The rum comes from Levasseur Rum, founded by Marco Francis in collaboration with Mauritian master blender Frederic Bestel, with the distillery located at Au Cap on the southern tip of Mahé. The name pays tribute to the legendary 18th-century pirate Olivier Levasseur, whose story still lives on in the region's folklore. The Dark expression is matured in antique bourbon casks together with wood shards infused with authentic aromas of roasted walnut, vanilla, cinnamon and whisky, giving the rum a character closer to whisky than to traditional Caribbean rum. The rum is based on distillate from Guyanese molasses, including from the famous Port Mourant wooden double pot still, one of the last of its kind still in operation. Select Aged 151 closely follows the Admiralty's historic regulations for the official navy rum ration, which was issued to British sailors up until 1970, when the tradition was finally abolished. Pusser's Rum later took over the rights to continue the recipe and the name.

Bumbu blends the rum with fresh cream, sugar and natural flavourings, and the name itself nods to the recipes sailors improvised on their voyages through the 1600s and 1700s - more a story of hospitality than a secret formula.

The base rum is a blend of a 6-year-old column-distilled rum from Licorera Cihuatán in El Salvador and Jamaican pot-still rum from the renowned Worthy Park and Hampden distilleries. This blend is then infused with whole coffee beans from Jags Head Coffee in El Salvador in a cold brew-style process, where the beans steep in the rum for 48 hours. Ron Colon was founded in 2018 by two friends who, after a 22-day bar-hopping trip across 16 Latin American countries, decided to create their own brand.

The result is a rum where the coffee's bitterness and roasted tones merge with the Jamaican rum's funky, ester-rich intensity.
