    An old warehouse in Ballindalloch, steam from short flat-topped pot stills and water from the Craggan Burn. This is Speyside as it was once bottled — in the big litre bottle with the yellow band.

    Cragganmore 12 years Old Version is a Speyside Single Malt Scotch Whisky matured in ex-bourbon casks and bottled at 40% in a litre bottle.

    The release dates from the 1990s, when Cragganmore was still sold in the discontinued litre measure with a yellow duty band — a design collectors know and look for. The distillery was founded in 1869 by John Smith, who sited it close to the Strathspey railway, locally known as The Whisky Line. Cragganmore still uses worm tub condensers, which almost nobody else does, and that is a large part of the reason for the heavy, complex house style.

    Tasting notes

    Nose

    Sweet heather and meadow flowers first, then honey, vanilla and a dry nutty cereal note from the years in glass.

    Palate

    Soft and finely woven. Malt, honey, sandalwood and a touch of sweet wood smoke, carried by a lightly oily texture the modern bottlings do not quite reach.

    Finish

    Long and malty with sweet hints, dried herbs and a faint smoked warmth at the end.

    The 43% may look low for a twenty-five year old, but it is a deliberate choice. After that many years in sherry casks the whisky is already concentrated, and a higher strength would make it hard rather than elegant. The balance between the sherry and the alcohol is the whole point of this bottling.

    Glenfarclas can offer a continuous ladder from ten to forty years, which few family-owned distilleries can. It is because several generations have held back from selling the old casks off — something that requires being able to do without the income in the short term.

    Nose

    Delicate sweet smoke, orange marmalade and honey, with freshly ground coffee, sherry and nuts over a base of aged wood.

All production still happens on the same site, where the whiskey is filtered drop by drop through nearly 3 metres of sugar maple charcoal before going into new, charred oak barrels — the Lincoln County Process that defines Tennessee Whiskey.

    The core of the recipe is a mash of corn, rye and malted barley, fermented, distilled and then filtered through the charcoal before resting in new, charred oak barrels. The result is the smoothness and round sweetness the brand is known for worldwide.

    Ardmore Traditional Cask is a Highland Single Malt Scotch Whisky matured in traditional oak casks and finished in Quarter Casks, bottled at 46%. It is the distillery’s own release and one of the few official Ardmore bottles on the market.

    Ardmore is one of the few Highland distilleries where peat smoke is the core style rather than a side project. The smoke comes from peat burned during the malting of the barley, and because the peat is from inland Aberdeenshire it reads dry and earthy rather than maritime.

    The finish in small hand-made quarter casks adds depth and a softness that large casks cannot deliver in the same time. The whisky is bottled at 46% and without chill filtration, which preserves body and mouthfeel.

    The blend was created in Perth in 1896 by Matthew Gloag, who named it after the red grouse. The bird became the company mark, the whisky was known locally as Gloag’s Grouse, and when the family incorporated Matthew Gloag & Son in 1905 they made the nickname official: The Famous Grouse. The brand left the family in 1970 and has been owned by William Grant & Sons since July 2025.

    The style has not moved much. Malt whisky from Scottish distilleries, with Highland Park historically among those giving the blend its character, is bound together with grain whisky into a soft and rounded blend with no sharp edges. The litre bottle holds the same whisky as the standard size and speaks to those who go through it steadily.

    anCnoc 12 Years Old is a Highland Single Malt Scotch Whisky bottled at 40% from the Knockdhu distillery in Banffshire. It is the house core expression and the best place to meet the spirit: bright, floral and with a light waxy texture that is the distillery’s clearest signature.

    Knockdhu works with a clean, pale spirit, and that puts demands on the casks. Let them get too active and the house style disappears. The 12 year old is therefore built to keep the distillate up front, with the wood as a frame rather than a lead role. The result is often described as a dessert malt, sweet without turning syrupy.

    The distillery was built in 1894 by John Morrison near Knock Hill, where barley, spring water and peat were all within reach. It closed in 1983, was taken over by Inver House Distillers in 1988, and since 1993 the whisky has been sold under the anCnoc name.

    Tasting Notes

    Nose

    Soft and aromatic. Honey and lemon set the tone, with pale flowers and a touch of green apple behind. A fine malty floor runs underneath it all, close to white bread.

    Palate

    Nikka Miyagikyo 10 Year is a Single Malt Japanese Whisky, bottled at 45%.

    Miyagikyo Distillery was founded in 1969 by Masataka Taketsuru as Nikka's second distillery, this time with a milder, more floral purpose than the peated Yoichi. Its location by the Nikkawa and Hirose rivers gives it a humid microclimate that encourages a softer maturation.
