    Champagne casks barely exist. The houses in Champagne use their own casks again and again and rarely sell them on. Getting hold of 195 litre casks from Paul Launois in Le Mesnil-sur-Oger is therefore an unusual thing to be able to write on a whisky label.

    Ardnamurchan Champagne Cask Paul Launois AD 06:22 is a Highland Single Malt Scotch Whisky finished in 195 litre champagne casks from Paul Launois and bottled at 57.5% cask strength. The outturn was 2,661 bottles.

    Paul Launois is based in Le Mesnil-sur-Oger in the Côte des Blancs, one of the villages in Champagne classified as grand cru. The area is known for chardonnay, and casks from there carry a far lighter and more mineral character than the sherry and port casks whisky is usually finished in.

    A cask of 195 litres is small enough to work quickly, and at 57.5% the concentration is high. The whisky is neither chill filtered nor coloured.

    Tasting Notes

    Nose

    Green apple and lemon peel first, with a light bready note as from champagne’s time on the lees. Beneath sit Ardnamurchan’s own peat smoke and a maritime salinity, plus vanilla from the bourbon maturation before the finish.

    Palate

    Fresh and taut to begin, which is unusual at this strength. Apple, citrus and a chalky minerality open, then the smoke arrives and brings weight. A fine acidity runs the whole way and keeps the whisky light on its feet despite the 57.5%.

    Finish

    Long and dry. Citrus, mineral and smoke, with a final malt sweetness lingering.

The whisky was first matured on used Jack Daniels bourbon casks and then partially finished on STR white oak wine casks. STR treatment – Shaved, Toasted and Re-charred – opens the cask back up, adding extra sweetness and fruity complexity. Bottled at 61% without dilution.

    Nose

    Clear and expressive smoke from the peated malt kernels, combined with fruity sweetness from the bourbon cask and a light winey note from the STR finish. An explosive and direct nose.

    Palate

    Powerful smoke that stays clear and clean at 61%. A fruitiness walks hand in hand with the smoke – this is not the typical Islay iodine style but a cleaner, more malt-based smoke. The warm strength amplifies both smoke and spice.

    Finish

    Long and persistent with smoke as the dominant note. A light fruity sweetness from the casks settles in as a gentle contrast in the long close.

    Twenty-five years in cask, the final thirty months of them in Oloroso. That is a long time to let a whisky work, and longer still to wait and find out whether the decision was right. The Italians at Wilson & Morgan have a habit of getting it right.

    Ben Nevis 1996/2021 Wilson & Morgan 25 years is a Highland Single Malt Whisky matured in casks no. 1819 and 1820, finished in Oloroso sherry casks for 30 months and bottled at 52.1 %.

    Wilson & Morgan is an Italian whisky house, run by the Rossi family from Treviso since 1992. The house is known for buying casks early, letting them lie long and finishing them in carefully chosen sherry wood, and that method suits Ben Nevis well, since its spirit carries the weight needed to take the treatment.

    The whisky was distilled in 1996 and bottled in 2021 from two casks kept together throughout. The thirty months in Oloroso are not a short finish but a genuine second maturation, and it reads clearly in the dark fruit and the spice.

    Nose

    Dark fruit, walnut and orange peel, with a waxy undertone from the spirit and a hint of leather.

    Palate

    Powerful and dense with fig, raisin and bitter chocolate. The sherry takes up room, but the Ben Nevis weight holds back and lets the spice come through.

    The cask is numbered 900076, was filled on 13 August 2008 and emptied on 11 March 2022 with an outturn of 574 bottles. The release belongs to Signatory's Cask Strength Collection. A strength that high after thirteen years means the cask lost more water than alcohol — which happens in dry, airy warehouses rather than in damp earth-floored cellars.

    Nose

    Dense and dark. Raisin, date and orange marmalade, with dark chocolate, nuts and a warm spiced note.

    The label looks like a page torn out of a comic, and it is easy to miss what is actually in the bottle. This is twenty-one year old Aberfeldy. On the label the whisky writer Ian Buxton stands panning for gold in the Pitilie Burn, exactly where the distillery draws its water.

    Aberfeldy 21 Year Old from That Boutique-Y Whisky Company is a Highland Single Malt Scotch Whisky matured in oak casks and bottled at 48.9%. It was released in 2018 as Batch 2 in an outturn of 261 bottles and has long since sold out at the bottler.

    That Boutique-Y Whisky Company is an independent bottler that started in 2012 and belongs to Atom Brands in England. They do not distil a drop themselves. They buy casks, bottle them in 50 cl format and commission illustrators for labels that usually hide an in-joke about the distillery. This one was their second Aberfeldy and the first to carry an age statement on the label.

    The spirit comes from Aberfeldy in Perthshire, where the malt is unpeated and the stills run twice. At twenty-one years the pale honey the distillery is known for has drawn together into something denser and more syrupy, and the wood has had time to add both spice and a very faint smoky edge. The 48.9% is higher than the distillery's own official bottlings, and you feel it in the weight.

    Tasting notes

    Nose

    Cinnamon and orange zest, with something behind it like the crust on a cake straight out of the oven. A very faint smoky edge sits on the outside, more old cask than peat.

    Palate

    Syrupy and rich. Pancakes with maple syrup, melted butter and small pieces of dark chocolate. The spice builds slowly and drags the whisky away from pure sweetness.

    Finish

    Long and spiced. The sweetness drops away and leaves a dry, almost savoury cooking spice with a touch of cayenne.

    A valinch is the copper tube you push into a cask to draw a sample. Two Italians named their company after that very tool, and after the mallet that knocks the bung loose. It says rather precisely what they do.

    Ardmore 12 Years Old Valinch & Mallet 2009/2021 is a Highland Single Malt Scotch Whisky matured in a Sherry Hogshead and bottled at 52.2%. Cask 706023 was distilled in 2009 and bottled in 2021, giving 338 bottles.

    Ardmore makes peated whisky as its core style, which is unusual for a Highland distillery. The smoke sits at around 12 to 14 ppm, moderate compared with Islay but clear enough to give the whisky a dry earthy floor. Combined with a sherry cask it produces a profile where dark fruit and smoke pull in opposite directions.

    A hogshead holds around 250 litres, so between a bourbon barrel and a sherry butt. It gives more wood contact per litre than a butt, which is why twelve years in a hogshead can travel further than twelve years in a larger cask. Valinch & Mallet was founded in 2015 by two Italian friends.

    Tasting Notes

    Nose

    Raisins and dark orange first, with peat smoke as a dry undercarriage. Behind them come toasted malt, walnut and a hint of leather. The smoke is not maritime, it reads more like smouldering wood than sea air.

    Palate

    Full and in two halves. The sherry’s dried fruit and chocolate open, then the smoke enters from the side along with black pepper and a dry oak tannin. At 52.2% the concentration is good, and the two elements keep each other in check the whole way.

    Finish

    Long. Smoke, dark fruit and spiced oak leave together, with a dry ash note right at the end.

    Benrinnes 1996/2022 Signatory 25 years is a Speyside Single Malt Scotch Whisky matured in hogsheads and bottled at 53.2 % cask strength.

    Signatory Vintage filled two hogsheads, cask no. 11712 and 11716, on 28 October 1996 and emptied them again on 18 January 2022. The result was 537 bottles for the Cask Strength Collection, the range where Signatory lets the cask speak without water and without filtration. The whisky is neither chill filtered nor coloured.

    Until 2007 Benrinnes ran an unusual partial triple distillation, and the entire production still passes through worm tubs sunk in cold water outside. That gives a spirit with weight and an almost meaty texture — exactly the kind of body that can carry a quarter of a century in oak without tiring.

    Nose

    Old oak, dried apricot and a dry nuttiness reminiscent of walnut shells. Underneath sit honey, a little cinnamon bark and a faint oily note that only comes with age.

    Palate

    Full and warm from the first sip. Malt, dark orange marmalade and caramelised sugar meet a peppery edge from the oak. The 53.2 % pushes, but it is never harsh — a few drops of water open a fruity core of baked apple.

    Finish

    Long and dry with toasted malt, tobacco leaf and a layer of spiced oak that lingers. It ends where many younger whiskies have run out of things to say.

    Auchroisk 1996/2022 Signatory 25 Years Old is a Single Speyside Malt Scotch Whisky matured for 25 years in sherry cask no. 2 and bottled at 48.5%. The cask gave 684 bottles, and the whisky is neither chill filtered nor coloured.

    Twenty-five years in a sherry cask is a long time, and the strength of 48.5% tells its own story: a fair amount has evaporated along the way, and what remains is concentrated. Signatory bottles at cask strength without adjustment, so the figure on the label is what the cask gave.

    Auchroisk was built in 1974 to supply malt for the J&B blend, and the distillery’s bright, citrus-driven style takes on an entirely different expression here. The sherry has had a quarter of a century to lay dark fruit and spice over the top.

    Full and concentrated. Dried fruit and sherry sweetness open, then nuts, cinnamon and a dry spiced oak arrive. At 48.5% there is good weight without sharpness, and twenty-five years of maturation shows in the texture, which is thick and oily.

    Finish

    Long and dry. Dark fruit, nuts and spiced oak that let go slowly and leave a lightly bitter chocolate note.

    Dailuaine 1997/2022 Signatory 24 years is a Speyside Single Malt Scotch Whisky matured in two hogsheads and bottled at 47.4% without chill filtration and without added colouring.

    The casks are numbered 7227 and 7235, were filled on 21 May 1997 and emptied on 20 January 2022. The outturn was 369 bottles. The release belongs to Signatory's Cask Strength Collection, where the whisky goes into bottle at the strength the cask delivers. Dailuaine is one of those distilleries where almost the entire production disappears into blends, and twenty-four year old bottlings exist essentially only through independent bottlers.

    Nose

    Ripe apples, pears and quince, with vanilla, malt and a mild spiced oak behind.

    Palate

    Silky with well-integrated alcohol. Sweetness and freshness first, then vanilla, malt and spiced oak, in a balanced and elegant mouthfeel.

    Dry and harmonious, with the complexity and maturity stepping forward at the close.

    The whisky went into cask on 24 May 2000 and was drawn on 13 August 2021. The cask yielded 685 bottles, which fits a butt of that size, and no water was added. The 59.2 % is the natural strength of the cask after twenty-one years.

    The Cask Strength Collection is the Signatory range for single casks bottled exactly as they come from the warehouse. The series is used for casks the house judges able to carry full strength, and the malted core of BenRiach has the body required.

    Nose

    Dark fruit, walnut and orange peel with a deep sherry note. Behind it sit cocoa and old leather.

    The whisky was distilled on 16 February 2000 and bottled on 13 August 2021. The cask gave 592 bottles, which fits a butt of around 500 litres, and the whole run comes from the same day's production at Braeval.

    A refill cask has already given most of its sherry character to an earlier filling. The whisky therefore does not turn dark and heavy but keeps Braeval's light, floral style with a quiet sherry note underneath.

    Signatory Vintage bought the Blair Athol spirit, distilled on 7 September 2007, and bottled it on 19 January 2022 as part of the house's Cask Strength Collection. The run is 670 bottles, which fits a butt, and the whisky is neither chill filtered nor coloured.

    Blair Athol's heavy, nutty spirit is good company for a sherry cask. Thirty-five months is a long finishing period, so the cask has had the chance to reach further into the whisky than a typical six to twelve month finish.
