    Letting a distillate mature alone in a single PX-seasoned puncheon, rather than blending it with sibling casks, lets the sherry's dense sweetness work its way fully into the malt. A puncheon is larger than a standard sherry butt, giving the spirit a slower, more even contact with the wood — often producing a deeper, rounder sweetness than smaller casks allow.

    Batch 5 is the fifth chapter in GlenAllachie's ongoing series of 21 year old cask strength releases, where the distillery's cask custodian Billy Walker selects casks that have reached a rare balance of age and intensity. Puncheons and hogsheads of both Oloroso and PX sherry give the whisky its deep, dark character.

    The 21 years in cask have given the whisky time to absorb the full spectrum of sherry — from dry nuttiness to the sweet, jammy character PX casks are known for. The long maturation is balanced by the high strength, which keeps the flavours sharp and distinct.

    The whisky was bottled in 2023 as the fifth batch in the series, and as with earlier batches, the run is limited to whatever the selected casks could provide.

    Nose

    Mature and aged with a complexity that takes time to unfold. Dark fruit, oak and a layer of warm vanilla and dry nougat. A wistfully soft character.

    Deep and full-bodied with 12 years of cask and malt integration. Ripe fruit nuances – plums, dried figs – with an elegant dry oak spiciness. It moves slowly and deliberately across the palate.

    Finish

    Long and meditative with lingering dark fruit, warm oak and a discreet bitter note in the very tail of the close.

    The whisky comes from bourbon cask number 2015/956, distilled on 1 December 2015 and bottled on 4 December 2023 — exactly eight years later. Because it comes from a single cask alone, every bottle is part of an irreversibly limited selection: only 255 bottles exist in total, bottled exclusively for Denmark.

    With no water added and at full cask strength, this single cask shows Kilchoman's character completely unfiltered — intense, powerful and carrying a distinct signature from the individual cask that no other bottling can replicate.

    Nose

    Fresh vanilla and citrus peel meet a powerful, almost crisp peat smoke, with a hint of green apple and freshly cut wood.

    This 175 cl bottle is an older label edition of Jim Beam White Label Sour Mash Kentucky Straight Bourbon Whiskey, bottled at 40%. The Jim Beam distillery in Clermont, Kentucky, dates back to 1795, when Jacob Beam sold his first barrel of bourbon under the name "Old Jake Beam". The family has made bourbon in Kentucky for over 200 years and seven generations, and the brand took its current name in 1943 in honour of James Beauregard "Jim" Beam, who rebuilt the distillery in 120 days after Prohibition ended. The recipe is built on the Beam family's traditional mash of corn, rye and malted barley, a blend the family says has stayed largely unchanged across all seven generations.

    The bottle is of interest to collectors of older Jim Beam packaging, since the recipe follows the classic White Label style.
