    Valby is not the first place you think of when you think single malt. But since 2017, Copenhagen Distillery has been distilling Danish malt in an industrial quarter south of the city centre, and the Refined Edition is the distillery's core expression. Batch No 1 from 2021 is one of the concrete results of that work.

    Copenhagen Distillery Refined Edition 2021 Batch No 1 is a Danish Single Malt Whisky at 54.9%, bottled at 50 cl with EAN number 5712922101035. It is the first batch from 2021 in the well-known Refined Edition series. Copenhagen Distillery was founded in Valby, Copenhagen, and is one of Denmark's most visible and well-regarded whisky producers. The distillery uses Danish malted barley and distils in copper pot stills. The Refined Edition is the distillery's acclaimed expression of balance and quality — a series that consistently represents Copenhagen Distillery's craft.

    This bottle sat on the shelf long before Highland Park drew its current look. The label is the old one, the glass has the old shape, and inside sits a malt that went into wood a quarter of a century earlier. The wind off the North Atlantic had plenty of time to do its work.

    Highland Park 25 Year Old Single Orkney Malt Scotch Whisky 48.1% is a Single Orkney Malt Scotch Whisky matured for 25 years in oak casks and bottled without chill filtration at 48.1%.

    This release carries the older bottle design used before the distillery's most recent redesign of the range. Label, bottle shape and typeface belong to a generation many collectors recognise from their own cabinet, and that design is no longer produced. Highland Park's 25 Year Old has also been bottled at several strengths over the years, and this particular edition sits at 48.1%.

    Highland Park distils at Kirkwall on Orkney and has done so since 1798. It is one of the very few Scottish distilleries still turning part of its own malt by hand on its own malting floors, and the house matures mainly in sherry-seasoned oak. That combination is why a Highland Park rarely tastes only of smoke or only of sherry, but of both at once.

    Twenty-five years shifts the balance between the two. The peat smoke loses its edge and turns earthy, the dark sherry fruit moves forward, and the wood hands over tannin and spice at a pace only Orkney's cool climate allows. Liquid disappears every year, and what remains is denser and softer than the younger expressions. Without chill filtration it keeps its full weight on the tongue.

    Tasting notes

    Nose

    Toasted malt and dried fruit lead, figs and dates, then orange peel and a hint of old leather. The peat lies deep and quiet underneath and never pushes forward.

    Palate

    Full and rounded. Caramel and dark sherry sweetness open, followed by cocoa, tobacco leaf and dry oak spice. The smoke is warm and settled, more glowing peat than open fire.

    Finish

    Long and soft. The sweetness holds for a good while, and a dry wisp of smoke closes it out alongside a trace of salt.

    Cambus was for decades the quiet supplier nobody wrote about. The distillery closed in 1993, and only afterwards did people realise how good that old grain spirit had become with time.

    Clan Denny is Douglas Laing's series of single cask grain whiskies, and grain is a category the house has worked with extensively. The whisky was distilled in 1988, five years before Cambus closed, and spent 25 years in a quiet refill cask.

    A refill cask does not dominate the spirit but lets the natural sweetness of the grain and its developed depth come through. At cask strength all the concentrated aromas from both grain and wood are preserved.

    Chivas Century Of Malts is a Blended Malt Scotch Whisky built from 100 Scottish single malts and bottled at 43% in a 75 cl bottle.

    The idea behind it was simple and rather bold: gather so many different malt whiskies that no single distillery signature could dominate. The whole was meant to give a picture of Scottish malt whisky as such. The bottle contains no grain whisky, which sets it apart from the house's ordinary blends. The release has long been discontinued, and both the 75 cl format and the 43% belong to an earlier era.

    Tasting notes

    Nose

    Broad and layered. Heather, honey and dried fruit first, then malted cereal, a touch of sea salt and a distant peat smoke in the background.

    Palate

    Soft, but never flat. Malt, honey, apple and orange peel, with spice and a lightly smoked edge appearing towards the middle. No single note takes over, which is precisely the point.

    Finish

    Medium and dry, with malt, nuts and a last trace of smoke.

    The whisky was distilled in 2012 and bottled in 2021 after nine years of maturation in cask #397, selected by Adelphi's long-standing team around Alex Bruce and renowned whisky writer Charles MacLean. The pair routinely taste through dozens of casks from distilleries such as High Coast, and fewer than 4% pass the test to be bottled under the Adelphi name.

    The whisky is neither chill-filtered nor coloured, and the full cask strength delivers an intense expression of High Coast's signature style, shaped by the sharp temperature swings by the Ångermanälven river.

    Nose

    Powerful and direct with notes of vanilla, coconut and freshly cut oak, carried by the high strength.

    Lindores Abbey Whisky Commemorative First Release Lowland Single Malt Whisky marks the distillery's first official release, bottled at 46%. Lindores Abbey is regarded as the spiritual birthplace of whisky. Scotland's Exchequer Rolls of 1494 record that the monk Friar John Cor was issued eight bolls of malt by order of the King to make 'aqua vitae' — the earliest known written reference to Scotch whisky distillation, equivalent to around 400 bottles by today's standards. Lindores Abbey monastery was founded in 1191 on the banks of the River Tay, and in 2018 archaeologists found remains of a distillation vessel in the ruins. The modern distillery opened in 2017 right next to the historic abbey ruins.

    The whisky comes from a single cask (Cask No. #7856) and is bottled at 50.6%, non-chill-filtered and with natural colour. With only 264 bottles from this one cask, this is a very limited release.

    Nose

    Ripe, deep fruit sweetness with notes of dried apricot and a light touch of honey.

    Cardhu is known as the gentle one. Then came 2021, when Diageo gave the distillery fourteen years, wine casks and 55.5% — and suddenly the gentle one was not gentle at all.

    Cardhu 14 years Special Release 2021 is a Single Malt Scotch Whisky finished in wine casks and bottled at 55.5%.

    The bottle is called The Scarlet Blossoms of Black Rock and belongs to Diageo's annual Special Releases series, where eight distilleries each year show a side of themselves you do not otherwise see. For Cardhu that meant a finish in wine casks, laying dark fruit and a dry, almost tannic edge over the usual house honey. The series is released once and never repeated.

    Tasting notes

    Nose

    Red berries and plum first, then honey and baked apple underneath. The wine cask brings a dry, almost dusty spice, and the strength reads as warmth rather than sharpness.

    Palate

    Powerful and juicy. Cherry, dark chocolate and orange peel, with Cardhu's honeyed sweetness beneath it all. The oak tightens things up in the middle and gives a dry grip the 12 year old simply does not have.

    Finish

    Long and dry, with red berries, cocoa nibs and a spiced warmth that stays put.

Four Roses was founded in 1888 by Paul Jones Jr. The story behind the name has it that Jones proposed to a Southern belle who said yes while wearing a corsage of four roses — hence the brand's name. The current distillery in Lawrenceburg, Kentucky, was built in 1910 in an unusual Spanish Mission style and has been on the US National Register of Historic Places since 2000.

    Four Roses is known in the bourbon world for using no fewer than 10 different recipes, combining the house's five yeast strains with two different mash bills. Each yeast strain brings its own character — from spicy and floral to fruity and herbal — giving the distillery an unusually broad flavour palette to blend from.

    Highland Park Thor 16 Year Old The Valhalla Collection Single Orkney Malt Scotch Whisky 52.1% is a Single Orkney Malt Scotch Whisky matured for 16 years in oak casks and bottled at 52.1%.

    Thor opened The Valhalla Collection, a set of four releases named after figures from Norse mythology. The god of thunder came first, followed one at a time by Loki, Freya and Odin, and the series has long since closed. The outturn for Thor was 23,000 bottles spread across the world.

    The bottle sits inside a frame of curved wooden staves shaped after the prow of a longship. The packaging is not decoration for its own sake. Kirkwall, the town the distillery stands above, was founded by Norsemen, and Highland Park has built its identity on that connection for decades rather than on the Scottish Highlands its name suggests.

    At 52.1% this sits well above the distillery's core range, and you feel it. The malt stands closer together, the peat smoke takes up more room, and the oak spice steps forward instead of waiting in the background. In return it takes water better than most.

    Tasting notes

    Nose

    Toasted malt and dark honey sit heavy in the glass, with ripe peach and a trace of red berries above them. The peat announces itself as warm spice rather than bonfire.

    Palate

    Powerful, but it does not hit. Caramel and honey arrive first, then ginger, cinnamon and dry oak spice, with an earthy peat smoke running underneath and holding the whole thing together.

    Finish

    Long and slightly dry. The ginger lingers alongside vanilla and oak, and the smoke is the last thing to let go.

    Annandale 2015 Bourbon Cask 224 Single Lowland Malt Whisky is a single-cask bottling from Annandale Distillery, matured in a bourbon cask, bottled at cask strength, 60,5 %. Annandale Distillery was founded in 1836 as one of Scotland's first legal distilleries, but closed in 1918 while owned by none other than Johnnie Walker. The distillery lay derelict for nearly a century, until Professor David Thomson and Teresa Church read about it in the book 'Scotch Missed: Lost Distilleries of Scotland', tracked down the ruined building, bought the site in 2007 and reopened the distillery in 2014 after extensive restoration. The distillery produces two main expressions: the unpeated Man O'Words and the peated Man O'Sword, continuing the distillery's historic tradition of smoky whisky.
