Millstone is the Dutch whisky series from Zuidam Distillers, founded in 1975 by Fred van Zuidam in the border town of Baarle-Nassau. After decades producing genever and liqueurs, the distillery made its first experimental whisky barrels in 1996, and in 2007 Millstone launched as the Netherlands' first single malt whisky. The distillery follows a 'farm to glass' principle, growing most of its own grain, and the name Millstone honours the Dutch tradition of grinding grain in windmills.

    Whisky writer Alfred Barnard called the style one seldom met with now, and that was in the nineteenth century. Craigellachie has changed nothing since — which is exactly the point.

    Craigellachie 13 years is a Speyside Single Malt Scotch Whisky matured in oak casks and bottled at 46%.

    The distillery was built in 1891 on the rock of Craigellachie between Rothes and Dufftown, where the rivers Fiddich and Spey meet. The name is Gaelic and means rocky hill. Condensing still happens in worm tubs, giving less copper contact than modern plant, which is why the whisky carries the meaty, faintly sulphurous edge that sets it apart from its neighbours. For decades most of the production went into blends such as White Horse, and only in 2014 did the distillery get a range of its own.

    Nose

    Baked apple, pear and ripe pineapple first. Then vanilla, honey and cereal, with a spiced smoke and a light mineral note that is the house signature.

    Palate

    Full and oily. Pineapple, citrus, sweet malt and caramelised sugar, with a touch of flint and smoke from the sulphurous edge. The oak gives depth without taking over.

    Finish

    Long, warm and spiced, with oak, fruit and a hint of toasted malt.

    The bottle belongs to the Flora & Fauna series, launched in 1992 by the then United Distillers (today Diageo, the world's largest spirits company). The original series comprised 26 different single malts, chosen to show the breadth of Scotland's whisky regions – most bottled at 43%, a handful at cask strength, and some presented in wooden cases.

    Glenlossie sits just south of Elgin alongside several other distilleries most drinkers have never heard of, since their output mainly feeds blends. Glenlossie is a well-known component of Haig's and Dimple, and it rarely appears on a label by itself.

    Nose

    Cornflakes and freshly cut vanilla arrive first, quietly rather than loudly – Glenlossie isn't a whisky that shouts. Behind the pale, cereal sweetness sits a hint of ripe orchard fruit, held back almost politely.

Michter's history dates back to 1753 and Shenk's Whiskey, considered America's first whiskey company, founded in Pennsylvania. Around 1860 the distillery changed its name to Bomberger's, and in the 1950s the name Michter's was created — named after the sons Michael and Peter, whose names were combined into 'Mich-ter's'. After a bankruptcy in 1989, the trademark was revived in the 1990s by Joseph J. Magliocco and his mentor Dick Newman, who moved production to Kentucky. Today Michter's operates from three locations around Louisville: the large Shively Distillery, where production takes place, the historic Fort Nelson building, and a farm in Springfield.

    The Unique is bottled after roughly 3 years of cask maturation at natural strength via Michel Couvreur's fresh filling method, where young Scotch malt whiskies are refilled onto fresh sherry casks the same day the casks are emptied. This gives a silky character that feels more mature than the relatively few years in cask would otherwise suggest.

    Michel Couvreur's story doesn't begin in Scotland but in Burgundy, where he traded wine for decades before whisky drew him in during 1978. His fresh filling method meant the sherry casks never had time to dry out between sherry and whisky, something almost nobody else still does today.

    BenRiach Heart of Speyside is a Single Speyside Malt Whisky without an age statement, matured in oak casks and bottled at 40 %.

    This is the younger of the two Heart of Speyside bottlings, the other carrying twelve years on the label. Without an age statement the distillery had a freer hand to assemble casks by taste rather than by number, which gave a profile held steady across the life of the range.

    The range belonged to the period under Billy Walker, who bought BenRiach in 2004 and turned the distillery into a brand in its own right after decades of mainly supplying malt to blends. Heart of Speyside was phased out after the 2016 change of ownership.

    Tasting notes

    Nose

    Pale cereal, honey and apple with a suggestion of vanilla. Simple and easy to read.

    Palate

    Soft and malty with honey and a touch of pear. No edges, and that is the intention.

    Finish

    Short to medium, dry and clean.

    Machir Bay became Kilchoman's standing standard release in 2012 and today represents the house style better than any other bottle. It rests mainly on ex-bourbon casks, with a portion of the casks receiving a finishing period in used sherry casks, giving a balance of citrus freshness, sweetness and spice.

    Kilchoman was founded in 2005 as Scotland's only true farm distillery, where barley is grown, floor malted, distilled and bottled in the same place — a philosophy that still runs through even the most accessible release in the range.

    The twelve years is the distillery best-selling release and the one most people use as a reference point for the house style. The sherry is clear but has not taken over yet, and at 43% the whisky carries more body than the 10 year old without demanding anything particular of the drinker.

    The name Glenfarclas means the glen of the green grassland, and it is exactly that freshness you find beneath the sherry here. It is a note that runs through the whole range and keeps turning up, however many years the cask is given.

    There is a handful of bottles the whole whisky world uses as a yardstick, and DoubleWood is one of them. It was not the first whisky to see two cask types, but it was the one that made the rest of Scotland understand why that was a good idea.

    Balvenie 12 DoubleWood is a Single Speyside Malt Whisky matured in American oak casks, finished in Oloroso sherry casks and bottled at 40 %.

    DoubleWood is David Stewart's work. He was Malt Master at Balvenie for more than five decades and was already experimenting in the 1980s with moving fully matured whisky into a second cask type for the final months. Today the method is called cask finishing and almost everyone uses it, but DoubleWood from 1993 was the release that put it on the map.

    The first nine to twelve years are spent in traditional American oak casks, which give vanilla, honey and a light, creamy texture. The whisky then moves into European Oloroso sherry casks for roughly nine months, and that is where the raisin, orange peel and spice arrive. The parcels are finally married in a large tun before bottling.

    Nose

    Honey and dried fruit first, then vanilla, cinnamon and a note of orange peel. A light nutty warmth sits underneath it all.

    Palate

    Round and soft with raisin, spiced oak and vanilla sweetness. The sherry influence is clear but never heavy, and the malt holds the balance the whole way.
