    The whiskey is double distilled from heavily peated malt, a style rarely associated with Irish whiskey, and bottled at cask strength with no water added. The combination of peated malt and sweet French Sauternes casks creates a fully smoky whiskey experience, where the concentrated strength brings out both the smoke and the sweetness.

    Sauternes from the Bordeaux region is made from grapes affected by Botrytis cinerea, the noble rot that concentrates the sugar and creates an intensely honeyed wine. The casks carry that character into the whisky as creamy, almost buttery aromas and ripe, tropical fruit notes.

    That combination meets Kilchoman's classic coastal peat smoke, and it is exactly the meeting of soft and raw that makes this release special: the sweetness never holds the smoke down, but instead unfolds around it.

    The label does not say Aberfeldy. It says Pitilie, the name of the burn running past the distillery, and that is the kind of cover name independent bottlers use when a distillery would rather not see its own name on a bottle it did not fill itself.

    Expert description

    Aberfeldy Pitilie 9 Year Old from Dràm Mòr is a Highland Single Malt Scotch Whisky finished in a 1st fill Buffalo Trace barrel and bottled at cask strength 54.8%. It was distilled in 2015, bottled in 2024 as part of the Dràm Mòr spring releases and came out at 240 bottles from cask number 247.

    Dràm Mòr is run out of Dumbarton by husband and wife Kenny and Viktorija Macdonald. They began as an export agency for Scottish brands and only moved properly into bottling at the end of 2019. The approach is straightforward: single casks, cask strength, no chill filtration and no added colour. You get the cask as it stood, with nobody tidying it up along the way.

    The spirit comes from Aberfeldy in Perthshire, where the barley malt is unpeated and the stills run twice, so there is no smoke in this at all. Nine years is young for a Highland malt, but the finish in a 1st fill Buffalo Trace barrel does a lot of the work. American oak straight out of bourbon service is far more active than a cask on its third or fourth outing, and it pulls the whisky towards something creamy and sweet rather than sharp and youthful.

    Tasting notes

    Nose

    Chewy caramel and vanilla first, opening slowly onto ripe peach flesh and old-fashioned wine gums.

    Palate

    The caramel carries on and turns sweet and creamy. Butterscotch and syrup sponge with a velvety custard laid over the top. There is power behind the 54.8%, but it does not bite.

    Finish

    Delicate and lingering. The layers melt together and settle softly rather than snapping shut.

    A refill bourbon barrel rarely promises much. This one kept its cards close for eleven years and then delivered a dram that tastes of far more than the paperwork suggests.

    Blair Athol 11 Years Dram Mor is a Highland Single Malt Scotch Whisky from Refill Bourbon Barrel #308610, bottled at cask strength, 56%.

    The bottler Dràm Mòr buys single casks and bottles them without blending. This cask gave 305 bottles, which fits a single barrel, so the entire run comes from the same wood and the same day at the distillery.

    Blair Athol sits in Pitlochry in the Highlands and is best known as the backbone of the Bell's blend. The distillery's own spirit is heavy and lightly nutty, and it does well in a quiet refill cask where the house character has room to show.

    Nose

    Very fresh with a surprising note of prunes. A trace of honey syrup, sweet green grapes, a hint of blue cheese and lilies.

    Palate

    Cool, syrupy and lightly spiced with a full mouthfeel that coats everything in spiced butter. Far more than a refill bourbon barrel normally offers.

    Finish

    Bright, soft and clean with a lasting play of honey, warmth and gentle bitterness.

    One hundred and ninety-nine bottles. That is what came out of the one cask Dràm Mòr bought, and it is enough to fill a single shelf in a single shop. Scottish micro bottlers work at that scale, and it is their entire reason for existing.

    BenRiach Dràm Mòr 10 years PX Finish is a Speyside Single Malt Scotch Whisky finished in a 1st fill PX sherry hogshead and bottled at 55.5 % without chill filtration and without added colour.

    Dràm Mòr is a small Scottish bottling house run by Viktorija and Kenny Macdonald from Glasgow. They buy single casks, often give them a finishing period in selected wood and bottle them at cask strength without adjustments. This cask gave 199 bottles.

    The finish in first fill PX is short enough that the fruity character of BenRiach still fills the glass. It is a different approach from long sherry maturation, and the result reads cleaner and fruitier than a PX cask normally suggests.

    Nose

    Like a Sunday at Christmas with an assortment of chocolate treats, where the marshmallows carry a small hint of dark liquorice.

    Palate

    Fruitier and cleaner than you would expect from a BenRiach with a PX finish. The sweetness is there, but it sits beneath the fruit rather than on top of it.

    Finish

    Remarkable, with impressive length and character that hangs on and extends the pleasure.

  • Blackadder Black Snake bottle with black serpent label

    A snake sheds its skin but keeps its venom. Black Snake works on the same principle: every time a portion is drawn off, something stays behind in the cask, and the next release inherits it.

    Expert description

    Blackadder Black Snake Vat No. 17 Third Venom is a Single Malt Scotch Whisky matured in First Fill Bourbon and an Oloroso Sherry Butt and bottled at cask strength, 59.6%.

    The series runs on a solera-inspired system. The whisky first matures in first fill bourbon casks and is then moved into an oloroso sherry butt. From there a share is bottled while the rest is topped up with fresh bourbon-matured whisky. That means a remnant of the very first Black Snake is always present, and every bottling carries a little of all the ones before it.

    Vat No. 17 identifies the cask, and Third Venom records that this particular cask has been drawn from three times. Blackadder does not disclose which distilleries the malt comes from, which is standard practice for the house's vatted releases.

    Tasting notes

    Nose

    Full sherry straight away, followed by vanilla, spiced oak and dark fruit. At cask strength the concentration on the nose is considerable.

    Palate

    Powerful and oily. Caramel, dried fruit, spice and roasted nuts arrive in layers, and the alcohol carries all of it without cutting.

    Finish

    Long, warm and layered with clear sherry character and the intensity cask strength brings.

    Edradour Ballechin 15 years old SBCS 2022 1st Release is a Highland Single Malt Scotch Whisky matured in bourbon and sherry casks and bottled at 58.9%.

    SBCS stands for Small Batch Cask Strength, and this 1st Release is the first bottling in the peated arm of the series. The whisky matured for 15 years, split between 1st fill bourbon barrels and 2nd fill Oloroso sherry butts, which gives it both vanilla sweetness and a darker, dried-fruit character. 3,520 bottles were released to the global market.

    Nose

    Smoked caramel and ripe plums, with a hint of the sherry's nutty depth and a touch of fresh tar.

    Palate

    Full-bodied and powerful at cask strength, with peat smoke woven together with raisin, dark brown sugar and a slightly bitter cocoa note.

    Finish

    Behind the bottle stands The Uncharted Whisky Co., a small independent bottler run by Jack Breslin and Dana de Vos from Fintry, Scotland. The spirit in Heart of Gold is a marriage of malt whiskies from the Highland region, first matured in standard ex-bourbon casks before Uncharted Whisky discovered the parcel and chose to give it a final chapter in a fresh Sauternes wine barrique, cask reference UC030. The whisky was distilled in April 2013 and bottled in March 2024, giving it 10 years of total maturation, with only 363 bottles produced of this release.

    Because the original distilleries behind the blend are not disclosed, Heart of Gold is a whisky that lives on its cask treatment rather than a named distillery, the Sauternes cask leaving a clear, sweet signature over the clean Highland malt character.

    Nose

    Ripe stone fruit and pineapple meet dried apricots and a light lemon-sherbet freshness, with a sweet, wine-like undertone from the Sauternes cask.

    Palate

    Candied pineapple and a full, buttery character that moves into honey and freshly baked brioche.

    Finish

    Long and sweet, with peaches and a creamy, almost custard-like close where the Sauternes wine sweetness lingers longest.

    Glen Spey 2012/2023 Lady of the Glen 10 year is a Speyside Single Malt Scotch Whisky matured in a hogshead and finished in an ex-Banyuls cask, bottled at cask strength 58.4% by Lady of the Glen. Glen Spey distillery in Rothes is one of Diageo's most understated gems. Founded in 1878 by grain merchant James Stuart, sold to W. & A. Gilbey in 1887 as the first Scottish distillery to come into English ownership, and since then primarily used for blending — J&B is its principal customer. The characteristic purifiers on the spirit stills create a light, floral and delicate spirit. Lady of the Glen (Hannah Whisky Merchants) is an independent bottler founded by Gregor Hannah, specialising in single cask bottlings at natural strength, without colouring or chill filtration.

    This bottling rested in a hogshead with a finishing period in an ex-Banyuls cask — Banyuls is a sweet, oxidative dessert wine from Roussillon in southern France, related to tawny port. It lends the light Glen Spey character a layer of dried fruit, spice and a gentle vinous depth rarely seen from this distillery. Bottled on 5 April 2023 after precisely 10 years and 4 months — 295 hand-numbered bottles.

    Nose

    Spiced apple and dried flowers open first, followed by flaked almonds, orange peel and red grapes from the Banyuls cask. Beneath it all, a light malty sweetness and a trace of vanilla.

    Palate

    Vanilla and freshly baked strudel with gingerbread and cooked berries. The high cask strength of 58.4% delivers a powerful punch that opens beautifully with a single drop of water.

    Finish

    Long and spicy with candied orange and white chocolate. The Banyuls cask leaves a gentle, vinous roundness deep into the finish.

    September 2015, the distillery’s second year of operation. Cask 588 was filled with peated spirit and stood untouched for almost a decade before being emptied for one Danish importer. Two hundred and forty-eight bottles, and among the very first single casks Ardnamurchan released to a single customer.

    Ardnamurchan AD 09:15 Cask 588 is a Highland Single Malt Scotch Whisky matured in a peated 1st fill American ex-bourbon barrel and bottled at 59.8% cask strength. The cask was filled in September 2015 and emptied in 2024, giving 248 bottles released exclusively for FC Whisky.

    A first fill American ex-bourbon barrel is active: it gives vanilla, coconut and a clear sweetness that normally settles over a spirit. Here it meets peated spirit, and the result is a whisky where the sweetness and the smoke share the space rather than fighting for it.

    Ardnamurchan began distilling in July 2014, so a cask from September 2015 comes from the distillery’s earliest years. The whisky is neither chill filtered nor coloured.

    Tasting Notes

    Nose

    Peat smoke first, with vanilla and coconut right behind from the American wood. Salt and white pepper sit underneath, along with a clear maritime character that the peninsula’s seaside setting provides.

    Palate

    Peated and direct. Vanilla, salt and white pepper open, then the smoke arrives at full weight along with a dry oak note. The texture is oily, and at 59.8% there is plenty of concentration. Maritime in both nose and palate.

    Finish

    Long and dry. Smoke, salt and pepper, with a final vanilla sweetness beneath it all.

    Michel Couvreur 2011/2021 VJ Maturation 10 Year Old is a Single Malt Whisky matured in a Jura Vin Jaune cask and bottled at 48 percent.

    The whisky was distilled on 15 February 2011 and bottled on 22 June 2021, giving it exactly 10 years of total maturation. Vin Jaune is a distinctive, oxidative white wine from the Jura region in eastern France, and the cask leaves a dry, nutty character rarely found in Scotch-based malt whisky. Only 3,000 bottles were filled of this release.

    Michel Couvreur started out as a wine merchant in Burgundy before whisky caught his attention in 1978. His fresh filling method, where sherry casks are emptied and refilled with whisky on the very same day, means the wood is still damp with sherry when the whisky arrives.

    Nose

    The nose offers walnut and a light oxidative tang, backed by honey, dried apple and a hint of yeast - a clear sign that a wine cask has left its mark.
