Fary Lochan 12 Year XII - Bourbon 2011/2023 Batch 01 is a Danish Single Malt Whisky matured in 1st fill bourbon barrels and bottled at 52.2% Vol. Distilled on 12 March 2011 and bottled on 9 October 2023, this release represents twelve years of Danish whisky history from one of the country's pioneer distilleries.
Fary Lochan Distillery was founded in 2009 in the village of Farre near Silkeborg and is widely regarded as one of Denmark's first dedicated Single Malt craft distilleries. The XII series focuses on extended cask maturation — this Batch 01 was drawn from 1st fill bourbon barrels and released in a strictly limited edition of just 322 bottles. No chill filtration, no colouring added.
Tasting notes
Nose
Clear vanilla and buttery caramel from the bourbon barrel, with ripe apple and honey biscuit. A subtle floral note and a gentle hint of beeswax in the background.
Palate
Creamy and rounded. Vanilla and baked apple lead, followed by lightly spiced oak and dried citrus peel. 52.2% brings good body without overwhelming the subtleties.
Finish
Medium-long and warm with oak sweetness and a gently dry edge. Vanilla and citrus linger on the palate.

Fary Lochan is one of the very few distilleries in the world to smoke malt using dried stinging nettles rather than peat — giving a gentle, herbal character quite unlike the Scottish style. The XII Bourbon release carries none of that nettle smoke, instead showcasing pure, slow bourbon cask maturation: two very different sides of the same distillery.
