    Dalmore King Alexander III is a Highland Single Malt Scotch Whisky matured in six different cask types and bottled at 40%.

    The whisky brings together components from bourbon casks, oloroso sherry casks, Madeira casks, Marsala casks, port pipes and Cabernet Sauvignon casks. When it appeared it was the first single malt built on that many different cask types. The name refers to King Alexander III, who according to legend was saved from a charging stag by an ancestor of Clan Mackenzie — and in gratitude granted the clan the right to carry the animal on its arms. It is the same stag that appears on every Dalmore bottle today.

    Tasting notes

    Nose

    Layered and sweet. Red fruit, orange and vanilla first, then raisin, marzipan and a warm spiced note from the port and Madeira.

    Palate

    Soft and round. Passion fruit, citrus and caramel meet dried fruit, chocolate and spice, while the many cask types settle in layers rather than colliding.

    Finish

    Long and soft, with fruit, spice and a lightly dry oak note.

    Dalmunach 2015/2021 Lady of the Glen 6 years is a Speyside Single Malt Scotch Whisky finished in an oloroso quarter cask and bottled at cask strength of 59.6% without chill filtration and without added colouring.

    The cask carries the number 22 and gave 157 bottles. Dalmunach opened in 2015 at Carron in Speyside on the site of the demolished Imperial distillery and is one of the most modern productions in Scotland. A quarter cask is only about a quarter of a normal cask, which gives far more contact between wood and spirit — an efficient way of getting cask character into a young whisky.

    Nose

    Dark and intense for its age. Raisin, dark chocolate and orange peel, with a young, cereal freshness under the sherry.

    Palate

    Powerful and concentrated. Dried fruit, cocoa and spice, with malted cereal and a peppery warmth from the cask strength. The quarter cask has worked fast and left clear wood structure.

    Finish

    Long and dry, with dark fruit, nuts and a warm spiced close.

The release belongs to the Cooper's Choice range from The Vintage Malt Whisky Company in Glasgow. Dalmunach opened in 2015 and is still so new that every bottling helps draw the picture of what the house style actually is.

    Nose

    Dark and syrupy. Raisin, date and fig, with dark chocolate, coffee and a young, cereal freshness underneath.

    Dalrymple Come As You Are 2012/2023 Uncharted Whisky Co. 11 years is a Lowlands Blended Malt Scotch Whisky matured in an ex-oloroso sherry butt and bottled at cask strength of 55% without chill filtration and without added colouring.

    The cask carries the number UC026, was filled in July 2012 and emptied in October 2023 with an outturn of 687 bottles. Dalrymple is the name the bottler uses for malt whisky from the Lowlands where the source may not be disclosed. The Lowlands is Scotland's gentlest region, and eleven years in an active sherry cask gives that light style a depth it otherwise rarely reaches.

    Deanston 2008/2022 Signatory Vintage 13 years is a Highland Single Malt Scotch Whisky matured in a first fill sherry butt and bottled at cask strength of 66.8% without chill filtration and without added colouring.

    The cask is numbered 900076, was filled on 13 August 2008 and emptied on 11 March 2022 with an outturn of 574 bottles. The release belongs to Signatory's Cask Strength Collection. A strength that high after thirteen years means the cask lost more water than alcohol — which happens in dry, airy warehouses rather than in damp earth-floored cellars.

    Tasting notes

    Nose

    Dense and dark. Raisin, date and orange marmalade, with dark chocolate, nuts and a warm spiced note.

    Palate

    Fierce but well balanced. Dried fruit, cocoa and burnt sugar, with a dry sherry edge and a peppery warmth. Deanston's honey sits underneath and keeps the sweetness natural.

    Finish

    Very long, dry and spiced, with dark fruit, nuts and a slowly fading warmth.

    Deanston 2013/2024 Adelphi Selection 10 years is a Highland Single Malt Scotch Whisky matured in a first fill bourbon barrel and bottled at cask strength of 58.2% without chill filtration and without added colouring.

    The cask carries the number 7403 and gave 239 bottles. Adelphi traces back to a Glasgow distillery from 1826, and the name was revived in 1993 as an independent bottling house. Today Adelphi also owns the Ardnamurchan distillery on Scotland's west coast. A first fill bourbon barrel is smaller than a hogshead and therefore works faster — over ten years it gives Deanston's honey a clear vanilla frame.

    Tasting notes

    Nose

    Fresh and sweet. Vanilla, coconut and baked apple, with honey, malt and a light cereal freshness underneath.

    Palate

    Powerful and creamy. Vanilla fudge, honey and pale fruit, with a peppery warmth from the cask strength and a dry oak edge to keep the sweetness in balance.

    Finish

    Long and warm, with vanilla, malt and a mild spiced close.

    Sauternes exists because a fungus attacks the grapes and draws the water out of them. The result is one of the world's sweetest white wines — and a cask that does something quite particular to whisky.

    Deanston 2014/2024 Coopers Choice 10 years is a Highland Single Malt Scotch Whisky matured in bourbon wood with a final maturation in a Sauternes cask and bottled at 52.5% without chill filtration and without added colouring.

    The whisky was distilled in 2014 and bottled in 2024 from cask number 1149 by The Vintage Malt Whisky Company in Glasgow as part of the Cooper's Choice range. Sauternes comes from Bordeaux and is made from grapes affected by noble rot, which concentrates the sugar. On a honeyed Highland malt like Deanston it reinforces the sweetness rather than working against it.

    Nose

    Honey, apricot and orange marmalade, with vanilla and a light floral note from the wine cask.

    Palate

    Full and sweet. Ripe fruit, honey and spice, with oak and a creamy texture. The Sauternes cask lays a layer of concentrated fruit sweetness over the house honey.

    Finish

    Long and warm, with fruit, spice and a dry oak note at the close.

    Twenty year old Deanston is not something the distillery sells itself. That Boutique-Y Whisky Company found the casks, drew a story on the label and put it in a half bottle.

    Deanston That Boutique-Y Whisky Company 20 years is a Highland Single Malt Scotch Whisky bottled at 49.1% in a 50 cl bottle.

    This is the house's batch 7 from Deanston and gave 450 bottles. That Boutique-Y Whisky Company was founded in 2012 by Ben Ellefsen and is known for its hand-drawn labels, where every bottle gets its own illustration. Deanston itself rarely releases whisky over eighteen years, and twenty years in cask shows a side of the house the core range never reaches.

    Tasting notes

    Nose

    Marmalade first, developing into barley, vanilla, caramel, milk chocolate and a little coconut.

    Palate

    Fresh notes of ripe plums combined with mint leaves, with honey and malt underneath. The 49.1% gives good weight without drowning the finer notes.

    Finish

    Long and soft, with caramel, malt and a mild spiced warmth.
