Rum Categories

Are you, like us at Whisky.dk, absolutely crazy about rum? Then this page is just for you. On this page you can find a universe of rum. We have a great passion for rum and we really want to share it with you.

Rum is made from cane sugar and water. This mixture is fermented to form a liquid containing 8-10% alcohol. It is then distilled to an alcohol percentage of up to 90% and then stored on oak barrels. Once the rum has been stored, it is diluted to 40-43% alcohol and filled into bottles.

Below you can see our large selection of rum. We have many different brands and variants. By clicking on the categories below, you see different kinds of rum variants.

Mauritius isn't the first place that comes to mind when the conversation turns to rum, but New Grove's Old Tradition shows exactly why the island deserves its place on the shelf.

    Expert Description

New Grove 10 Year Old Tradition is a Mauritius Rum, distilled at Grays Distillery and aged 10 years in French oak and ex-Cognac casks, bottled at 40%.

New Grove is one of Mauritius' most respected rum brands, and the rum is double distilled at Grays Distillery, one of the island's oldest distilleries. The Old Tradition range is New Grove's older, more mature releases, with the 10-year edition aged in a combination of French oak and ex-Cognac casks, a cask strategy that gives the rum a pronounced French influence in line with Mauritius' historic ties to France.

187 bottles, 21 years old and 61% strength, this Nicaragua rum from the Limited Batch Series is distilled by the same house behind Flor de Caña, but bottled with a power rarely seen from the country.

    Expert Description

Nicaragua 21 Year Limited Batch Series RomDeLuxe is a Nicaragua Rum, distilled in 2000 and aged 21 years, bottled at 61%.

The rum comes from Compañía Licorera de Nicaragua, the country's leading producer, best known for the Flor de Caña brand. RomDeLuxe selected a single cask of this tropically aged rum for its Limited Batch Series and bottled it unfiltered and undiluted in 2021, resulting in only 187 numbered bottles. • Bottle of Nine Leaves Angel's Half Japanese rum
    Item no.: 22227865416-335

On the shores of Lake Biwa, not far from Kyoto, one man stood alone with fermentation tanks, a pot still and a cask warehouse, and created something that tastes closer to whisky than rum.

    Expert description

Nine Leaves Angel's Half American Oak Cask is a Japanese Rum, pot still distilled, matured for 3 years in American oak and bottled at 50%.

The rum comes from the Nine Leaves distillery in Otsu on Lake Biwa in Shiga Prefecture, founded in 2013 by Yoshiharu Takeuchi, who previously worked alongside Ichiro Akuto of the Chichibu whisky distillery. For many years, Takeuchi handled the entire process himself, from fermentation to bottling, with a clear goal of transferring the craftsmanship of Japanese single malt whisky to rum. The rum is distilled from unrefined whole brown cane sugar from the Okinawan islands and matured in American oak casks, giving it a character closer to whisky than to classic Caribbean rum. The name "Angel's Half" refers to the unusually high evaporation through the cask in the humid Japanese climate.

    Tasting notes

Fruity notes of grape and plum, alongside hay, honey, spice and vanilla.

  • Nyborg Distillery Organic Single Sherry Ørbæk Rum bottle
    Item no.: 22227865446-53

In an old train workshop hall at Nyborg harbour, the Rømer brothers have built something rare in the Danish spirits world: a distillery where rum isn't just a side production, but a discipline of its own, made entirely organic.

    Expert Description

Nyborg Distillery Organic Single Sherry Ørbæk is a Danish Rum aged in sherry casks and bottled at 55%.

The rum is distilled and matured by Nyborg Distillery, Denmark's largest craft distillery, housed in a converted train workshop hall by the harbour in Nyborg. Everything the distillery produces is organic, and this rum is no exception. For this Single Sherry edition, sherry casks are used exclusively, giving a deeper, more spiced and wine-like character than the house's bourbon-barrel-aged rum.

Nicolai and Niels Rømer took over the empty buildings in 2011 and opened the modern distillery in 2017, after first experimenting with whisky, gin and rum at their brewery in Ørbæk since 2009, which explains why Ørbæk still appears in the name of several of the house's products.

    Tasting Notes

Whole cinnamon sticks, not powder, are left to steep in the rum long enough that the aroma is almost detectable through the cork.

    Expert description

Oksen Baton de Canelle Entier is a French Spiced Rum from Martinique, infused with whole cinnamon sticks and bottled at 40%.

The Oksen family macerates whole cinnamon sticks sourced from Madagascan farming cooperatives, chosen both for quality and for environmental and social sustainability, directly in an agricole-based rum from Martinique. Because the cinnamon is added whole rather than as powder or extract, the flavour draws out more slowly and evenly into the rum, giving a cleaner, more authentic spice character.

  • Opthimus 15 Year barricas de Malt Whisky Finish Dominican Republic Rum 43%
    Item no.: 22265421-15

There is something stubborn about doing things the wrong way round. The world is full of whisky that has been allowed to rest in used rum casks. Here it is the rum that has taken the trip the other way and settled into a cask that once held Scotch malt whisky. The nose is Caribbean. The tail is a touch Highland.

    Expert description

Opthimus 15 Year barricas de Malt Whisky Finish is a Dominican Rum from Oliver & Oliver, matured by the solera method in ex-bourbon casks and finished in Scotch Single Malt Whisky casks before bottling at 43%.

Oliver & Oliver is based in Santo Domingo, but the family's story begins in Cuba, where Juanillo Oliver built his first rum production in the late 1800s. When the family resumed the work in the 1990s, it happened from the Dominican Republic. The house distils and blends rum from molasses on column stills and supplements with distillates from, among other places, Panama, Trinidad, Colombia and Nicaragua. That exact blend is the house's signature, and what precisely goes into any given bottle they keep close to the chest.

Maturation happens by the solera principle, the same system the sherry houses of Andalusia use. The casks stand in tiers, and rum is always drawn from the lowest and oldest row, which is then topped up from the row above. The number 15 on the label refers to the oldest rum in the system, not every drop in the bottle. That gives a rum with both youthful fruit and the deep, concentrated tone that only time in cask can deliver.

After the solera maturation in ex-bourbon casks, the rum moves onto casks that previously held Scotch Single Malt Whisky. This is where the bottle sets itself apart. The whisky cask lays a dryness over the Spanish-style sweetness, brings the spice forward and gives the finish an edge the Opthimus range is not otherwise known for. This bottling is from 2018 and made in a limited, numbered series of 3,000 bottles.

    Tasting Notes

    Nose

Vanilla and light honey first, then dried fruit and cask oak. Behind it lies cinnamon, sandalwood and a dry, almost malty tone that does not belong in a typical Dominican rum.

    Palate

Full-bodied and soft with clear toffee and vanilla sweetness. Then the whisky cask enters from the side with pepper, roasted nuts and a dryness that keeps the sweetness in check. The oak is present throughout without becoming dominant.

    Finish

Long and warm. The dryness from the malt cask lingers alongside pepper and a last trace of syrupy sweetness.

Just six months in port wine casks, but that is enough to lift the entire character of this 15-year-old rum.

    Expert description

Opthimus 15 Years Oporto is a Rum from the Dominican Republic, finished 6 months in port wine casks and bottled at 43%.

The rum builds on Opthimus' classic 15-year-old solera blend, where rum from multiple vintages is gradually blended to achieve depth and consistency. By finishing it in port wine casks, an extra layer of aromatic depth is added, making it noticeably more opulent on the palate than the house's standard 15-year-old edition.

    Tasting notes

    Nose

Soft and sweet, with molasses, vanilla and roasted nuts, plus a light, smoky woodiness gradually softened by coconut and almond.

    Palate

    Item no.: 22227865421-11

Outside Santo Domingo the warehouses stand close together, and the air inside is heavy and warm all year round.

Here time works faster than in a Scottish cellar. The casks give up their contents at a pace no northern European warehouse can match, and evaporation takes its toll every single year.

Opthimus is the Oliver family's answer to what that heat can be used for, if you have the patience to wait anyway.

    Expert description

Opthimus 18 Year Cum Laude 2019 is a Dominican Rum from Oliver & Oliver, matured in ex-Bourbon casks of American white oak and bottled at 38%.

Oliver & Oliver is a family business with Cuban roots. The family left Cuba in 1959, and only in the early 1990s was the business rebuilt in the Dominican Republic, where it is now based in Hato Nuevo outside Santo Domingo. The house does not distil itself, but blends and matures molasses-based distillates under the direction of maestro ronero Don Pedro Oliver.

Maturation follows the Sistema Solera, the Spanish pyramid system originally developed for sherry. Rum of different ages is continually blended in a system of casks, so that a portion of the oldest rum always carries forward. The number 18 on the label refers to the oldest rum in the blend, not the whole content. That is worth knowing if you come from the world of whisky, where the age statement means exactly the opposite.

Cum Laude is Oliver & Oliver's designation for the bottlings the house itself considers top marks, and it is only used for select vintages. This one was bottled in 2019 in a run of 1,000 bottles. Each bottle is filled, labelled and numbered by hand, and the label is signed by the maestro ronero. The casks are former Bourbon casks from Kentucky of American white oak, and they are what deliver the vanilla, coconut and soft timber running through the whole flavour. The 38% is a deliberate choice by the house: the rum is built for softness rather than power.

    Tasting Notes

    Nose

Warm vanilla and light honey first. Behind that comes toffee, dried fig and a mild cocoa note, and right at the end a touch of pipe tobacco and dry oak.

    Palate

Soft and round. Honey and caramel carry the start, then dark chocolate and roasted coffee unfold, and there is a lightly peppery edge and a touch of ginger in the background that keeps the sweetness in check.

    Finish

Long and spiced-sweet. The vanilla lingers longest, along with sweet oak and a dry tobacco note right at the very end.

Blackadder is a family-run, independent bottler founded in 1995 that, as a firm philosophy, never chill-filters or adds colour to its releases, a stance that applies just as strictly to the house's rum as to its whisky.

  • Bottle of Panamonte 12 Year Bourbon Oak Cask rum
    Item no.: 22227865417-1122

Panamonte is the name, Cuban rum master Don Pancho is the brain behind it, and a single bourbon cask is the whole story in this 12-year-old Panamanian single estate rum.

    Expert description

Panamonte 12 Year Bourbon Oak Cask is a Single Estate Rum from Panama, matured for 12 years exclusively in ex-bourbon oak casks, bottled at 40%.

The rum is produced from sugarcane grown and distilled at Las Cabras de Pesé in Panama, where the distillery is also located. The single estate designation means the entire process from cane field to bottle takes place at one unified location, giving a more consistent expression of terroir than blends from multiple sources. The exclusive bourbon cask maturation keeps the profile clean and focused on vanilla and oak spice rather than added finishing layers.

    Tasting notes

Citrus peel, dried mango and a light tart fruitiness.

    Palate

Brown sugar, cane stalk and white pepper, with a hint of sage and cedar.

    Finish

Caramel and cardamom, with a lingering, spiced sweetness.

    Did you know?

The single estate designation is relatively rare in the rum world compared to single malt whisky, precisely because most rum houses purchase distillate from multiple producers rather than growing the sugarcane themselves.

  • Papalin Original Vatted 7 Year Pot Still Jamaica Rum bottle
    Item no.: 22227865479-1106-197280132

Luca Gargano, the man behind Velier, returns to the 19th-century rum tradition, where Jamaican merchants blended rum from several distilleries under one brand.

    Expert Description

Papalin Original Vatted 7 Year Pot Still Jamaica Rum is a Jamaica Rum, a blend of pot still rum from Hampden Estate and Worthy Park, tropically aged 7 years and bottled at 47%.

Papalin is Luca Gargano's personal project, created to revive the lost tradition of "vatted" rum, blends of rum from several distilleries on the same island, which Jamaican merchants made in the late 1800s, before the style disappeared in the 1970s. By uniting Hampden Estate's wild, ester-rich character with Worthy Park's more balanced profile, Papalin creates a rum that shows the breadth of Jamaica's pot still tradition in a single bottle.

The result is a complex, fat-laden rum with both medicinal and spiced tones.

    Tasting Notes

    Nose

Apple, candied lemon and almonds, with eucalyptus, medicinal notes and burnt wood.

    Palate

Rich and generous with vanilla, mirabelle plum and herbaceous notes of menthol, liquorice and cardamom.

    Finish

Long and rich with coffee eclair, acacia wood, green tea, lemon and almond milk.

    Did You Know?

The term "vatted rum" dates back to the late 1800s, when Jamaican merchants blended rum from several distilleries on the same island to create a more balanced and saleable profile, a tradition that disappeared in the 1970s until Papalin revived it.
