The result is a complex expression bridging two Danish craft traditions.

The porter casks add chocolate, coffee and maltiness to the rye's naturally spiced and smoky base.

In 2010, Stauning was still nine friends with a shared dream, working out of an old meat-processing plant in Skjern. This cask is from that era – three winters in Oloroso sherry wood, bottled in 2013 with sherry written all over it.

Expert description

Stauning Traditional Oloroso Cask 2010/2013 is a Danish Single Malt Whisky matured in Oloroso sherry casks and bottled at 52.8%. The Traditional expression is Stauning's unpeated single malt built on malted barley – the foundation the distillery was built on. Oloroso is a dry sherry style rich in walnuts, dried fruit and raisins, and three years in these casks left a decisive mark. Stauning's small copper pot stills and intensive production method build character quickly, and that shows clearly in the glass. This is among the earliest commercial releases from the distillery, from a time when total production was vanishingly small.

Tasting notes

Nose

Dried apricots and raisins upfront. Vanilla, light oak and a nutty undercurrent from the sherry drum. A hint of dried orange peel.

Palate

Creamy and full. Christmas cake, dark raisins and sherry sweetness. Spices – star anise and black pepper – arrive mid-palate.

Finish

Long and warming. Sherry tannins linger alongside a gentle dark chocolate bitterness.

Named after Børglum Monastery — an Augustinian monastery dating back to the 12th century in northern Jutland — the whisky pays tribute to the region's deep cultural history. Only 501 bottles were produced, bottled on 13 November 2023. Søgaard Destilleri is part of Søgaards Bryghus in Aalborg, a project that started in 2018 when the distillery equipment was ordered from CARL, a German firm founded in 1869.
