    Vintage 1983 and no age statement. That is how it was written when the year told you enough on its own. The whisky was distilled in the middle of the Seagram years at Glen Keith, where the distillery was used to try things out before they were rolled out elsewhere.

    Glen Keith 1983 The Pool of the Salmon is a Highland Single Malt Scotch Whisky from Keith in Speyside, matured in oak casks and bottled at 43% in a litre bottle.

    The bottle carries a vintage rather than a number of years. The spirit dates from 1983, a period when Glen Keith produced for Seagram blends and was only rarely bottled as a single malt for the open market. The casks were oak, and together with the 43% that gives a calm, old-fashioned style.

    Glen Keith held an unusual place in Scotch whisky. Seagram built the distillery as an experimental plant and ran triple distillation there for a period, something otherwise associated almost entirely with the Lowlands and Ireland. When production stopped in 1999, one of the more experimental addresses in Speyside disappeared for fourteen years.

    Tasting notes

    Nose

    Dried apricot and malt, with beeswax and a dusty library note. There is a muted floral quality that older Speyside often develops in the bottle.

    Palate

    Soft and oily. Honey, hazelnut and baked apple, with a lightly soapy-floral turn typical of spirit from this period. The dryness arrives late.

    Finish

    Medium and calm. Malt, dried fruit and a dry oak close with no sharp edges.

    The series is called Closed Distilleries, and when the cask was selected in 2013 the name fitted precisely. Glen Keith had stood still since 1999, and a French bottling house got hold of a bourbon cask from 1995. It yielded 175 bottles.

    The cask was filled in 1995 and emptied in 2013 after 17 years. The bottling gave 175 bottles, non-chill filtered and with no added colour, and the whisky formed part of the Closed Distilleries series — Part des Anges' selection of whisky from distilleries that were silent or shut. The irony is that Glen Keith was started up again in 2013, the very year the bottle appeared.

    Part des Anges is a French bottling house founded in 2005 by Thierry Richard and Laurent Buob. They have specialised in whisky from distilleries without a future, which has produced a set of bottles that now works rather like an archive of a period when Scotch whisky was shutting down instead of building.

    Tasting notes

    Nose

    Concentrated and bright. Pineapple, yellow melon and vanilla pod, with a sharp orange peel on top. A cask that has had plenty of time without taking over.

    Palate

    Powerful and oily without being heavy. Tropical fruit, coconut and honey, with a firm peppery middle from the 55.5%. The malt sits clearly beneath it all.

    Finish

    Very long. Vanilla, pineapple and white pepper drying slowly into a note of pale oak.

    The spirit ran off the stills on 11 September 1996. Three years later Glen Keith closed, and fourteen years passed before production started again. This cask sat quietly through the whole of that period and was only emptied in 2023.

    Glen Keith 1996/2023 Signatory Vintage 26 Year Old is a Speyside Single Malt Scotch Whisky from a 2nd fill oloroso sherry butt, bottled at cask strength 58%.

    The cask was filled on 11 September 1996 and emptied on 7 July 2023 — sherry butt number 7, which gave 635 individually numbered bottles, non-chill filtered and with no added colour. The whisky belongs to Symington's Choice, where Andrew Symington selects the casks himself, and a 2nd fill oloroso butt is a deliberate call: there is sherry enough for depth and dried fruit, but not so much that a 26 year old spirit gets run over.

    Glen Keith only got its own permanent single malt onto the market in 2017. For the decades before that almost the entire output went into blends, and the only bottles a whisky drinker could realistically find came from independent bottlers. That is precisely why a 26 year old from 1996 is one of the few ways to meet the distillery as it worked before the shutdown.

    Tasting notes

    Nose

    Spicy and indulgent. Raisins, figs and dates first, then honey and a layer of soft vanilla. Leather sits behind it, along with a calm, dark spice note.

    Palate

    Velvety despite the 58%. Gingerbread and malt loaf, with blackstrap molasses and dried fruit filling the middle. A nutty bitterness arrives at the end and keeps the sweetness in check.

    Finish

    Very long. Dried fruit and spice drying slowly into walnut shell and a dry sherry note.

    Present Edition is the second release in a three-part series GlenAllachie created to mark Billy Walker's half-century behind the stills. The series is built around three chapters of his career — past, present and a gift toward the future — and this expression represents the present: a spirit given extra time to mature on a cask that is as rare as it is sought after.

    Mizunara oak grows slowly and unevenly, which makes the wood porous and notoriously difficult to coop. Only a handful of cooperages worldwide have mastered the craft, and the result is a cask that lends notes of sandalwood, coconut and oriental spice — a character quite distinct from American or European oak.

    The whisky matured first in PX and Oloroso sherry casks before moving into Mizunara virgin oak, where it picked up its final layers of character. It was bottled in June 2022 in a run of 2,900 bottles worldwide, placing it among the rarer releases in GlenAllachie's anniversary programme.

    The bottling forms part of Batch 4 in GlenAllachie's ongoing series of single cask releases, where whisky maker Billy Walker lets each cask show its own personality. Cask 2583 was filled on 20 November 2008 and left to mature for nearly 13 years before being bottled in July 2022. Over the years, the Ruby Port cask has given the whisky a deep reddish hue and a character of dark berries that stands clearly apart from the distillery's cask strength releases matured in bourbon or sherry wood.

    The first eighteen years of the whisky's life were spent in used first-fill American barrels, sherry butts and second-fill barrels/hogsheads — a wide spread of cask types, each contributing its own character to the different whiskies in the blend. Only afterwards were they brought together and left to marry in three types of specialist casks, rounding off the story with one final layer of sweetness and spice.

    The White Heather brand traces back to Campbell Distillers in the 1950s and was relaunched in 2021 with GlenAllachie and Billy Walker at the helm, giving this 21 year old one foot in tradition and one in present-day craft.

    The cask was filled in February 1998 and emptied in October 2021 after twenty-three years. A refill hogshead gives slowly, and over that length of time the result is a whisky where the distillery takes up more room than the wood. The bottling is non-chill filtered and carries natural colour.

    The series consists of thirty-two different bottlings from different distilleries, split evenly between black and white: two kings, two queens, four bishops, four knights, four rooks and sixteen pawns. It is a collecting project as much as a whisky range, and several of the squares are already hard to find.

    Nose

    Tropical fruit and old oak, with pineapple, mango and a trace of wax. There is a light smoky note under the fruit and a nuttiness that twenty-three years has laid in.

    Palate

    Full and oily. Tropical fruit and nuts first, then a dry, lightly smoky edge and a firm spiced middle. The 54% gives the whisky weight without hiding the age.

    Finish

    The bottling was made officially for professional Danish whisky retailers in an outturn of around 3,000 bottles, sold only on the Danish market. The whisky sits entirely in PX sherry casks, the sweetest and most concentrated sherry type, and it is neither chill filtered nor coloured.

    Glendronach is built on sherry. Since 1826 the distillery has matured its whisky in Spanish oak casks from the bodegas of Andalucía, so a ten year old entirely in PX is not a side step but a concentrated version of the house style.

    Nose

    Dark sherry and raisin, with fig, dark chocolate and a layer of spice. The youth registers as a fresh berry note beneath the heavy fruit.

    Palate

    The bottling appears to date from the 1980s. The 75 cl was the European standard until 70 cl took over in the early 1990s, and the tall bottle shape was later replaced by the low, broad one Glenfarclas uses today. The whisky carries the white band around the neck.

    The contents follow the same idea as the current 105 — sherry-matured Glenfarclas at full strength with no age statement. But spirit from the 1970s and 80s has a reputation for being heavier and oilier than what is made today, and for many collectors that is exactly why the older bottles are interesting.

    Tasting notes

    Nose

    Complex and oaky, with apples, pears and a sweet, dark toffee. There is a dusty depth that older bottles often develop.

    Palate

    Dry and assertive. It develops quickly to reveal a rich spiciness combined with a hint of oak and sherried fruit. At 60% there is a lot at once, but it is warming rather than sharp.

    Finish

    Amazingly smooth for the strength. Warming and with a lingering smokiness, yet gathered and round.

    The bottling forms part of The Family Casks and was selected specially for the Danish market. Together with the Millennium cask from the day before, the two make a pair where the difference between casks filled twenty-four hours apart can be tasted side by side.

The result is a 12 Years Old edition with a light smoky dimension not found in the distillery's regular core range.
