  • Bottle of Rampur Double Cask Single Malt Whisky from India
    Item no.: 059763-615-972

At the foot of the Himalayas, where the air is thin and the temperature swings are dramatic, Rampur ages a whisky that refuses to choose between America and Europe. Double Cask is the result of that decision.

    Expert's description

Rampur Double Cask Single Malt Indian Whisky is an Indian Single Malt Whisky matured in both American bourbon barrels and European oak sherry casks and bottled at 45%.

The two cask types mature separately before being married, so the vanilla and sweetness from the bourbon barrels meet the dried fruit and spice of the sherry casks. The result is a round, approachable whisky that shows what the high-altitude Himalayan climate does to maturation.

    Tasting Notes

    Nose

The nose offers delicate, almost balsamic vanilla notes mingling with caramel and a hint of dried fruit.

    Palate

On the palate, rich caramel, dark dried fruit and spice unfold, tying the two cask types together.

    Finish

The finish is soft and lingering, with a last touch of spiced oak.

    Expert description

Swinging Dean Tribute American Straight Bourbon Whiskey is an American Straight Bourbon Whiskey, bottled at 42%. • Bottle of Thy Whisky Spelt Rye Core Expressions Danish Rye Whisky 70 cl
    Item no.: 2222374-25

Spelt and rye from the northwest Jutland fields. Thy Whisky Spelt Rye takes whisky in an unexpected direction – away from classic barley and into a grain world that suits the north Jutland climate best.

    Expert description

Thy Whisky Spelt Rye Core Expressions is a Danish Organic Rye Whisky bottled at 48.5% in a 70 cl bottle. Distilled from a blend of certified organic spelt and rye – both grown locally in Thy. Floor-malted and double distilled in-house. Spelt and rye give a markedly different flavour picture than a traditional barley single malt – more spiced, more earthy and with a complexity that surprises.

Spelt is an ancient grain with roots in north European agricultural tradition. In whisky it adds a nutty and slightly sweet dimension that complements the rye's natural spiciness.

    Tasting notes

    Nose

Spiced and lightly nutty with rye bread and a little citrus. More earthy than the standard Core Expressions.

    Palate

Spiced rye core with spelt's nut sweetness. Light pepper and a touch of baked grain. Well balanced.

    Finish

Moderate and spiced with malt sweetness and light warmth at the end.

In Thy they grow the grain themselves. Malt it themselves. And distil it themselves. Thy Whisky Core Expressions is the result – an organic single malt that says something clear about the place it comes from.

    Expert description

Thy Whisky Core Expressions is a Danish Organic Single Malt Whisky bottled at 48% in a 70 cl bottle. The distillery uses home-grown, certified organic barley from the Thy area and malts it in-house. It is a single estate expression in the true sense – grain, malting, distillation and maturation all take place on or close to the same piece of land in northwest Jutland.

Core Expressions is Thy Whisky's flagship single malt – the clear, unpeated foundation against which all other expressions from the distillery are measured. A good introduction to the northwest Jutland whisky style.

    Tasting notes

    Nose

Fresh and malt-sweet with light fruits, honey and a little heather blossom. Clean and inviting.

    Item no.: 2222374-23

Beech forest meets north Jutland grain. Thy Whisky Bøg is the distillery's smoky expression – but not with peat. Here it is beech wood shavings from the Jutland forests that provide the character.

    Expert description

Thy Whisky Bøg Core Expressions is a Danish Organic Single Malt Whisky bottled at 50% in a 70 cl bottle. Distilled from certified organic barley, floor-malted in-house and smoked with beech wood shavings – not peat. The result is a distinctly smoky whisky with a soft and natural smoke character that differs markedly from Scottish peated expressions.

Beech smoking is a Nordic tradition rooted in smoke ovens and food preservation. In whisky it gives a milder, rounder smoke than peat – with notes of forest floor and light resin rather than ash and sea air.

    Tasting notes

    Nose

Soft beech smoke with forest floor, honey and light fruit. Very different from classic peated whisky.

    Palate

Rounder than expected. Smoke, malt and light nut in fine balance. Sweetness carries through the smoke.

An Orkney Distillery 2004/2020 is a Single Island Malt Scotch Whisky, distilled in 2004 and bottled in 2020 after 16 years of maturation, exclusively for the Danish whisky community Smagning.com. The name 'An Orkney Distillery' is a designation independent bottlers traditionally use when the source distillery doesn't want its name used officially on third-party bottlings. Orkney has historically had only a handful of distilleries, and 'Orkney' as an anonymised origin is typically associated with the island's most prolific distillery.

A leap year for the distillation date, twelve years later bottled on the exact same date — there's something pleasingly symmetrical about this Madeira cask maturation from Edradour.

    The expert's description

Edradour 2012/2024 Madeira Cask 12 years old is a Highland Single Malt Scotch Whisky matured in 1st fill Madeira hogsheads and bottled at 48.2%.

The whisky was distilled on 29 February 2012 and matured for 12 years across ten 1st fill Madeira casks, numbers 110 to 119, before being bottled on the exact same date in 2024. The Madeira's characteristic, lightly oxidised sweetness has given the whisky a warm, dried fruit character that complements Edradour's light, floral core style nicely. 3,987 bottles were released.

    Tasting notes

    Nose

Dried apricot and caramelised sugar, with a lightly nutty aroma and a hint of honey.

    Item no.: 059763-615-940

100 proof is British measurement from the days when alcohol was tested by pouring in gunpowder and seeing whether it would still ignite. The threshold sat at 57.1%, and that figure is still a marker.

    The Expert's Description

Aultmore 17 Years Old Signatory 100 Proof Exceptional Cask Edition #1 is a Single Speyside Malt Scotch Whisky matured in a 1st fill Oloroso sherry cask and bottled at 57.1%. It is neither chill filtered nor coloured.

Signatory’s 100 Proof range is deliberately bottled at exactly 57.1%, the historic British proof point. It is not cask strength but a fixed, high strength, and the house selects casks whose profile can carry it.

Aultmore’s fresh, grassy Speyside style has been laid into an active sherry cask here, which gives a markedly different expression from the bourbon matured bottlings. The distillery was built in 1896, and almost all production otherwise goes into Dewar’s White Label.

    Tasting Notes

    Nose

Dark and sweet. Raisins, orange peel and walnut first, then dark chocolate and a dry spiced oak note. The alcohol is evident but carried by the sherry.

    Palate

Powerful and full. Dried fruit and sherry sweetness open, then nuts, cinnamon and black pepper arrive. At 57.1% there is real weight, and Aultmore’s freshness peeks through beneath the sherry.

    Finish

Long and dry. Dark fruit, nuts and spiced oak that hold on for a long time.

The term proof comes from a British method of testing spirits: it was mixed with gunpowder and an attempt made to ignite the mixture. If it burned, the spirit was proved. The threshold corresponds to 57.1% alcohol, and that figure is still used as a deliberate choice of bottling strength.

  • Glenburgie Signatory Exceptional Cask bottle with dark sherried whisky
    Item no.: 059763-615-938

Exceptional Cask is Signatory's way of saying a cask stands out. Here it is 1st fill oloroso sherry butts that have been allowed to work on a Glenburgie for fifteen years. That is far more sherry than the distillery is normally subjected to.

    The expert's description

Glenburgie 2008/2024 Signatory Vintage 15 Year Old Exceptional Cask 100 Proof Edition #2 is a Speyside Single Malt Scotch Whisky matured in 1st fill oloroso sherry butts and bottled at 57.1%.

The spirit went into cask in 2008 and was bottled on 25 March 2024. 1st fill sherry butts are the heaviest tools in the box — a butt holds around 500 litres, and when it is filled with oloroso for the first time it gives everything it has. On a bright, fruity spirit like Glenburgie’s that is a direct confrontation. The whisky is neither chill filtered nor coloured.

The 57.1% is no accident. Signatory's 100 Proof range holds every bottling at exactly 100 degrees British proof, and the Exceptional Cask mark is used when the casks sit above the normal level of the range in Signatory's own judgement. Edition #2 is the second release under that mark.

    Tasting notes

    Nose

Dried fruit and dark syrup, with fig, raisin and walnut. Behind it sits a layer of leather and a dry, almost dusty spice note.

    Palate

Powerful and dry sherry. Dark chocolate, dried figs and nuts, with a firm bitterness from the cask. The Glenburgie fruit sits underneath and fights its way forward towards the end.

    Finish

Very long. Cocoa, tobacco and dried fruit giving way slowly to a dry, nutty close.

Mannochmore sits quietly behind its sister distillery Glenlossie in Speyside, spending most of its life supplying malt for Diageo blends rather than standing in the spotlight. When it does step out under its own name, it is worth paying attention.

    Expert's Description

Mannochmore 2012/2024 Signatory Vintage 100 Proof Edition #13 is a Speyside Single Malt Scotch Whisky matured in a first fill oloroso sherry butt and bottled at 57.1%.

Signatory Vintage's 100 Proof series gathers single casks from across Scotland, bottled at the old-fashioned strength once known as "100 proof", translating to 57.1% on today's scale. The cask has given this Mannochmore a dark, sherry-driven character that contrasts with the distillery's usually light, floral house style.

    Tasting Notes

    Nose

    Item no.: 059763-615-936

Behind the label "Secret Speyside" hides one of Scotland's most sought-after distilleries. Signatory Vintage chose well here — 13 years in cask, 46%, bottled in 2023.

    Expert description

Secret Speyside 2009/2023 Signatory Vintage 13 Year Old is a Speyside Single Malt Scotch Whisky distilled in 2009 and bottled in 2023 at 46%. Behind the anonymous name is Macallan distillery — a common practice among independent bottlers who purchase casks directly from distilleries. Signatory Vintage, founded in 1988 by Andrew Symington, is one of Scotland's most respected independent bottlers, known for selecting and bottling single cask whiskies with minimal intervention.

13 years is a fine age for Speyside spirit — old enough to have rounded off the sharper edges, young enough to retain fruit character and vitality. The result is a whisky that moves from a gentle, fruity nose to a lightly sweet, spiced palate with good balance.

    Tasting notes

    Nose

Stewed plums and vanilla with soft malt notes. Light shortbread and icing sugar, supported by a hint of citrus and light syrup.

    Palate

Sweet entry with golden syrup and vanilla cream. Citrus notes emerge — bergamot and pomelo — with light oak behind.

    Finish

Medium length and sweet with a touch of spiced oak. Banana and soft freshness linger.

Secret Orkney 2009/2023 Signatory Vintage 13 Year Old is a Single Malt Scotch Whisky matured in refill hogsheads and bottled at 46%.

The distillery behind the discreet name cannot be printed on the label, but Orkney is home to only two distilleries, and the cask codes point firmly towards Highland Park. Signatory Vintage filled the whisky into a run of refill hogsheads, cask numbers DRU 17/A67-9/-10/-13/-21, without adding colouring or chill filtering before bottling.

The whisky was distilled on 31 March 2009 and left to mature until January 2023, when 483 bottles were filled — a small, hand-picked release that shows Orkney character in an unfiltered, natural state.

    Tasting Notes

    Nose

Heather blossom and a whisper of smoky peat meet salt sea air and ripe apple, with a soft honey sweetness underneath tying it all together.

    Palate

Soft and lightly oiled, with citrus peel, toasted malt and a warm spice run of ginger and clove. The natural colour keeps the flavour clean and direct.

    Finish

Medium in length, gently peated towards the end, with a lingering heather sweetness and a touch of salted caramel that fades slowly.

    Item no.: 059763-615-934

Signatory Vintage knows what it's doing. When they select a cask from one of Speyside's most iconic distilleries and let it rest for 12 years in Oloroso sherry casks, the result is predictable in the best possible sense.

    Expert's Description

Speyside (M) 2011/2024 Signatory Vintage 12 Year Old is a Speyside Single Malt Scotch Whisky distilled in 2011 and bottled in 2024 by independent bottler Signatory Vintage. Matured in Oloroso sherry casks and bottled at 48.2% as part of Signatory's Small Batch series, Edition #11. The distillery behind the malt is Macallan — one of Speyside's most acclaimed names, whose fruity and sherry-driven character here expresses itself on Signatory's own terms.

An independent bottling like this provides access to an expression that does not necessarily follow the distillery's own brand or house style. This is the Macallan character seen from the outside — a different experience from opening a bottle from the official range.

    Tasting Notes

    Nose

A textbook sherry bomb with bags of raisins, figs, nutmeg, cinnamon and ginger. Dark sugar, walnut and golden syrup. Bright cherry top notes.

    Palate

Dried fruits lead with raisins and dried plums. More oak than the nose with notes of charcoal and dark chocolate. Cherry and sherry-soaked orange zest.

    Finish

Medium to long finish with dark fruits and gentle oak bitterness. The sherry cask's deep imprint lingers for a considerable time.

  • Ben Nevis 2011 Hepburn's Choice 11 years Highland Single Malt Scotch Whisky
    Item no.: 059763-615-927

A sherry butt holds around five hundred litres, twice what an ordinary cask carries. That means less wood surface per drop and a slower, more measured maturation. Eleven years does not sound like much, but in a butt they count differently.

    The expert's description

Ben Nevis 2011/2023 Hepburn's Choice 11 years is a Highland Single Malt Scotch Whisky matured in a sherry butt and bottled at 46 % without chill filtration and without added colour.

The cask was filled in 2011 and drawn in 2023, yielding 880 bottles. That is a high outturn, but it follows from a cask of that size, and it also means the bottling actually reached an audience rather than vanishing within a week.

Hepburn's Choice is a range from Hunter Laing, the family firm behind Ardnahoe on Islay among others. The range consists purely of single casks bottled at 46 % without filtration or colouring, and it is intended as the honest working series of the house rather than as prestige releases.

    Tasting notes

    Nose

Dried fig, walnut and a dry sherry note. Behind it sit malt and a suggestion of orange peel.

    Palate

Full and dry with raisin, cocoa and spiced oak. The Ben Nevis weight keeps the sherry in check rather than giving way to it.

    Finish

Long and dry with nut, dark chocolate and a warm note of spice.

  • Bunnahabhain bottle from the Douglas Laing Old Particular series
    Item no.: 059763-615-920

For three generations, Douglas Laing has had a soft spot for the quiet and the rare, and this 18 Years Old Bunnahabhain from the Old Particular range shows exactly why.

    Expert's Description

Bunnahabhain 2004/2023 Old Particular 18 Years Old is an Islay Single Malt Scotch Whisky from a single ex-bourbon cask, bottled at 52%.

The whisky was distilled in December 2004 and left to rest on its bourbon cask right up until July 2023, when Douglas Laing bottled it as part of their well-regarded Old Particular series – a range that has stood for unadorned single cask bottlings since 1948.

Eighteen years on a refill bourbon cask gives the whisky room to breathe without being overwhelmed by the oak, and the result is a clear, age-stated Bunnahabhain that still lets the distillery's core character speak for itself.

    Tasting Notes

    Nose

Vanilla and light honey surround a fresh hint of sea salt and ripe pears.

    Palate

Soft and round with sweet bourbon cask, apple and a gentle spiciness that grows warmer as it lingers.

Boulder Spirits Miniature Adventure Kit Whiskey gathers six 5 cl miniature bottles from the distillery's range, letting you taste through the house's different styles without committing to six full bottles. Boulder Spirits was founded by Scotsman Alastair Brogan, who moved to Colorado in 2011 and started the distillery as Vapor Distillery. The goal was to create a single malt whiskey 'unique to Colorado with a Scottish accent'. The distillery installed one of Colorado's largest copper pot stills and helped establish the American Single Malt Whiskey category, which was only officially recognised in the US in 2025.

    Item no.: 059763-615-909

Some casks get left a little longer because whoever is tasting them along the way can't quite let go – or so the story goes with this 12 Years Old from Signatory.

    Expert's Description

Bunnahabhain 2007/2019 Signatory Vintage 12 Years Old is an Islay Single Malt Scotch Whisky matured in a 1st fill sherry butt and bottled at cask strength, 58.1%.

Signatory Vintage filled this cask, #589, in February 2007 and left it undisturbed for twelve years, before drawing it straight from the wood in October 2019 without reducing the strength. That leaves a whisky with all the power the sherry cask has to offer, and nothing added to soften it.

587 bottles came from this single cask, and no two are quite alike from first pour to last – that's the nature of a single cask.

    Tasting Notes

    Nose

Dark sherry, raisins and a rich hint of leather, carried on a warm, spiced note of cloves.

    Palate

Powerful and concentrated with dried fruit, walnuts and a wave of spiced warmth from the cask strength.

    Item no.: 22212-7894

Polished antique mahogany in the glass hints at what's coming: dark chocolate, gingerbread and raisin caramel in a 30 year old whisky that's become something of a masterwork in Billy Walker's hands.

    Expert's description

GlenAllachie 30 Year Old Billy Walker Batch #4 is a Single Speyside Malt Scotch Whisky, matured in a mix of Pedro Ximénez and Oloroso sherry casks, bottled at 49.1%.

Batch 4 is composed of two oloroso sherry casks and three PX sherry casks — a precise balance chosen to highlight both the dark fruit sweetness and the spiced depth that 30 years of maturation brings. This release comes in a highly limited Danish bottling.

The colour alone tells a story of decades of contact with the sherry casks: polished antique mahogany, deep and clear, with no added colouring.

    Tasting notes

    Nose

Dark chocolate and gingerbread meet raisin caramel and muscovado sugar. Plum syrup adds a preserved depth, while glazed almonds round off the nose with a lightly toasted sweetness.

    Palate

Cocoa and heather honey lay the foundation, before chocolate-covered raisins and baking spices take over. Molasses adds weight, and a hint of Black Forest cake suggests both chocolate and berries at once.

    Finish

Long and juicy, with grape must and ripe orchard fruit that slowly settles into a dry, spiced close.

  • The English Distillery Co whisky bottle bottled by Stirk Brothers
    Item no.: 059763-615-880

A decade before English whisky was widely known abroad, The English Distillery Co in Norfolk filled its first cask. This single cask, bottled by Stirk Brothers, is one of the rare survivors from the distillery's earliest years — a time when the whole English whisky project was still an experiment.

    Expert's Description

The English Distillery Co 10 Year Old Stirk Brothers is a Single Malt English Whisky matured in an ex-bourbon cask and bottled at 50%.

The distillery — known today as The English Distillery Co, formerly St George's Distillery — opened in 2006 as the first newly built English whisky distillery in over a hundred years. This bottling comes from cask number 179, distilled in 2011 and later selected by independent bottler Stirk Brothers, who drew 254 bottles straight from the cask without mingling them with any other.

Stirk Brothers works on a small scale, hunting for casks with clear character rather than volume, which makes their selection a regular stop for collectors looking for alternatives to the big, familiar names.

    Tasting Notes

    Nose

The nose offers vanilla custard and toasted oak, backed by green apple and a touch of cereal.

    Palate

On the palate the whisky turns rich, with caramel, honey biscuit and a light nutty sweetness, while the ex-bourbon cask lends a dry, woody undertone.

Medium — this bottling comes from the distillery's earliest years, when The English Distillery Co truly kick-started the modern English whisky movement, and with only 254 bottles from a single cask, interest among collectors of early English releases is rising.

    Did You Know?

The English Distillery Co was the first newly established distillery in England to distil single malt whisky in over a hundred years — the first spirit ran off the stills in December 2006.

  • Ardmore 13 year old Signatory Vintage bottle from second fill bourbon casks, Highland Single Malt Scotch Whisky
    Item no.: 059763-615-874

Second fill after Islay. Two words that say a great deal: the cask has held bourbon, then a heavily peated Islay, and now Ardmore for thirteen years. There is not much force left in the wood, and that is exactly the point.

    The Expert's Description

Ardmore 2009/2023 Signatory Vintage 13 Years Old is a Highland Single Malt Scotch Whisky matured in second fill bourbon casks after Islay whisky and bottled at 46%. It was distilled in 2009 and bottled in 2023 in Signatory’s Un-Chillfiltered Collection.

The difference from a first fill is marked. A second fill cask gives up less vanilla, less colour and less tannin, so Ardmore’s own peated character gets far more room. What Islay phenols remain in the staves are correspondingly muted, sitting as a suggestion rather than a layer.

Thirteen years is a long time for a cask that gives little. The result is a whisky where the spirit stands at the front and the wood keeps to the background. The whisky is neither chill filtered nor coloured.

    Tasting Notes

    Nose

Dry smoke and toasted malt first, with honey and a light citrus peel behind. The vanilla is subdued, and a clean cereal note runs through it all. This is the spirit talking, not the cask.

    Palate

Malty and dry. The smoke arrives early and stays, with honey and baked apple underneath. There is a light saline undercurrent from the cask’s Islay past and a dry, peppery turn mid-palate. At 46% the body is good without being heavy.

    Finish

Medium and dry. Ash, malt and a lightly bitter oak note that lets go cleanly.

    Did You Know?

Ardmore was the last Scottish malt distillery to use coal-fired stills. Only in 2001 did it switch to steam heating. Direct fire gives a slightly more scorched, meaty spirit, so whisky distilled at Ardmore before the turn of the millennium has a different character from what is made today.

    Item no.: 059763-615-859

The father of bourbon cultivates rye's spicy side in this straight rye.

    Expert description

Elijah Craig 94 Proof Kentucky Straight Rye Whiskey is the brand's rye-based expression, bottled at 47%. Elijah Craig is named after the Baptist minister who, according to tradition, was the first to age his corn-based whiskey in freshly charred oak barrels in 1789 — a practice that has since become the very definition of bourbon. Historians still debate whether the story is entirely accurate, but the name lives on at Heaven Hill Distillery, which produces every major American whiskey style and is one of the leading champions of the Bottled-in-Bond tradition.

    Tasting notes

    Nose

The nose offers spiced rye, pepper and a hint of fresh mint.

    Palate

The palate is spicy and full with rye, caramel and a hint of citrus.

    Finish

The finish is medium-length, spiced and lightly peppery.
