    Grain whisky is almost always tucked away inside blends where nobody notices it. Hedonism is the bottle where John Glaser put it up front and asked people to taste it properly.

    Compass Box Hedonism The Muse is a Blended Grain Scotch Whisky bottled at 53.3% without chill filtration and without added colouring.

    Hedonism was the first commercial blended grain whisky when Compass Box launched it in 2000, and The Muse is the house bottling at cask strength. Grain whisky is distilled in a column still rather than a pot still and is usually used as a soft backbone in blends. Given long maturation in good American oak it instead develops a creamy, coconut-like sweetness no malt whisky can produce. At 53.3% it stands far more powerfully than the standard Hedonism.

    Tasting notes

    Nose

    Vanilla pod, coconut and crème brûlée. Behind them sit sugared popcorn, pale caramel and a trace of wood shavings.

    Palate

    Velvety and sweet. Vanilla, coconut milk, white chocolate and pale syrup, with a warm spiced note that comes from the strength rather than the oak. The texture is thick without turning cloying.

    Finish

    Long and creamy, with vanilla, coconut and a dry oak note slowly drying out the sweetness.

    The whisky was distilled in 2012 and bottled in 2021 after nine years of maturation in cask #397, selected by Adelphi's long-standing team around Alex Bruce and renowned whisky writer Charles MacLean. The pair routinely taste through dozens of casks from distilleries such as High Coast, and fewer than 4% pass the test to be bottled under the Adelphi name.

    The whisky is neither chill-filtered nor coloured, and the full cask strength delivers an intense expression of High Coast's signature style, shaped by the sharp temperature swings by the Ångermanälven river.

    Nose

    Powerful and direct with notes of vanilla, coconut and freshly cut oak, carried by the high strength.

    High Coast Distillery, formerly known as Box, sits by the Ångermanälven river in northern Sweden, where sharp temperature swings drive a fast and intense maturation. The distillery uses both Swedish lager malt and peated malt imported from Scotland, striking a balance between Nordic finesse and classic whisky character.

    This release was distilled in 2013 and bottled in 2024 after ten years of maturation in cask #1527, a first-fill Oloroso sherry cask selected by Adelphi Selection's team for its series of independent bottlings. The whisky is neither chill-filtered nor coloured.

  • Highland Park 12 Year Old litre bottle with older Orkney Islands label

    There was a time when the litre bottle sat on every airport shelf, and when the Highland Park label still read Orkney Islands rather than Viking Honour. This bottle belongs to that era: a full litre of the distillery's everyday 12 year old, wearing the design that came before the overhaul.

    Highland Park 12 Year Old Version Orkney Islands Single Malt Scotch Whisky 100 cl is an Orkney Islands Single Malt Scotch Whisky made from barley partly dried over heather peat cut at Hobbister Moor, bottled at 40% in the litre format.

    This is the older presentation of the distillery's 12 year old. The 100 cl size was for many years the standard in duty free shops and on board the ferries, where travellers could buy larger bottles than the domestic trade offered. It has become rare, which is exactly why these litre bottles tend to be set aside rather than opened.

    The label is a date stamp in itself. It reads Orkney Islands Single Malt Scotch Whisky, wording Highland Park used until the distillery reworked the whole range in 2017 along Norse lines and renamed the 12 year old Viking Honour. Typeface, colours and bottle shape changed at the same time, and the old label became history.

    The whisky itself is the distillery's cornerstone. Highland Park has been distilling at Kirkwall since 1798 and is known for keeping its peat restrained, so the smoke runs beneath the malt and honey instead of taking charge. At 40% the result is soft and easy to approach without losing character.

    Tasting notes

    Nose

    Heather honey and pale caramel first, then a dry, almost floral smoke closer to warm heather than to a bonfire. A twist of orange peel sits behind it.

    Palate

    Soft and malty, with toffee, stewed apple and a touch of cinnamon. The smoke arrives late and gently, like a thin layer of ash laid over the sweetness.

    Finish

    Medium. Malt and honey ebb away slowly, leaving peat and a small breath of salt at the very end.

    Highland Park is one of very few Scottish distilleries still running its own floor maltings. Roughly a fifth of the barley is turned by hand on the floors at Kirkwall and dried over peat, while the rest arrives unpeated from the mainland. That blend is what keeps the smoke measured.

    Today this exact edition is discontinued and replaced by newer versions, making it an interesting glimpse into how Highland Park tasted for an earlier generation.

    Some whiskies are made to be drunk. This one was made to be argued over. Highland Park handed cask selection to a Swedish three-star chef, then sent the bottle out with no official tasting notes at all. What comes in the box instead is a set of 16 cards and one question: what do you taste?

    Highland Park 16 Year Old Between You and I By Björn Frantzén Single Orkney Malt Scotch Whisky 48% is a Single Orkney Malt Scotch Whisky matured in virgin Swedish oak, ex-bourbon casks and sherry-seasoned oak casks, bottled at 48%.

    Björn Frantzén is the Swedish chef behind Frantzén in Stockholm, the first restaurant in Sweden to hold three Michelin stars. His cooking pulls Nordic produce through Japanese precision and French technique, and that way of thinking about flavour is exactly what Highland Park wanted inside the warehouse when the casks were chosen.

    Virgin Swedish oak carries the whisky. It is the first time the distillery has matured spirit in that wood, and it brings a dry, nutty spice found nowhere else in the range. Around it sit ex-bourbon casks for sweetness and warmth, and sherry-seasoned oak casks pulling vanilla and dried fruit into the blend. Underneath everything lies Highland Park's own heather peat, dialled well down.

    Every bottle ships with those 16 cards. They do not tell you what should be in the glass; they ask questions and leave the wording to you. The whisky is non-chill filtered and bottled at natural colour, so nothing of the character is planed off on the way out of the warehouse.

    Tasting notes

    Nose

    Vanilla and pale orchard fruit lead, then a dry nuttiness from the Swedish oak — somewhere between hazelnut and freshly planed timber. The peat sits far down and reads as dried heather rather than bonfire.

    Palate

    A soft opening of honey, apricot and candied lemon peel. Then the oak tightens with nutmeg and a flick of black tea, and only at the very end does the smoke slide in from the side.

    Finish

    Medium length and on the dry side. The spice hangs on, the malt returns, and a trace of salt closes it out alongside the last of the smoke.

  • Highland Park 18 Year Old Dràm Mòr bottle from single hogshead

    One cask. Not a selection, not a marriage of many, but a single hogshead filled in 2006 and emptied again eighteen years later. Kenny and Viktorija Macdonald bottled it exactly as it stood: no filtration, no colouring, no water. What is in the bottle is what was in the wood.

    Highland Park 18 Year Old Dràm Mòr Single Malt Scotch Whisky 57.1% is a Single Malt Scotch Whisky drawn from one hogshead and bottled without chill filtration at cask strength of 57.1%.

    Dràm Mòr is a small Scottish bottling house in Dumbarton, started in 2019 by husband and wife Kenny and Viktorija Macdonald. They began as an export agency for Scotch before buying casks of their own, and the company now ships its bottlings to 14 countries. Every cask is tasted and picked individually, and everything goes out at full strength with natural colour.

    The spirit went into wood in 2006 and was bottled in 2024 after 18 years in hogshead no. 3535. A hogshead holds roughly 250 litres and is built from the staves of American bourbon barrels, rebuilt with an extra stave and fresh ends. It is larger than the barrel it came from, so the ratio of liquid to wood is lower. Maturation runs slower, and the distillery character stays in place instead of being overrun by oak. The cask gave 292 bottles.

    Cask strength here means no water was added after maturation. The 57.1% carries the oils and heavy aroma compounds that dilution would otherwise push into the background, and without chill filtration the texture stays thick and faintly waxy. In return the whisky wants a few minutes in the glass before it opens up.

    Tasting notes

    Nose

    Salt seaweed and dry straw meet honey and dried heather. Behind them sits a thin veil of smoke, closer to cool ash than open fire, and a twist of lemon peel.

    Palate

    Powerful and oily. Citrus and lemon sorbet cut through first, then roasted pears and a clear note of white pepper. The smoke settles lightly on top and keeps the sweetness in check.

    Finish

    Long and warm. The pepper hangs on, and at the end Highland Park's peat unfolds and rounds everything off with a dry, earthy tone.

    This bottle sat on the shelf long before Highland Park drew its current look. The label is the old one, the glass has the old shape, and inside sits a malt that went into wood a quarter of a century earlier. The wind off the North Atlantic had plenty of time to do its work.

    Highland Park 25 Year Old Single Orkney Malt Scotch Whisky 48.1% is a Single Orkney Malt Scotch Whisky matured for 25 years in oak casks and bottled without chill filtration at 48.1%.

    This release carries the older bottle design used before the distillery's most recent redesign of the range. Label, bottle shape and typeface belong to a generation many collectors recognise from their own cabinet, and that design is no longer produced. Highland Park's 25 Year Old has also been bottled at several strengths over the years, and this particular edition sits at 48.1%.

    Highland Park distils at Kirkwall on Orkney and has done so since 1798. It is one of the very few Scottish distilleries still turning part of its own malt by hand on its own malting floors, and the house matures mainly in sherry-seasoned oak. That combination is why a Highland Park rarely tastes only of smoke or only of sherry, but of both at once.

    Twenty-five years shifts the balance between the two. The peat smoke loses its edge and turns earthy, the dark sherry fruit moves forward, and the wood hands over tannin and spice at a pace only Orkney's cool climate allows. Liquid disappears every year, and what remains is denser and softer than the younger expressions. Without chill filtration it keeps its full weight on the tongue.

    Nose

    Toasted malt and dried fruit lead, figs and dates, then orange peel and a hint of old leather. The peat lies deep and quiet underneath and never pushes forward.

    Palate

    Full and rounded. Caramel and dark sherry sweetness open, followed by cocoa, tobacco leaf and dry oak spice. The smoke is warm and settled, more glowing peat than open fire.

    Finish

    Long and soft. The sweetness holds for a good while, and a dry wisp of smoke closes it out alongside a trace of salt.

    Twenty-seven winters change a whisky. The peat that once stood sharp has settled into a low, steady hum, and the heather honey has had time to spread across the whole glass. Hunter Laing found the cask, left it a little longer, then emptied it in one go.

    Highland Park 27 Year Old The Kinship 2023 Single Orkney Malt Whisky 52.5% is a Single Orkney Malt Whisky drawn from one refill hogshead and bottled without chill filtration at its natural cask strength of 52.5%.

    The Kinship is Hunter Laing's annual collection of old single casks, presented around Fèis Ìle, the whisky festival on Islay. The Laing family has worked with casks for three generations out of Glasgow, and selection follows a single rule: the cask has to carry its own age. This bottling comes not from Islay but from Kirkwall on Orkney.

    Highland Park has been distilling since 1798 and still dries part of its own malt over peat cut at Hobbister Moor, just outside Kirkwall. No trees grow on Orkney, so the peat is heather and moss rather than woody debris, and the smoke it gives is floral and aromatic instead of medicinal. After 27 years that smoke has sunk deep into the spirit.

    A refill hogshead has held whisky before, so it gives less wood and more distillery. That is exactly what you want when a malt has to sit for almost three decades without turning dry and tannic. The cask yielded 268 bottles, filled in 2023 at natural colour.

    The Highland Park Appreciation Society is not a club you wander into by chance. Its members have followed the distillery for years, and in 2016 they were allowed to point at one single cask in the warehouses at Kirkwall. They chose a sherry butt filled in 2003. It gave 576 bottles, and then the cask was empty.

    Highland Park HPAS 13 Year Old Single Orkney Malt Whisky 59.1% is a Single Orkney Malt Whisky drawn from one refill sherry butt, cask #2115, bottled undiluted at its cask strength of 59.1%.

    HPAS stands for the Highland Park Appreciation Society, the society for the distillery's most committed followers. The bottling belongs to Highland Park's Single Cask Series, where one cask is emptied and sold as it stands, and this particular cask was picked for the society. The spirit went into wood in 2003 and into glass in 2016.

    A butt is among the largest casks in Scottish maturation at around 500 litres, and a refill cask has held whisky before. It gives up colour and wood more slowly, so after thirteen years the distillery character still leads, with the dried fruit of sherry framing it rather than covering it. The cask yielded 576 bottles.

    Cask strength makes this a dense dram. Everything the wood handed over sits in the glass without a drop of water, and the smoke from Highland Park's own peated malt has far more room than in the core range.

    Nose

    Raisins, dark orange marmalade and toasted malt. Below sits a dry, sooty peat smoke and a note of leather. The alcohol prickles for the first few seconds and settles after a couple of minutes in the glass.

Kirkwall, the town the distillery stands above, was founded by Norsemen, and Highland Park has built its identity on that connection for decades rather than on the Scottish Highlands its name suggests.

    At 52.1% this sits well above the distillery's core range, and you feel it. The malt stands closer together, the peat smoke takes up more room, and the oak spice steps forward instead of waiting in the background. In return it takes water better than most.
