Velier, the man behind some of the rum world's most legendary bottlings, turned his attention to Haiti, and the result was a rum aged in casks from the iconic, now-closed Caroni distillery.
Expert Description
Providence Haiti Pure Single Rum 2019 is a Haiti Rum, distilled from sugar cane juice and sugar cane syrup on a copper Müller pot still with a bain-marie water bath and aged 3 years, bottled at 52%.
The rum is bottled by Velier in collaboration with Providence, the small distillery in Port-au-Prince, and matured in casks from the legendary, now-closed Caroni distillery in Trinidad. The distillation process with a bain-marie water bath produces an unusually pure and crystal-clear distillate character, allowing the sugar cane juice's pure expression to take centre stage.
The result is a complex, aromatic rum that develops from fresh, tropical tones to a deeper, more oriental spiced finish.

Nose
Medicinal balm, floral geranium and lime blossom, with flambéed banana and cigar leaves.
Palate
Fresh and exotic with roasted pineapple, spicy and vegetal sugar cane juice, sweetness and citrus.

Long and floral, with rose petals, dried wood, tobacco and a hint of roasted tones.
