at 53.6%.

    Because the cask had already given up most of its initial power to an earlier fill, it draws more gently on the whisky this time — the result is a subtler, but still clear, sherry character layered over Arran's own fruit sweetness. Distilled in April 2006 and bottled in July 2024 after 18 years in wood, the whisky is bottled at cask strength, non-chill filtered and with natural colour. Only 244 bottles exist, all reserved for Denmark.

    Nose

    Sultana raisin, spiced cake and dark chocolate, tied together by a gentle sweetness from the cask.

    Palate

    Deep and beguiling with ripe plum, caramelised sugar and a fine spiced warmth.

    Finish

    Medium in length, soft and lightly dry, closing on a final trace of oak.

    Benrinnes Special Release 2024 Grand Crescendo 21 years is a Speyside Single Malt Scotch Whisky matured in refill casks and wine casks and bottled at 55.4 % cask strength.

    The whisky first rested for eight years in refill casks and then spent thirteen years in a second maturation in American and European oak wine casks and rejuvenated casks with freshly charred ends. That is an unusually long second phase, and it explains the depth of the whisky.

    Grand Crescendo is one of eight bottlings in Diageo's Special Releases 2024. Each year the range gathers single malts from the group's distilleries in unconventional cask combinations, released in limited numbers and in that one year only.

    Tasting notes

    Nose

    Ripe dark fruit, stewed pear and caramelised apple. Beneath the fruit sit sweet spices, vanilla and a hint of cinnamon and dried fig.

    Palate

    Powerful and complex with dark chocolate, candied citrus and a lightly smoky edge from the freshly charred cask ends. The 55.4 % brings intensity, but the balance holds.

    Finish

    Long and elegant with spice, sweetness and a dry oak edge that lingers.
