Valinch & Mallet was started by two friends who shared an obsession with whisky and rum, and a dream of turning that passion into their livelihood. Rather than settling for just one category, they chose to bottle both as an independent bottler, focusing on single casks and rare distillates. It's a brand built on friendship as much as professional curiosity.

    In Belize City the Perdomo family has been distilling rum since a small bar called Travellers grew into a distillery, and a single cask from there has now been captured by Italian bottler Valinch & Mallet.

    Belize Travellers 2006/2022 Valinch & Mallet 16 Year Traditional is a Belize Rum from a single cask, aged for 16 years and bottled at 56.3%.

    The rum comes from Travellers Liquors, whose history begins in 1953 when Jaime Omario Perdomo opened a bar of the same name in Belize City. The family later registered the distillery officially in 1983 and upgraded the facility in 1992, moving away from acid-based fast fermentation in favour of natural molasses fermentation followed by double distillation on a triple column setup. This gives Travellers a cleaner, softer style than many other Caribbean molasses rums. The cask was selected by Valinch & Mallet, the Italian independent bottler run by Davide Romano and Fabio Ermoli, and bottled as cask number 3 as part of their Traditional range. The rum was distilled in 2006 and rested for 16 years before being bottled in 2022.

    The result is a soft, sweet-toned rum, where coconut and vanilla meet caramel and dark chocolate, carried by its relatively restrained cask strength of 56.3%.

    The Caroni distillery in Trinidad closed over 20 years ago, but the last casks from its heavy, cult-status production still surface at independent bottlers like Valinch & Mallet.

    Caroni 1997/2022 Valinch & Mallet 24 Year Traditional is a Trinidad Rum from a single cask, aged for 24 years and bottled at 57.9%.

    The rum comes from the Caroni distillery, founded in 1923 on the site of an old sugar factory in Trinidad, with both column and pot still equipment, which in its day supplied heavy, powerful rum to the British navy. The Trinidad government sold the distillery to Angostura in 2001, and production ceased the following year. In 2004, Italian rum expert Luca Gargano discovered a warehouse full of forgotten casks at the abandoned distillery, sparking what many collectors now call Caronimania. This cask, number 887, was selected by Valinch & Mallet and yielded a total of 245 bottles. The rum was distilled in 1997 and aged for 24 years before being bottled in 2022.

    The result is a dark, earthy rum with the characteristic "heavy", almost rubbery depth that has become Caroni's hallmark among collectors worldwide.

    Clarendon 1995/2021 Valinch & Mallet 26 Year is a Jamaica Rum, distilled at the Clarendon distillery in 1995 on an iron pot still, aged 25 years locally and a further year in Scotland, bottled from cask number 433943 by Valinch & Mallet in 2021 and bottled at 56.9%.

    Clarendon, also known as Monymusk, is one of Jamaica's oldest distilleries with a long tradition of powerful, ester-rich pot still rums. After 25 years of ageing in the tropical climate, the cask was moved to Scotland for one final year of maturation before Valinch & Mallet bottled it as part of their "Spirit of Art" series. Only 270 bottles of this rare release exist, its label bearing an original painting by young Chinese artist Chen Li.

    The result is a deeply complex rum, where 26 years of maturation have traced the journey from fresh tropical fruit to leather, iodine and walnut.

    On the banks of the Demerara River in Guyana, the Diamond distillery holds over 300 years of rum history, and a 20 year old single cask from there has now been captured by Valinch & Mallet under the SWR Skeldon mark.

    Diamond 2001/2022 Valinch & Mallet 20 Year Traditional is a Guyana Rum from a single cask, aged for 20 years and bottled at 50.7%.

    The rum comes from the Diamond distillery, operated by Demerara Distillers Limited and located on the Demerara River, where sugar plantations and distilling have existed since around 1670. Diamond is today the last remaining distillery in a country that once housed dozens of sugar estates, and the site brings together several historic still styles under one roof, including the famous wooden stills from Port Mourant, Versailles and Enmore. This particular cask carries the SWR Skeldon mark and is column distilled, giving it a lighter, more elegant style than the heavy pot still rums Diamond is also known for. The cask was selected by Valinch & Mallet, the Italian independent bottler, and bottled as cask number 78 with a total yield of 242 bottles. The rum was distilled in 2001 and aged for 20 years before being bottled in 2022.

    The result is an elegant, dry rum, where spice and tropical fruit meet a light, floral finish with a touch of oak.
