    Cask number 9711 sat maturing for 22 years before Gregor Hannah moved the contents into an oloroso cask that had just been emptied. Six months later 307 bottles were filled. A move like that can go either way — this one went the right way.

    Glen Grant 1998/2021 Lady of the Glen 23 Year Old is a Speyside Single Malt Scotch Whisky from a hogshead finished in an oloroso cask, bottled at cask strength 50.4%.

    The spirit went into cask in 1998 and was bottled in 2021 from cask number 9711. For its final months the whisky sat in a freshly emptied oloroso hogshead, a far more aggressive form of finishing than an older sherry cask would deliver. The result is 307 bottles, non-chill filtered and with no added colour.

    Lady of the Glen is run by Gregor Hannah under the name Hannah Whisky Merchants, and the whole business model is single cask. He buys individual casks, follows them closely and often adds a short finish when he judges a cask needs a nudge. Glen Grant's light, dry spirit is a rewarding starting point for exactly that, because there is room for the sherry without losing the malt.

    Tasting notes

    Nose

    Prunes and maple syrup first, then dark chocolate and coffee grounds. Behind that sit currants, cinnamon and a trace of old leather. Orange peel emerges after a couple of minutes.

    Palate

    Deep, dry sherry rather than sweet sherry. Dark fruit, walnut and cocoa, with a firm, almost bitter edge from the cask. Underneath it all the light Glen Grant malt keeps the whisky from turning heavy.

    Finish

    Long. Dark chocolate, dried figs and tobacco ebbing slowly into a dryness of oak and cinnamon.

    Dumbarton 1987/2003 Cadenhead's Authentic Collection 15 Years Single Lowland Malt Scotch Whisky

    A red‑brick giant at the meeting of the Leven and Clyde, once home to whisky on a scale few distilleries could match — and guarded by a flock of Chinese geese. That’s the origin of this dram: a rarity from a place that no longer exists.

    This is a bottle for the collector who chases the lost. Dumbarton was primarily a massive grain distillery, built in 1938 by Hiram Walker to supply the Ballantine’s blend. But inside the same complex stood a small malt distillery called Inverleven, and it is that malt spirit you find in this bottle. Cadenhead’s — Scotland’s oldest independent bottler, founded in 1842 — chose to label it “Dumbarton” rather than Inverleven, something worth knowing if you search for it in databases or at auction.

    It was distilled in 1987 and bottled in March 2003 after 15 years in a single bourbon hogshead. Only 294 bottles came from the cask. The whisky is part of Cadenhead’s Authentic Collection — their series of single‑cask releases, un‑chillfiltered, natural colour, and bottled at full cask strength. This is whisky in its most unfiltered form, and at 58.1% it makes itself known. The Inverleven stills fell silent forever in 1991, and the Dumbarton complex closed in 2002 before being demolished. The stills were moved to Islay, where they now serve Bruichladdich and The Botanist gin. There will be no more whisky like this.

    A classic Lowlander in character — light, fresh and grassy rather than heavy or smoky.

    Nose: Grassy and fresh, like sitting by a roadside ditch on a summer day. Plenty of citrus and bright fruit.
    Palate: Dry and spicy with the warmth of full cask strength. A sweet core beneath the sharpness, with grain and pale fruit.
    Finish: Medium length, clean and citrus‑driven. The warmth fades slowly.

A bottle that typically trades above its original retail price, but without dramatic spikes.

    Did you know? Dumbarton had its own security force: around 100 Chinese geese, introduced in 1959 to guard the warehouses. They became so famous they appeared in Ballantine’s adverts. When the distillery closed, the last seven geese were retired and sent to Glasgow Green.

    Glen Scotia 25 Year Old is a Campbeltown Single Malt Scotch Whisky matured in refill bourbon casks with a twelve-month finishing period in 1st fill bourbon casks, bottled at 48.8%.

    For most of its life the whisky sits in used bourbon casks, where the wood gives slowly and lets the distillery character lead. In the final year it moves into 1st fill casks, which add fresh vanilla and lift to a whisky that would otherwise have turned very dry. It is a move that demands good timing — too little and nothing happens, too much and the twenty-five years get covered over.

    Twenty-five years is where Glen Scotia starts to resemble something other than itself. The maritime character is still present, but it has become brine and an ashy smoke note rather than fresh sea air. This is the oldest permanent bottling in the distillery range.

    Tasting notes

    Nose

    Lemon and ginger first, then pine resin and a trace of sea salt. After a couple of minutes it develops towards banoffee pie and maple syrup, with leather and cocoa underneath.

    Palate

    Luscious and smooth. Big orchard fruit notes, honey and malt, with a discreet spice and a hint of ashy smoke. The 48.8% gives weight without making it hard.

    Finish

    Long and drying. A wisp of smoke, brine and peppery oak that lingers well after the fruit has gone.

    The bulk of the years in American oak, then a spell in oloroso at the end. The order matters here — had the sherry been there from the start it would have eaten the salty Campbeltown edge. Instead it sits as a layer on top.

    The whisky spends most of its eighteen years in American oak casks, where the maritime character of the spirit is given room to settle. Only then is it moved into oloroso casks, and the short finish is enough to lay walnut and dried fruit in without covering the salt and minerality. The result is clearly sherried without being a sherry bomb.

    Eighteen years is where Glen Scotia begins to show its other side. The younger bottlings from the distillery are taut and direct, while the older ones unfold and turn rounder. It is still Campbeltown — there is still sea air in the glass — but the frame around it has softened.

    Tasting notes

    Nose

    Walnut and honey first, then digestive biscuits and toffee. There is an aromatic spice note behind it, and after a couple of minutes the sea air emerges beneath the sweetness.

    Palate

    Deep and broad. Candied orange, honey, nuts and raisins, with a spiced structure holding it all together. The maritime minerality sits under the sherry rather than alongside it.

    Finish

    Long and aromatic. Dried fruit and walnut first, then a dry, lightly salted close with spice.

It took the family four years and 163 trial distillations to perfect the recipe before the first batches of Icelandic whisky were ready for market in 2015. The whisky is named after Hrafna-Flóki, a brave Viking chieftain who, according to the sagas, carried three ravens with him and let them lead him to the island he named Iceland, where he became its first known settler.     The whisky is bottled under Old Malt Cask, a series originally created by Douglas Laing in 1998 and continued since 2013 by Hunter Laing & Co., after Stewart Laing left the family business and set up his own house together with sons Scott and Andrew. The series is known for a consistent strength around 50% and for letting each individual cask's character speak for itself.

    This release comes from Cask No. HL16113, a refill hogshead that held the whisky from distillation in 1991 to bottling in 2019 - 27 years in total. Only 308 bottles were drawn from this single cask, with no chill-filtration and no added colour, so what reaches the glass is the pure, time-worn character of this particular cask.

    Nose

    Ripe apple and a trace of beeswax meet gentle butter and a muted note of old oak.

    Palate

    Six decades in one bottle. When Glenfarclas came to mark 185 years, the family went into the warehouses and brought out casks from the 1950s, 60s, 70s, 80s, 90s and 2000s — and married them into a single whisky.

    Glenfarclas 185th Anniversary is a Highland Single Malt Scotch Whisky composed from casks spanning six decades and bottled at 46%.

    Around two thirds of the casks are Spanish sherry oak, the rest other cask types from the distillery own warehouses. The whisky carries no age statement, because one would have to follow the youngest cask in the marriage and would say very little about what is actually in the bottle. The outturn is 6,000 bottles.

    Glenfarclas was founded in May 1836, and the anniversary release was bottled in May 2021 — exactly 185 years later. It is the kind of marker a family-owned distillery can make precisely because there are still old casks left in its own warehouses to draw on.

    Tasting notes

    Nose

    Deep sherry and dried fruit, with raisin, fig and a dark syrup note. The oldest casks show up as a dusty, almost waxy depth behind.

    Palate

    Full and layered. Dark fruit and nuts from the old casks meet a fresher fruitiness from the younger ones, and the spice builds slowly through the palate. The 46% keeps the many layers apart.

    Finish

    Very long. Dried fruit, nuts and a dry oak note that keeps shifting.

This "French Label" version is distinguished by the pirate on the label holding no bottle of Ardbeg, unlike the original release, which has made this particular variant especially sought-after among Ardbeg collectors.

    The first eighteen years of the whisky's life were spent in used first-fill American barrels, sherry butts and second-fill barrels/hogsheads — a wide spread of cask types, each contributing its own character to the different whiskies in the blend. Only afterwards were they brought together and left to marry in three types of specialist casks, rounding off the story with one final layer of sweetness and spice.

    The White Heather brand traces back to Campbell Distillers in the 1950s and was relaunched in 2021 with GlenAllachie and Billy Walker at the helm, giving this 21 year old one foot in tradition and one in present-day craft.

Annandale Distillery was founded in 1836 as one of Scotland's first legal distilleries, but closed in 1918 while owned by none other than Johnnie Walker. The distillery lay derelict for nearly a century, until Professor David Thomson and Teresa Church read about it in the book 'Scotch Missed: Lost Distilleries of Scotland', tracked down the ruined building, bought the site in 2007 and reopened the distillery in 2014 after extensive restoration. The distillery produces two main expressions: the unpeated Man O'Words and the peated Man O'Sword, continuing the distillery's historic tradition of smoky whisky.

No 14 is the numbered edition of the Bøg expression – with a markedly higher ABV than Core Expressions Bøg (50%) and with a concentration that brings the natural softness of the beech smoke out even more clearly.

Valinch & Mallet is an Italian bottling house founded by Davide Romano and Fabio Ermoli, working exclusively with single casks bottled at full strength. The outturn was 315 bottles. Caperdonich mainly made malt for blends and the site was demolished in 2011, so every cask that surfaces is one of the last.

    Tasting notes

    Nose

    Bright and sharply fruity. Green apple, pear and peach, with cereal and a dry vanilla pod behind. After a while in the glass, wax and a hint of mint appear.

    Palate

    Sweetness comes first — honey and baked fruit — and is quickly followed by malt, white pepper and dry oak. The mouthfeel is dense and lightly oily, and the strength carries the flavour a long way without burning.

    Finish

    Medium long and dry, with cereal, oak and a fresh lemon note closing it off.

    Bunnahabhain 2010/2021 Lady of the Glen 10 Years Old is a Single Islay Malt Scotch Whisky from an oloroso sherry hogshead, bottled at cask strength, 58.6%.

    The whisky was distilled in 2010 and bottled in January 2021 from cask #901213, where the oloroso sherry maturation has added plenty of flavour to the relatively young whisky. Only 325 bottles came from this single cask.

    Like the rest of Lady of the Glen's range, it is both unfiltered and free from added colour, letting the sherry cask's full character shine through.

    Clynelish 1996/2020 The Waxy 24 years is a Highland Single Malt Scotch Whisky matured in an ex-bourbon hogshead and bottled at 48.5%.

    The cask is numbered MZ01-4 and gave 353 bottles after 24 years. The release was Valinch & Mallet's hundredth, and the house marked it by leaving the distillery unnamed under the byword The Waxy — an obvious nod to the texture Clynelish is famous for. A bourbon cask over that many years lets the spirit stand forward without much cask sweetness, which is exactly the point of this kind of bottling.

    Nose

    Beeswax and lemon oil first, then ripe pear, honey and a cool mineral note. A distant sea air sits under it all.

    Palate

    Dense and oily. Citrus, malt, honey and wax, with white pepper and a dry herbal edge. The 24 years have given depth without the wood taking room from the fruit.

    Finish

    Long and dry, with wax, mineral and a slowly fading spiced warmth.
