    Kilchoman 16 Year Old is an Islay Single Malt Scotch Whisky, matured for 16 years and bottled at 50 %.

    The whisky is built from 21 selected casks, mainly ex-bourbon with a smaller proportion of ex-oloroso sherry casks that add depth and a hint of darker fruit. At 16 years old, it's the longest maturation Kilchoman has ever put its name to, and a rare chance to taste what happens when the distillery's young, energetic style is allowed to mature far beyond most of the house's other releases.

    The long maturation in Kilchoman's warehouses by the Atlantic has given the spirit time to settle and round out, without losing the citrus-fresh smoke that defines the distillery. The result is a whisky that's both deeper and more complex than the younger core range, yet unmistakably Kilchoman.

    Down in the foothills of the Mourne Mountains in Northern Ireland sits a distillery barely bigger than a garage. Two handmade copper stills, a repurposed shipping container, and a flame under the pots that never goes out - that's Killowen, and it's where this bottle comes from.

    Killowen Barántúil Cask #KDC186 is an Irish Single Pot Still Whiskey matured for its entire maturation in an Oloroso sherry cask and bottled at cask strength, 60.44% ABV.

    Barántúil is Killowen's own single cask series - the name means "authentic" in Irish, which suits the philosophy behind it well. Cask #KDC186 was distilled from a mash bill of malted and unmalted barley, unmalted oats and unmalted rye, and spent three years in a 120-litre Oloroso cask. This marks the first time Killowen has let a whiskey sit in a full-size Oloroso cask for its whole maturation - previous releases in the series typically saw sherry only as a shorter finish on top of bourbon casks. Just 169 bottles were released.

    Killowen distils the old way: open, wild fermentation with no added yeast strains, flame-fired stills, and double distillation - where most other Irish distilleries today triple distil. Cooling runs through traditional worm tubs. The result is a whiskey with more weight and body than you'd typically expect from Irish pot still.

    Tasting Notes

    Nose

    Ginger bread and warm spice up front, followed by ripe apricot and sultana. Underneath sits a trace of almond paste and nutmeg.

    Palate

    Dense and spicy - like biting into a fig tart dusted with brown sugar, followed by something close to pine needle from a spruce forest. The cask strength is felt, but the whiskey carries it well.

    Finish

    Long, with nutmeg over baked apple and peach. A fine example of just how good pot still spice can be when it's allowed to do the talking.

    Lakes Distillery Faith Single Malt Whisky is an English single malt whisky matured in Spanish and American oak casks and bottled at 56.5% ABV.

    Faith was the first release in The Lakes Distillery's Quatrefoil Collection in 2018, a series named after the distillery's four core values: faith, hope, luck and love. The whisky was first matured in Spanish and American oak casks seasoned with Bourbon and Oloroso sherry, then given a second maturation in PX hogsheads of Spanish and American oak. The result is a complex single malt with comforting notes of dried fruit, vanilla and a hint of cinnamon.

    The Quatrefoil Collection is now held in The Lakes Distillery's archive and is no longer part of ongoing production, making Faith a closed release from the distillery's early years on the banks of the River Derwent in Cumbria.

    Lindores Abbey Whisky Commemorative First Release Lowland Single Malt Whisky marks the distillery's first official release, bottled at 46%. Lindores Abbey is regarded as the spiritual birthplace of whisky. Scotland's Exchequer Rolls of 1494 record that the monk Friar John Cor was issued eight bolls of malt by order of the King to make 'aqua vitae' — the earliest known written reference to Scotch whisky distillation, equivalent to around 400 bottles by today's standards. Lindores Abbey monastery was founded in 1191 on the banks of the River Tay, and in 2018 archaeologists found remains of a distillation vessel in the ruins. The modern distillery opened in 2017 right next to the historic abbey ruins.

    Christmas at Berry Bros & Rudd usually means a handful of sharply chosen single casks, and in 2023 Linkwood was one of them. The cask was selected by Doug McIvor, one of the house's most experienced tasters.

    Linkwood 2010/2023 Berry Bros 13 år Single Cask Speyside Malt Whisky 52,1% is a Single Speyside Malt Scotch Whisky, matured in Pedro Ximénez sherry hogshead, cask no. #301233 and bottled at 52.1%.

    The whisky was distilled in 2010 and given a finishing maturation in a Pedro Ximénez sherry hogshead before being bottled in 2023 as a limited number of bottles for Berry Bros & Rudd's Christmas range. The PX cask adds notes of stewed apricot, caramel and spiced oak to Linkwood's usually light, floral character.

    25 years is a long time to wait for a bottle, and Murray McDavid spent the last three of them on something unusual: a cask that previously held Guyanese rum. The result is a single grain that tastes more of the Caribbean than of the Highlands.

    Loch Lomond 1996/2022 Murray McDavid 25 Year Old is a Highland Single Grain Scotch Whisky matured in bourbon hogsheads with a rum finish and bottled at 55.9%.

    The whisky was distilled in 1996 and spent 22 of its 25 years in bourbon hogsheads, before receiving a final finish in an SXG Diamond cask from the Guyanese Diamond rum distillery. Murray McDavid bottled the whisky in 2022 as part of its Mission Gold series, with only 391 bottles in total.

    Nose

    Exotic bouquet of pineapple, banana and mango, layered with vanilla, honey, sugarcane and a touch of oak and ginger.

    Palate

    Full-bodied and creamy, with waves of ripe tropical fruit, soft toffee, rum-soaked raisins and a hint of coconut.

    Long, sweet finish with lingering tropical fruit and a warm rum tone.

    The whisky was launched alongside the distillery's major brand relaunch and is built from three different spirit styles from the distillery, two of which are peated. All three are matured separately in American oak casks before being married for up to three months in cask ahead of bottling. The whisky is neither chill-filtered nor coloured.

    Nose

    Apple and suet pastry give an impression of old-fashioned steamed pudding, growing thicker and sweeter over time with a hint of char.

    Palate

    Sweet and lightly salty with warming spice, while sherry casks shine through with a deep hit of dried fruit and chocolate.

    Sharp fruit and barley notes meet the sweet chocolate tones in a long, rounded finish.
