    53.4% places No 20 Maltmod as a middleweig ht: strong enough to carry its grain character, but not so high that it overwhelms. Bottled without chill filtration and with natural colour.

    Nose

    Fresh and grain-expressive with honey, light herbs and a softer, more rounded malt dimension than standard single malt.

    Palate

    Vintage 1983 and no age statement. That is how it was written when the year told you enough on its own. The whisky was distilled in the middle of the Seagram years at Glen Keith, where the distillery was used to try things out before they were rolled out elsewhere.

    Glen Keith 1983 The Pool of the Salmon is a Highland Single Malt Scotch Whisky from Keith in Speyside, matured in oak casks and bottled at 43% in a litre bottle.

    The bottle carries a vintage rather than a number of years. The spirit dates from 1983, a period when Glen Keith produced for Seagram blends and was only rarely bottled as a single malt for the open market. The casks were oak, and together with the 43% that gives a calm, old-fashioned style.

    Glen Keith held an unusual place in Scotch whisky. Seagram built the distillery as an experimental plant and ran triple distillation there for a period, something otherwise associated almost entirely with the Lowlands and Ireland. When production stopped in 1999, one of the more experimental addresses in Speyside disappeared for fourteen years.

    Tasting notes

    Nose

    Dried apricot and malt, with beeswax and a dusty library note. There is a muted floral quality that older Speyside often develops in the bottle.

    Palate

    Soft and oily. Honey, hazelnut and baked apple, with a lightly soapy-floral turn typical of spirit from this period. The dryness arrives late.

    Finish

    Medium and calm. Malt, dried fruit and a dry oak close with no sharp edges.

    Cragganmore 12 years Classic Malts Old Version is a Highland Malt Scotch Whisky matured in ex-bourbon casks and bottled at 40% in a litre bottle.

    The bottle comes from the Classic Malts of Scotland range in an older guise, when the label still said Highland Malt — Speyside was only recognised as a region in its own right much later. The litre measure has long been discontinued, and the carton is included, though it carries the marks of the years. Cragganmore sits in Ballindalloch and has since 1869 distilled with short flat-topped pot stills and worm tub condensers, giving a heavier and more layered spirit than the regional average.

    Nose

    Heather, honey and dried herbs. Below them sit malt, vanilla and a lightly resinous note from the oak.

    Palate

    Soft and layered. Sweet malt, honey, apple compote and a touch of smoke, with a dry spiced edge keeping the sweetness in place.

    Long and dry, with malt, nuts and a persistent herbal warmth.

    Before many of today's whisky lovers had even heard of Bunnahabhain, this was the label that graced the distillery's bottles around the world.

    Expert's Description

    Bunnahabhain 12 Years Old Westering Home Old Version is a Single Islay Malt Scotch Whisky in a 100cl format, bottled at 43%.

    From the mid-1980s onward, the Westering Home label – named after the lines from Islay's national song – was for a long time the only official Bunnahabhain release available outside the distillery itself. Back then the house style hadn't yet settled on the 46.3% known today, and this 12 Years Old is bottled at 43%, the standard of that period.

    The bottle represents a bygone era of Bunnahabhain's history, when the distillery was far less known, and even a 12 Years Old core release was hard to come by outside Scotland.

    Cask number 777. It looks like something made up for the occasion, but the number sat on the barrel long before anyone thought of selling the whisky as a single cask. Seventeen years later it went into litre bottles.

    The expert's description

    Balvenie 15 Single Barrel Cask No. 777 is a Speyside Single Malt Scotch Whisky matured in one single oak cask and bottled at 50.4 % in litre format.

    The cask went into the warehouse on 3 February 1981 and was drawn on 9 April 1998. The outturn was 300 bottles, and the whisky is neither chill filtered nor coloured. The bottling falls in the period when Balvenie began giving its single casks a place of their own in the range.

    Seventeen years passed between filling and bottling, even though the label states fifteen years. The age statement refers to the guaranteed minimum age on the bottle, and the gap tells you the cask stood a little longer than it had to before anyone found it.

    Tasting notes

    Nose

    Honey, ripe pear and pale oak. A note of almond and dried flowers emerges after a couple of minutes in the glass.

    Palate

    Full and sweet with vanilla, honey and candied ginger. The oak is clear but soft, and the alcohol is carried well.

    Finish

    Long, warm and lightly spiced with a last touch of honey sweetness.

    The series was created to mark Billy Walker's 50 years in the whisky industry, with each release in the range looking in its own direction – some back at history, others forward. Future Edition belongs to the latter category: it points toward a new branch of GlenAllachie's production, which later led to the peated Meikle Tòir series.

    Putting a peated spirit from GlenAllachie into the world is no small thing – the distillery is far better known for its sherry-matured, unpeated single malts. This release is therefore a small piece of distillery history in its own right, young and direct in its expression.

Maker's Mark was founded in 1953, when Bill Samuels Sr. bought the old Burks' Distillery in Loretto, Kentucky. His wife Margie created the entire brand identity — the name, the square bottle and the hand-dipped red wax seal, still hand-dipped on every bottle today. Bill Samuels wanted to create a softer bourbon than the typical rye-based styles of the day and replaced rye with red winter wheat in the mash bill. The distillery was listed on the US National Register of Historic Places in 1974 and named a National Historic Landmark in 1980.

    Ben Nevis 2012/2021 Cadenhead's 9 years Warehouse Tasting is a Single Highland Malt Whisky matured in a Manzanilla hogshead, finished from 2020 and bottled at 56.7 % cask strength without chill filtration and without added colour.

    Wm Cadenhead is the oldest independent bottler in Scotland, founded in Aberdeen in 1842 and based today in Campbeltown next door to Springbank. The Warehouse Tasting series consists of a small handful of casks each year, chosen for the tastings the house runs itself, and they are bottled raw and unadjusted.

    Manzanilla is a dry sherry from Sanlucar de Barrameda on the Atlantic coast, and the cask gives a saltier, more mineral influence than an Oloroso would. The Ben Nevis went into the cask in 2020 after eight years in its original wood, and the combination of dry sherry and the oily weight of the distillery is unusual.

    Twenty-eight years in a refill hogshead is a slow maturation. The cask does not give much colour, but it gives time, and it is the time that creates the soft, honeyed texture and the deep fruit found only in old whisky.

    The strength of 47.4% shows how much has evaporated along the way. Càrn Mòr is Morrison Scotch Whisky Distillers’ range of single casks, and Celebration of the Cask is the house’s line for the oldest and rarest casks in the warehouse.

    The cask was filled in February 1998 and emptied in October 2021 after twenty-three years. A refill hogshead gives slowly, and over that length of time the result is a whisky where the distillery takes up more room than the wood. The bottling is non-chill filtered and carries natural colour.

    The series consists of thirty-two different bottlings from different distilleries, split evenly between black and white: two kings, two queens, four bishops, four knights, four rooks and sixteen pawns. It is a collecting project as much as a whisky range, and several of the squares are already hard to find.

    Ardmore 17 Years Old The Chess Malt Collection G7 is a Highland Single Malt Scotch Whisky matured entirely in bourbon wood and bottled at 59.7% cask strength. It was distilled in February 2002 and bottled in June 2019, and the cask gave 239 bottles.

    The Chess Malt Collection is a series of 32 bottlings from different distilleries across Scotland, where each bottle corresponds to a piece on the chessboard, split evenly between black and white. The series gathers distilleries you rarely see side by side, tied together by a concept rather than by a region or a cask type.

    Ardmore is one of the few Highland distilleries with peat smoke as a core style, and after seventeen years in bourbon wood the smoke has grown softer and better integrated. The whisky is neither chill filtered nor coloured.

    Tasting Notes

    Nose

    Tropical fruit first, mango, pineapple and a little melon, which is typical of long maturation in bourbon casks. Beneath sit toasted nuts, vanilla and a light dry smoke closer to cold ash than a fire.

    Palate

    Full and oily. Tropical fruit and honey open, then nuts, vanilla and a dry smoky edge. The 59.7% is pronounced, but after seventeen years there is roundness enough to carry it. Water draws the fruit further forward.

    Finish

    Long and dry. Smoke, toasted nuts and oak, with a final sweetness of tropical fruit that lingers.

    Twenty-four hours after the other Millennium cask. This one was filled on 1 January 2000 — the first day of the new millennium — and it is hard to find a whisky with a more precise birthday.

    Glenfarclas Millennium Single Cask 2000 is a Highland Single Malt Scotch Whisky from a single sherry butt, bottled at cask strength 56.1%.

    The cask was filled on 1 January 2000 and emptied on 28 June 2022 after twenty-one years. Sherry butt number 24 gave 569 bottles, which is a lot for a single cask — a butt holds around 500 litres where a hogshead takes only half that. The 56.1% is natural cask strength.

    The bottling forms part of The Family Casks and was selected specially for the Danish market. Together with the Millennium cask from the day before, the two make a pair where the difference between casks filled twenty-four hours apart can be tasted side by side.

    Tasting notes

    Nose

    Powerful sherry with raisin, dates and dark syrup. The cask strength pushes the fruit forward, and there is a warm spice note beneath it all.

    Palate

    Dense and sweet. Dark fruit, walnut and chocolate, with a firm spiced middle. The 56.1% gives the whisky an intensity its gentler Millennium sibling does not have.

    Finish

    Very long. Dark fruit, nuts and a dry oak close with lasting warmth.

    The Millennium casks hold a particular status, because the date is one of the few in whisky where you know exactly what was happening that day. This one was selected for the Danish market and has never been sold anywhere else.

    Nose

    Deep sherry with raisin and dried fig, over a base of aged oak. There is a waxy depth that twenty-two years in a single cask has created.

    Palate

    Full and concentrated. Dark fruit, walnut and a spiced middle, with a firm oak note keeping the sweetness in check. The 50% gives the whisky structure without being hard.

    Finish

    The 26 years on cask have softened the characteristic Orkney peat in favour of a more mature, oak-driven sweetness.

    BenRiach Malting Season Second Edition 2013/2022 is a Single Speyside Malt Scotch Whisky matured in 1st fill bourbon casks and bottled at 48.9 %.

    Malting Season is the distillery range made purely from barley malted on the house floor maltings. BenRiach is one of very few Scottish distilleries to have kept the facility, and it is only used in limited periods each year, which sets a natural ceiling on how much whisky the range can yield.

    The second edition was distilled in 2013 and bottled in 2022 after nine years in first fill bourbon wood. The fresh American oak gives vanilla and pale sugar, and because the malt was floor malted the cereal character stands out more clearly than in the other bottlings from the distillery.

    Fresh barley, vanilla and pale sugar with a note of hay and baked bread.

    Palate
