Rum is made from cane sugar and water. This mixture is fermented to form a liquid containing 8-10% alcohol. It is then distilled to an alcohol percentage of up to 90% and then stored on oak barrels. Once the rum has been stored, it is diluted to 40-43% alcohol and filled into bottles.

East London Liquor Company was founded in 2014 by drinks veteran Alex Wolpert and is based in a former glue factory complex at Bow Wharf, London.

The company was founded in 2014 and was the first distillery in the East End for over 100 years, built on the idea of "decent booze, for a decent price, from decent people".

    Velier, the man behind some of the rum world's most legendary bottlings, turned his attention to Haiti, and the result was a rum aged in casks from the iconic, now-closed Caroni distillery.

    Providence Haiti Pure Single Rum 2019 is a Haiti Rum, distilled from sugar cane juice and sugar cane syrup on a copper Müller pot still with a bain-marie water bath and aged 3 years, bottled at 52%.

    The rum is bottled by Velier in collaboration with Providence, the small distillery in Port-au-Prince, and matured in casks from the legendary, now-closed Caroni distillery in Trinidad. The distillation process with a bain-marie water bath produces an unusually pure and crystal-clear distillate character, allowing the sugar cane juice's pure expression to take centre stage.

    The result is a complex, aromatic rum that develops from fresh, tropical tones to a deeper, more oriental spiced finish.

    Colombia is rarely associated with rum in our part of the world - but behind the clear colour lies 100 months of maturation and a story stretching back to the 1700s.

    Dictador Claro (Old Version) is a Colombian rum from the Destilería Colombiana distillery in Cartagena de Indias, aged 100 months and bottled at 40% ABV.

    The rum is distilled from a blend of molasses and sugar cane, which is fermented and then distilled in stainless steel columns before being aged for 100 months in ex-bourbon oak barrels. Finally, the rum is filtered for colour without losing the character built up during ageing - the result is a full-bodied rum that nonetheless appears clear in the bottle. Destilería Colombiana was founded in 1913 by Don Julio Arango y Parra, and the name Dictador stems from the ancestor Severo de Arango y Ferro, who arrived in Cartagena de Indias in 1751 and was nicknamed "Dictador" due to his power and influence in the region.

    Smag

    The nose offers walnut and leather with touches of fresh lemon and whipped cream, while the barrel ageing contributes smoked caramel, sandalwood, ripe banana and orange peel. On the palate, waxy orange, ripe apple, sugared almond and brandied cherry appear, while the finish offers peanut brittle, cinnamon and brown sugar. Despite the clear colour, the rum is full-bodied and complex, with a sweetness that never becomes overwhelming.

    Rum Nation Miniature Gift Set Single Domaine Rum is a set of four Rums from Peru, Panama, Guyana and Guatemala, aged in Ex-Bourbon casks and bottled between 40% and 42%.

    The box gathers four bottlings from Rum Nation's Limited Edition series: Peruano 8 Years at 42%, Panama 10 Years at 40%, Demerara Solera No 14 at 40% and Guatemala Gran Reserva at 40%. All four are made from molasses, and all four are what Rum Nation calls Single Domaine - rum from one place rather than a blend across countries.

    Peruano 8 Years has spent eight years in Ex-Bourbon casks and is the most lively of the four. Panama 10 Years is column distilled and carries ten years in Ex-Bourbon casks. Guatemala Gran Reserva is aged by the solera principle in Ex-Bourbon casks in the highlands around Río Hondo. Demerara Solera No 14 is the darkest: distillates from both pot still and column in Guyana, mainly aged in Ex-Bourbon casks and then finished for around twelve months in Oloroso and Pedro Ximénez Sherry casks. It is the one that pulls the set in a heavier direction.

    Rum Nation was founded in 1999 by the Italian oenologist Fabio Rossi under the family firm Rossi & Rossi in Treviso. The idea arose when he came across old casks from Guyana and Jamaica in a Scottish whisky warehouse. In November 2018 Danish Mac Y Group A/S bought the brand, which has since been called Rum Nation International A/S. Rossi & Rossi still produces, and Fabio Rossi remains involved as an advisor.

    Tasting Notes

    Nose

    The set spans wide. Peruano opens soft with hay, peach and a hint of mocha. Panama is lighter and sweeter, with acacia honey and sun-dried raisins. Guatemala gives vanilla, orange peel and caramel. Demerara is the estery counterweight with fermented fruit, cola and bergamot.

    Palate

    Peruano has the most drive: caramel, vanilla, dried fruit and a touch of smoke. Panama is light-bodied but softly fatty, with milk chocolate and a hint of apricot. Guatemala wraps around the palate with vanilla, mild spices and lightly salted caramel. Demerara goes the other way and gives molasses, dark chocolate, coffee and a roasted bitterness with black tea.

    Finish

    Peruano turns warm and spiced with oak and chocolate. Panama finishes clean and calm without tiring the palate. Guatemala ends roasted and sweet. Demerara lasts longest and swings between herbal bitterness and syrup, almost like vermouth.

    The rum is selected and bottled by the Italian bottling house Rum Nation and is a skilled blend of different vintages from both pot still, which gives richness, and column distillation, which contributes a lighter, crisper foundation. The main ageing takes place in ex-bourbon casks for a creamy sweetness, after which the blend is finished for 12 months in fresh sherry butts, both Pedro Ximénez and Oloroso, which reinforces the spiced character. A small proportion of very old Enmore rum is added at the end for further complexity and dark character.

    The result is a smooth, aromatic rum, where vanilla and tropical fruit meet caramel and a light peppery finish.

    Caroni 1997/2022 Valinch & Mallet 24 Year Traditional is a Trinidad Rum from a single cask, aged for 24 years and bottled at 57.9%.

    The rum comes from the Caroni distillery, founded in 1923 on the site of an old sugar factory in Trinidad, with both column and pot still equipment, which in its day supplied heavy, powerful rum to the British navy. The Trinidad government sold the distillery to Angostura in 2001, and production ceased the following year. In 2004, Italian rum expert Luca Gargano discovered a warehouse full of forgotten casks at the abandoned distillery, sparking what many collectors now call Caronimania. This cask, number 887, was selected by Valinch & Mallet and yielded a total of 245 bottles. The rum was distilled in 1997 and aged for 24 years before being bottled in 2022.

    The result is a dark, earthy rum with the characteristic "heavy", almost rubbery depth that has become Caroni's hallmark among collectors worldwide.

Diamond is today the last remaining distillery in a country that once housed dozens of sugar estates, and the site brings together several historic still styles under one roof, including the famous wooden stills from Port Mourant, Versailles and Enmore.     The rum comes from Travellers Liquors, whose history begins in 1953 when Jaime Omario Perdomo opened a bar of the same name in Belize City. The family later registered the distillery officially in 1983 and upgraded the facility in 1992, moving away from acid-based fast fermentation in favour of natural molasses fermentation followed by double distillation on a triple column setup. This gives Travellers a cleaner, softer style than many other Caribbean molasses rums. The cask was selected by Valinch & Mallet, the Italian independent bottler run by Davide Romano and Fabio Ermoli, and bottled as cask number 3 as part of their Traditional range. The rum was distilled in 2006 and rested for 16 years before being bottled in 2022.

The base is not ordinary molasses but sugarcane honey – the concentrated first pressing of fresh sugarcane juice before any sugar is removed.     Companero Elixir Extra is a Rum Liqueur blending rum from Jamaica and Panama, bottled at 47%.

    The rum is produced by 1423 Spirits under the Compañero brand and is a blend of the orange-flavoured Elixir Orange and the 12 year old Extra Añejo. The Panama portion of the blend has matured in casks seasoned with cacao, while the Jamaican rum contributes classic pot still character. The blend was born when an unknown visitor at a rum festival combined the two rums, and the result immediately became a favourite among Compañero's own staff. The release is limited to 9,778 bottles with a label uniting the design of both original rums.
